Healthier Chocolate Chip Cookies

coconut oil

unsalted butter (softened)

sugar

brown sugar (packed)

vanilla extract

almond flour

oat flour

white whole wheat flour

salt

baking soda

chocolate chips

Place coconut oil and butter in large mixing bowl, beating to combine. Add sugars, mixing well then ad egg and vanilla. Stir well then add almond meal, oat flour, all purpose flour, salt, baking soda and chocolate chips. Stir until just combined. Cover and refrigerate overnight or at least 3-4 hours

Preheat oven to 350 degrees F. and line a large baking sheet with parchment paper or a split liner. Use a small cookie scoop and place dough 1 inch apart onto baking sheet. Bake for 10-12 minutes, until baked through. Remove and let cool on baking sheet for 10 minutes before transferring. Enjoy room temperature.

Easy Blueberry Chia Pudding

Tablespoon chia seeds

almond milk (or milk of choice)

blueberries (or any other berry)

lemon

maple syrup

For a chunkier texture: Pulse the blueberries and lemon zest in a blender until broken down - OR - Mash the berries with a fork and mince the zest. Transfer the blueberry mixture to a bowl and stir to combine with the milk. For a smoother texture: Add the blueberries, lemon zest and almond milk to a blender. Blend on high until smooth. Note: The fruit mixture and milk together should make 1.5 cups. Once blended, measure the mixture. If needed, add more coconut milk the mixture measure 1.5 cups total.

Transfer the fruit or fruit and milk mixture to a bowl. Stir in the chia seeds until well combined.

Cover and set in the fridge overnight, or for at least 2 hours. Stir the mixture again before serving.

Chocolate Chip Espresso Yogurt Cake

whole wheat pastry flour

instant espresso/coffee

plain Greek yogurt

extra virgin olive oil

eggs

dark chocolate, plus more for topping

1. Preheat the oven to 350° F. Line a 9×5 inch bread pan with parchment paper.2. In a bowl, whisk together the flour, baking powder, cinnamon, salt, and espresso/coffee powder. Add the yogurt, eggs, maple syrup, olive oil, and vanilla. Mix until fully combined. Fold in the chocolate. 3. Pour the batter into the prepared pan. Bake for 50-60 minutes, or until the center is just set. Remove and let cool for 30 minutes before icing.4. Meanwhile, make the icing (the icing can be optional). In a bowl, whisk together the powdered sugar, 1-4 tablespoons of water or brewed espresso/coffee, and vanilla. Pour the icing over the loaf. Top with extra chocolate chunks (if desired). Let set 1 hour (or...not), slice and enjoy.

Frozen Protein S'mores (Gluten Free, Dairy Free)

graham crackers

oz coconut cool whip ((or regular))

protein powder

Line a medium-sized glass food container with parchment paper.

Place 3 full graham crackers along the bottom of the container.

Take your container of cool whip, add a scoop of protein powder, stir until mixed in. Should be a thicker whip!

Scoop protein whip mixture on top of the graham crackers and spread evenly.

Melt chocolate by combining chocolate chips and coconut oil. Microwave for 30 sec, stir, and repeat until smooth. Pour on top of other layers.

Place 3 more full graham crackers on top.

Set in the freezer for at least 1 hour, until firm.

Once frozen, carefully remove from container, place on a cutting board to slice into 6 pieces along the seams of the crackers. Enjoy!
