Crock pot chicken alfredo is an easy to make, healthy family dinner.  Creamy dairy free alfredo sauce makes this recipe absolutely delicious!

Crock Pot Chicken Alfredo

oz raw cashews

water

onion

garlic

oz penne pasta

lbs chicken breasts (about 3 chicken breasts)

chicken broth

tbsp ghee

parsley (as garnish)

salt and pepper (to taste)

onion and garlic powder (for seasoning chicken)

Soak cashews in water overnight.

Saute onion and garlic in 1 tbsp ghee until sweated and slightly caramelized. Add to food processor.

Add soaked cashews plus 1 cup of soaking water into a food processor. Process until smooth. Add salt + pepper to taste. Add additional cashew soaking water if mixture seems too thick.

Dairy Free Alfredo Sauce Instructions

Season chicken breasts with garlic powder, salt, pepper and onion powder. Add to slow cooker. Add in chicken broth and 1/2 of the alfredo sauce. Add in 4 tbsp ghee and sprinkle with salt + pepper. Cook on low for 3 hours or until chicken registers 165F on an instant read thermometer.

Once chicken is cooked, set aside on a plate and tent with foil. Add penne to crock pot (the alfredo sauce should still be in there) and cook on high for 30 minutes. Add additional cashew soaking water and alfredo sauce if mixture seems too thick or you need more.

Once penne is cooked, slice chicken into bite sized pieces and add back to slow cooker. Mix to incorporate sauce and garnish with parsley and additional salt + pepper if desired.

Easy healthy chicken Alfredo

chicken breasts

olive oil

garlic powder

oregano

tbsp utter

chicken stock / chicken broth

greek yogurt

parmesan cheese (+ extra for serving)

salt and black pepper (to taste)

500 g / 1lb pasta

Slice the chicken breasts in half horizontally then drizzle with olive oil and season with garlic powder, dried oregano, salt and black pepper.

Heat a large skillet or pan over medium-high heat then cook the chicken for 3-5 minutes per side until golden brown and cooked through.

Remove from the pan and set aside. 

In the same pan you cooked the chicken in, make the healthy alfredo sauce.

Over medium heat, melt the butter then add the garlic and cook for 30 seconds until fragrant.

Pour in the chicken stock, scraping up the fond from the bottom of the pan.

Bring to a simmer then stir a few spoonfuls of the hot stock into the yogurt. This tempers the yogurt and prevents it from curdling in the pan.

Pour the yogurt into the pan and bring to a simmer then turn the heat off and add the Parmesan cheese, salt and black pepper. 

Bring a large pot of salted water to a boil and cook the pasta of your choice until al dente.

Reserve a cup of the cooking water and drain the pasta.

Stir the cooked pasta and a few tablespoons of the pasta cooking water into the creamy alfredo sauce.

Add the chicken and toss together then serve sprinkled with chopped fresh parsley or chives and extra Parmesan cheese.

Healthy Chicken Alfredo (Cauliflower Sauce)

cauliflower florets (about 1 medium head)

basil

thyme

salt

pepper

shallot,

Tablespoons butter

chicken breasts (about 2 large,)

avocado oil (or any cooking oil)

milk (regular

parmesan cheese

whole wheat fettuccine

Boil Broth

Bring the chicken broth to a boil in a pot or dutch oven over medium-high heat.

Cook Cauliflower

Add in the cauliflower florets and let simmer (covered) for 9-10 minutes, or until  fork-tender.

Let Cool

Mix Seasoning

Mix the oregano, basil, thyme, salt, and pepper together in a small bowl. Set aside.

Sauté Shallot &amp; Garlic

While the cauliflower is cooling, sauté the shallot and garlic with 2 Tablespoons of butter in a large skillet or sauté pan for about 2-3 minutes.

Place the cooked cauliflower, broth, cooked shallot, and cooked garlic in a blender.

Add Seasoning

Make the Cauliflower Sauce

Coat Chicken With Seasoning

Coat the chicken breasts in the remaining seasoning on both sides.

Cook Chicken

Using the same sauté pan that was used earlier, heat the avocado oil over medium-high heat and cook the chicken for about 7-8 minutes on each side (or until fully cooked). Remove the chicken and set aside.

Cook the Chicken

Cook Pasta

While the chicken is cooking, use the same pot from earlier to cook the pasta according to directions. Drain and set aside.

Cook the Pasta

Melt Butter in Pan

Add the remaining 1 Tablespoon of butter to the pan and melt over medium heat.

Add Cauliflower Sauce

Pour the cauliflower mixture into the pan and whisk.

Add Milk &amp; Cook

Slowly add in the milk and cook for 2-3 minutes (or until sauce begins to reduce slightly).

Add Parmesan

Remove from heat and add in the parmesan. Continue to whisk until the sauce thickens and has a fairly smooth texture.

Add Pasta

Add in the cooked pasta and stir to coat evenly.

Add Chicken

Top with sliced, cooked chicken (or cube the chicken and mix it in).

Healthy Chicken Alfredo

11 oz whole wheat

tbsp oil

stock (low sodium)

cold 2% or 3.25% milk

cornstarch

tsp salt

black pepper (to taste)

Parmesan cheese (grated)

garlic (grated)

peas (broccoli

tbsp parsley (for garnish)

Fill large pot with water and bring it to a boil.

In a medium bowl, add cold stock, milk, cornstarch, 1/2 tsp salt and whisk with a fork. Set aside.

In the meanwhile, preheat large deep ceramic non-stick skillet on medium heat and swirl oil to coat.

Sprinkle chicken with a bit of salt and pepper, add to a skillet and cook for 10 minutes, stirring occasionally.

While chicken is cooking, add 1 tsp of salt and pasta to boiling water. Cook for 7 minutes until pasta is al dente, stirring a few times to make sure noodles do not stick.

Give cornstarch mixture a whisk and add it to the skillet. Stir, bring to a boil and cook for 2 minutes or until bubbly and thickened.

Add Parmesan cheese, garlic and stir until cheese has melted.

Using tongs, transfer noodles directly from the pot to the skillet. No need to drain in a colander. Grab a bunch at a time, hold right above the pot for a few seconds and add to the skillet.

Stir and add peas, broccoli or spinach. Let chicken alfredo warm through for a minute.

Turn off the heat and garnish with parsley and black pepper. Serve hot.
