This simple, healthy coleslaw recipe is vegan, paleo &amp; dairy free and perfect serving with your favorite grilling recipes all summer!

Best Healthy Coleslaw Ever (no mayo!)

For the slaw:

purple cabbage, shredded (about 3 cups shredded cabbage)

carrots

cilantro

jalapeño,

green onion (green part only)

pepitas

almonds

For the dressing:

extra virgin olive oil

apple cider vinegar

garlic, finely minced

cayenne pepper, optional

salt

black pepper

Add all the ingredients for the slaw except for the almonds and pepitas to a large bowl.

In a small bowl, whisk together all the ingredients for the dressing. Pour all over the slaw and toss well to combine. Taste and adjust seasonings as necessary. Cover and place in fridge for at least an hour to allow flavors to marinate together.

Before serving, sprinkle with toasted sliced almonds and pepitas; toss again and serve.

Grate onion with a box grater. Scrape grated onion into a large bowl.

Add greek yogurt and mayonnaise and whisk to combine. Add vinegar, sugar, mustard, salt, celery seed and pepper and whisk to combine.

Add cabbage, carrots, celery hearts and parsley (if using) and toss to coat.

This is a great recipe. I used different vinegars and didn’t add celery seeds because I didn’t have any. I also used shallots instead of onion. It turned out really well. 

Delicious!, I used 1 tsp sugar and 5 drops liquid stevia. Yum!!

This Healthy No Mayo Coleslaw recipe is made with red and green cabbage, carrots, red onion, and jalapeno and drizzled with a homemade sugar-free olive oil and vinegar dressing. Perfect for any potluck, picnic, or party.

No Mayo Coleslaw Recipe

green cabbage (sliced thinly)

red cabbage (sliced thinly)

carrots (4-5 large carrots)

onion

Italian parsley

jalapeno

walnuts (lightly toasted)

lemon juice

garlic (minced)

To prepare the coleslaw: Place green cabbage, red cabbage, and carrot in a bowl. 

Stir in the onion, parsley, jalapeno, and celery seed. Give it a gentle toss to make sure that all the vegetables are equally distributed in the bowl.

To make the dressing: Place olive oil, lemon juice, vinegar, garlic, salt and pepper in a mason jar. Close it with the lid and give it a shake. 

Drizzle the salad with the dressing and toss. Sprinkle it with walnuts and serve.
