Healthy Eggs Benedict

sweet potato (cut into 1/4 inch to 1/2 inch thick slices)

eggs

canadian bacon

parsley (for garnish)

lemon juice

dijon

salt

cayenne pepper

hot butter (or ghee)

Preheat your oven to 400 degrees Fahrenheit.

Slice the potato into even round slices, using a sharp knife or mandoline. Place the slices on a baking sheet and bake for 30-40 minutes, or until cooked through. Note: thicker slices may take longer.

When the sweet potato is almost done, prepare the other ingredients.

Cook the Canadian bacon for about a minute on each side in a pan on medium heat. Set aside.

Bring a pot of water to a simmer. Create a vortex with a spoon and crack and poach the eggs for 3-4 minutes. Remove the eggs from the pot and place in a bowl.

Add the egg yolks, lemon juice, dijon, salt and cayenne pepper to a high powered blender and blend for about 5 seconds. Then slowly pour in the hot butter with the blender on medium high, until you&#x27;ve fully emulsified the sauce. Pour into a small bowl.

Once the potatoes have cooked, add to a plate and top with canadian bacon, a poached egg, and a drizzle of hollandaise sauce. Garnish with chopped parsley and serve immediately!

Swiss Chard Eggs Benedict

unsalted butter

olive oil

(6 cups Swish Chard, washed well, stems

onion

kosher salt and black pepper (to taste)

Canadian Bacon

light multi-grain or gluten-free English muffins (toasted and split)

Dice the stems of the chard, and slice the leaves.

Heat a large skillet on medium-low heat; heat the butter and oil until melted.

Add the onions with a pinch of salt and pepper. Cook, stirring occasionally until the onions become translucent, about 5 minutes.

Bring the heat up to medium-high, and add the stems with 1/4 cup water, cover and cook until soft, about 8 to 10 minutes.

Add the chard leaves with 1/2 teaspoon salt; cook until wilted, about 2-3 minutes. Set aside on a dish and keep warm.

To the skillet on medium-high heat, add the ham and cook until lightly browned on each side, about 1 minute. Set aside.

Crack eggs into individual small cups or ramekins.

Bring a pot of water to a boil. Add vinegar and salt. Reduce to simmer.

Use a spoon to stir the water so it is spinning around in a circle. This will keep the egg whites from spreading out away from the yolk.

Carefully drop eggs one at a time into the center of the pot.

Simmer for 2 minutes then turn off the heat. Cover and let sit for 2 more minutes.

Gently remove eggs with a slotted spoon and place on plate lined with paper towels.

Divide the muffin half among 4 plates.

Top each muffin half with a piece of ham, 1/4 of the chard and top with 1 egg.

non-stick cooking spray

Brown sausage in frying pan until no longer pink.

Beat together eggs and coconut milk. Season with salt and pepper.

Spray 8×8 baking pan with non-stick spray. Pour a thin layer of egg mixture into pan and cover with sausage. Sprinkle with shredded cheese. Pour the rest of the egg mixture evenly over top.

Bake at 350 until brown on top. (about 20-30 minutes)
