This delicious and easy Healthy Chicken Fajitas Meal Prep is a low carb, high protein, and high fiber chicken meal prep recipe you’re gonna love. Bonus: this chicken meal prep is just 455 calories and is a great meal prep on a budget since each serving costs just $3.37!

Healthy Chicken Fajitas Meal Prep

lime juice, ((approx. 2-3 limes))

pineapple juice, (no sugar added)

soy sauce

garlic, (minced)

cumin

paprika

red pepper flakes

sea salt

black pepper

cilantro (chopped)

olive oil

6-8 oz. boneless, skinless chicken breasts

white onion, (thinly sliced)

poblano chile, (thinly sliced)

red bell peppers, (thinly sliced)

green bell pepper, (thinly sliced)

garlic powder

jalapeño, ((1 tbsp) seeded and finely diced)

tsp cumin

chicken broth

lime juice

tbsp fresh cilantro, (chopped)

In a large bowl or ziplock bag, combine the chicken breast with freshly squeezed lime juice, no sugar added pineapple juice, low sodium soy sauce, olive oil, minced garlic, ground cumin, smoked paprika, red pepper flakes, sea salt, ground black pepper, and chopped fresh cilantro.

Place in the fridge for a minimum of 30 minutes, up to 8 hours.

Once the chicken is marinated, heat 1 tbsp. olive oil over medium-high heat in a large skillet until hot.

Add the marinated chicken, cooking on both sides until cooked through, about 4-6 minutes per side.

Remove the chicken from the pan and set aside to rest.  Slice into thin slices.

To Make The Fajita Chicken:

In the same pan used to cook the chicken, add sliced white onion, sliced poblano pepper, sliced red bell peppers, sliced green bell pepper, sea salt, and ground black pepper, and toss to combine.

Cook over medium-high heat until the bell peppers and onion are tender, about 4-6 minutes.

To Make the Fajita Bell Peppers:

Heat oil in large saucepan over medium-high heat.

Add garlic, jalapeño, and cumin and cook for 1 minute, or until garlic is fragrant.

Add the beans and broth and cook 5 minutes, stirring occasionally.

Coarsely mash beans with a potato masher.

Continue to cook at a simmer for about 8-10 minutes until the mixture is thick, stirring frequently.

Add in lime juice, cilantro, and sea salt, to taste.

To assemble the chicken fajita meal prep, start by adding the cilantro lime black beans to your meal prep container, followed by the sliced fajita chicken, and the bell pepper and onion mixture.

For The Fajita Chicken:

2 tbsp. olive oil
4 6-8 boneless, skinless chicken breasts

For the Fajita Bell Peppers:

1 white onion, thinly sliced
1 poblano chile, thinly sliced
2 red bell peppers, thinly sliced
1 green bell pepper, thinly sliced
1 tsp. sea salt
1/2 tsp. ground black pepper
1/4 tsp garlic powder

For the Lime & Cilantro Black Beans:

1 tbsp olive oil
3 cloves garlic, minced
1/2 jalapeño, (1 tbsp) seeded and finely diced
1/2 tsp cumin
2 15- ounce cans low sodium black beans, rinsed and drained
1 cup low-sodium chicken broth
2 tbsp fresh lime juice
2 tbsp fresh cilantro, chopped
1 tsp. sea salt

Lean strips of chicken breast, bell peppers and onions served sizzling hot with warm tortillas and shredded cheese. If this is your idea of delicious, you are not alone!

Chicken Fajitas

chicken breasts

red bell pepper

pepper

onion

ancho or Mexican chili powder

salt and pepper

reduced-carb whole wheat flour tortillas (or corn tortillas

reduced fat shredded Mexican cheese

reduced sour cream (optional)

guacamole (optional)

Marinate the chicken with lime juice, and season with chile powder, salt, pepper, garlic powder and cumin.

Season vegetables with salt and pepper and toss with olive oil.

To grill the onions and peppers outside on the grill, use a cast iron skillet and grill covered over medium heat until tender, about 15 minutes. Or, to cook them indoors, you can use a large skillet on the stove over medium heat for 16 to 18 minutes, covered until the onions and peppers are soft.

Heat an outdoor grill or indoor grill pan over medium heat; grill chicken until cooked through, about 8 minutes on each side.

Transfer to a cutting board when done and cut into strips. Once cooked, combine with the peppers and onions.

Serve immediately with warmed tortillas, cheese and toppings.

Authentic Mexican Chicken Fajitas {Fajitas De Pollo}

chicken breasts ((about 3 large chicken breasts))

onion (thinly sliced)

lime

large bell peppers (red, yellow and green, sliced)

olive oil (divided)

chili powder

smoked paprika

onion powder

oregano

salt and black pepper

tortillas

sour cream yogurt

cilantro

In a large bowl, combine sliced chicken breast, one tablespoon olive oil, juice of half a lime and the fajita seasoning spices. Toss the chicken until it&#39;s evenly coated in the oil and spices. If you have the time, allow the chicken to marinate for at least 30 minutes.

When ready to cook, heat one tablespoon of olive oil over medium high in a large non-stick heavy bottomed or cast iron skillet. Add half of the chicken strips and cook until just cooked, about 3-5 minutes.

Remove from the pan and set aside. Repeat with remaining chicken. Set chicken aside in a bowl or on a plate.

Add the remaining tablespoon of oil to the pan. Add sliced onion and cook for 2 minutes. Add in sliced peppers and cook an additional 2-4 minutes or until they start to soften.

Add chicken back to the pan and toss to combine.

Squeeze additional lime juice over the mixture.

Serve warm over tortillas with desired toppings.

Super easy and so delicious,  I double the marinade and added quartered roma tomatoes. Served charro beans and lime rice along side.Thank you for a plate of happiness .

I just made these with a couple of modifications. I actually doubled the spices and olive oil for the marinade. The only other change was that I added Roma tomatoes cut into lengthwise wedges to my iron skillet along with the bell peppers…absolutely delicious!

I made this without the chicken. I think it needs more vegetables if you're going to do that maybe some mushrooms yellow peppers. also I used a knife to ream the limes. I wouldn't do that again it came out very sour. but overall this was genius rubbing the seasonings and oils into the vegetables with your hands and letting that marinade with the lime juice. that is the secret to authentic Mexican fajitas. mine never came out right the way they are at the restaurant and that is why. I'm looking forward to making this again with chicken and without the lime flesh. Also I did not use salt because of dietary reasons. I'm sure it tastes amazing with the salt. thank you for sharing this this one recipe I'm writing down on a card.
