Deliciously healthy baked blueberry donuts that are light, soft, and perfect for breakfast! With just over 100 calories, these Skinny Blueberry Donuts are a fun and easy treat that’s perfect for any breakfast or brunch gathering!

Baked Blueberry Donuts

whole wheat pastry flour,

baking powder

salt

sugar

milk ((I like almond milk

vanilla extract

coconut oil, (melted (any oil

blueberries

powdered sugar, (optional topping)

water + more as needed for consistency

Pre-heat oven to 350˚ F.

In a large bowl, combine flour, baking powder, salt and sugar. Stir in egg, milk, vanilla extract and coconut oil. I add the coconut oil last and stir swiftly, as to avoid it hardening up. Gradually, stir in blueberries.

Spoon batter into a liberally greased donut pan (nonstick spray works fine). You can also use a piping bag or a freezer bag with the tip snipped off to pipe the donut batter into the pan. Divide equally to create 10 donuts. Batter should fill donut molds to the center (but not cover it).

Bake for 9-10 minutes. Let donuts cool for about 5 minutes before removing them from the donut pan. You may need to use a knife to remove each donut from the pan.

To make the donut glaze, mix all glaze ingredients in a medium bowl. You may need to add a bit more water 1-2 teaspoons at a time for the right consistency.

Dip warm donuts into the glaze, making sure to coat both sides, if desired. Place onto wire cooling rack to allow excess glaze drip down. The glaze will eventually set + harden on the donuts after about 20 minutes.

Donuts are best enjoyed the same day, though they keep at room temperature for a couple extra days in an airtight container.

These Baked Blueberry Donuts are light, fluffy, and packed with jammy berry flavor. All topped off with a perfectly sweet &amp; tangy blueberry lemon glaze! Vegan, Gluten-Free, Oil-Free.

Nonstick cooking spray

(150 grams) oat flour*

sea salt

almond butter

(65 g) unsweetened applesauce

(56 g) cane sugar

(177 ml) unsweetened non-dairy milk

(115 g) frozen wild blueberries, thawed*

(120 g) powdered sugar

lemon juice

(11 g) freeze-dried blueberries (optional; see notes)

water,

Prep: 

Preheat the oven to 350F and spray or lightly grease your donut mould (I use these and place them on a baking tray).

Dry + Wet: 

Whisk the oat flour, baking powder, and salt together in a large bowl. In a smaller bowl, mix the almond butter, applesauce, sugar, and milk together, until the sugar has dissolved. At the wet ingredients to the center of the dry ingredients and combine. Finally, fold in the blueberries.

Bake: 

Use a spoon or cookie scoop to transfer the batter into the donut mould, dividing it evenly between 12 &#8220;donuts&#8221;. Bake in middle rack for 20 to 22 minutes, then remove from the oven and let sit for 10 minutes before removing the donuts and placing them on a cooling rack. Let cool completely before glazing.

Make the Glaze: 

Whisk the sugar and lemon juice together in a small bowl. Pulse the freeze-dried blueberries in either a spice grinder or a food processor until a fine powder forms, then sift this powder into the sugar mixture. Whisk into the glaze; if the glaze is too thick, add additional water in 1/2 teaspoon increments until it has thinned to your liking.

Drizzle &amp; Serve: 

dunk the top of each donut into the glaze, or use a spoon to drizzle the glaze over each donut. Serve &amp; enjoy; leftovers will keep at room temperature for up to 3 days.

Really really tasty! I used brown sugar, almond milk, and almond butter. I also added some cinnamon and vanilla extract.

I used Trader Joe's freeze dried blueberries, but I found out Target's Good &amp; Gather brand also carries them (I lived in a small town with no health food stores for 5 years, so Target's groceries saved my life)
