Buttermilk Oven "Fried" Chicken

chicken drumsticks (about 3 1/2 ounces each, skinned)

salt

sweet paprika

poultry seasoning

garlic powder

black pepper

buttermilk

lemon

Cooking spray

panko bread crumbs

cornflake crumbs

Parmesan cheese

parsley

onion powder

chili powder

For the chicken: In a medium bowl, season the chicken with the salt, paprika, poultry seasoning, garlic powder, and black pepper. Pour the buttermilk and lemon juice over the chicken and refrigerate for 6 to 8 hours, preferably overnight.

Preheat the oven to 400 degrees F. Place a rack on a baking sheet and lightly spray with oil.

For the coating: In a shallow bowl, combine the panko, cornflake crumbs, Parmesan, salt, parsley, paprika, onion powder, garlic powder, and chili powder.

Remove the chicken from the buttermilk and dredge each piece in the crumb mixture. Put the chicken pieces onto the prepared baking sheet. Spray the tops of the chicken with cooking spray.

Bake chicken until golden brown and cooked through, 40-45 minutes.

Cooking chicken thighs in the air fryer is currently my (healthy) obsession and, honestly, the best thing! These bone in chicken thighs in the Air Fryer are crispy on the outside and yet very juicy on the inside. Air fryer thighs are packed with flavors, easy to cook, and ready in 30 minutes or less. The best part is that you can serve air fryer chicken thighs with just about any main side dish. Relatively, they pair so well with fried rice, cabbage, roasted veggies, salads, and literally any dish as a choice of protein.

Air Fryer Chicken Thighs (with Bone in Thighs)

Big chicken thighs (bone in and skin on)

onions powder

dry thyme

paprika

Maggi; crushed (or 1 teaspoon Knorr seasoning)

EVOO (Extra virgin olive oil)

Wash the chicken thighs very well using ½ of one lemon (juiced). Pat dry with paper towels to remove as much moisture as possible.

Add seasonings and olive oil to the thighs, wear gloves, and rub the dry rub on every part of the chicken thigh using your hands. Cover and allow the thighs to marinate for 2 hours or cook immediately if in a hurry.

Preheat the Air Fryer to 400, place chicken skin up, flip/turn after 10 minutes, and cook for another 5 minutes. Then reduce the heat to 350, and cook for another 10 &#8211; 15 minutes. I cooked these big thighs for a total of 27 minutes. 

*Please note that cooking time can vary due to the chicken size of your chicken thigh or the type of air fryer. I have big chicken thighs, and they cooked at a good time. Equally, I have the Instant Pot Air Fryer, which works very well! Your best bet for cooking meat in the Air Fryer is to use a meat thermometer.

The BEST Crispy Keto Fried Chicken Recipe

lard (or avocado oil, coconut oil, beef tallow)

eggs

lb boneless chicken thighs (4 large thighs)

garlic

paprika powder

oregano

tsp chili powder

sage

tsp Himalayan salt

tsp black pepper

tsp celery seeds

cayenne pepper

almond milk

tbsp mayonnaise

lemon juice

tsp chili oil

Mince the garlic cloves. Cut the chicken thighs into bite size pieces. &nbsp;I prefer to eat the skin, but if you don't like the skin feel free to take it off :)

In a bowl combine the chicken with all the spices and the almond milk. &nbsp;Mix until well combined. &nbsp;Add the two eggs to the mixture and mix thoroughly.

Heat the lard (or any frying oil you'll be using) between 140-150C/285-300F.

When the oil is hot, dip each chicken piece, one by one, into the protein powder making sure all the sides are perfectly coated. Once coated, add the chicken pieces to your hot oil and fry 2-3 minutes until golden brown and cooked through. &nbsp;The inner temperature of each chicken bites should register at 65C/150F+ when the chicken is cooked through.

Add the fried chicken on a wire rack or some paper towel to absorb the excess oil.&nbsp;Eat as is or with some spicy ranch dressing!&nbsp;

Mix all of the ingredients in a small bowl together and serve with the fried chicken :)

Spicy Ranch Dressing

Rice flour/Almond flour with cornstarch with club soda as the liquid. Its the secret to perfect fried chicken or shrimp. Always comes out perfect. Honestly could bottle and sell this knowledge.

Excellent recipe, have been making this with chicken tenders that I chop into nugget size. I put my oil at 375 and they come out great. The whole family loves this recipe. Here's a tip, save the little crispy bits, they make a good crunchy snack. Also used the technique with just salt and pepper on the chicken and thats really good. This is the perfect breading alternative to those who don't eat pork ( just dont fry it in lard obviously) .

A little tweak for the lazy and those people with dishwashing phobias. Crack your eggs into a zip lock bag and smush till beaten, also put your whey into another zip loc with salt and seasonings. I used fish fillets, put them all into the eggs, then one at a time into whey rumble around and lightly pat down through bag then use non eggy hand to take out and drop in fryer. If you use eggy fingers, in dropping into the oil a chunk of breading gets stuck to your digits. Clean up? Throw bags in refuse, sorted!!

Loved this just the way the the recipes says. Next time I will dip in the whey as I put it in the oil. I did it ahead and the coating came off. Going to make my fish tacos with the same recipe.
