Easy banana cake bars that are just 2 ingredients and don&#039;t contain any wheat flour, butter, refined sugar, eggs or oil.

2 Ingredient Healthy No Bake Banana Cake

bananas

coconut flour

cream cheese (softened)

plain greek yogurt

maple syrup (or more as needed)

Line an 8 x 4 inch baking loaf pan with parchment paper.

In a medium bowl, mash bananas with a fork or spoon until it becomes puree consistency. Stir in coconut flour until evenly mixed. Your mixture should thicken and resemble a cookie dough consistency. You can taste and adjust as needed. If you find your mixture is too wet, you can add a little extra coconut flour.

Spread mixture into prepared baking pan, using a spatula to smooth out the surface. Wrap cake loaf pan with plastic wrap. This will prevent the bananas from oxidizing too much and turning the cake brown or gray. Place into fridge for about 1 hour to let cake firm up slightly, making it easier to slice. Cake can actually be eaten without refrigerating it but it will be easier to slice if it is refrigerated. When ready to serve, slice cake. I don&#039;t recommend slicing ahead of time because the bananas in the cake will oxidize and change the color of the cake from light yellow to a brown or gray color. I also recommend only slicing as much as you will be eating to preserve the color.

To make frosting, whisk together cream cheese, greek yogurt and maple syrup. Taste and adjust as needed. Frosting can be added before or after the cake is refrigerated.

Store uneaten cake and frosting in the fridge in an airtight container.

This banana oat flour cake is a fun crossover between a traditional healthy banana cake and a banana oat cake. It has the look and feel of a traditional moist banana cake with cream cheese frosting, but it&#039;s made using only whole grain oat flour!

Banana Oat Flour Cake

milk

lemon juice

oats

tsp baking powder

tsp baking soda

tsp salt

cinnamon

bananas (1 cup mashed)

maple syrup

eggs

coconut sugar** (or brown sugar)

salted butter

tsp vanilla extract

creamy cheese frosting (optional)

Preheat oven to 350F.

Whisk milk with lemon juice and set aside.

Blend rolled oats into fine oat flour, and then mix the flour with baking powder, baking soda, salt, and cinnamon.

Mash bananas in a separate bowl and set aside.

Cream together softened butter and coconut sugar with an electric mixer.  Mix in eggs, maple syrup, and vanilla extract.

Fold in 1/4 of the dry ingredients, mix them until combined, and then add 1/4 of sour milk then mix again.  Repeat alternating dry ingredients mix and sour milk until everything is incorporated.

Fold in (use a spatula, not the mixer) to mix in the mashed banana.  Bake in a parchment paper-lined 9 x 13 glass dish for 45 minutes or until an inserted toothpick comes back clean.

Let cool for one hour on a cooling rack before serving.  If you want to add frosting, let cool overnight in the fridge, so the frosting doesn&#039;t melt when you try to add it.  Once you add the frosting, it&#039;s ready to serve, best served cold, or at room temperature.
