Easy healthy oatmeal breakfast bars recipe (gluten free, vegan) made by using a mixture of gluten free rolled oats, dried cranberries, raisins, prunes and baked in the oven for a golden crust.  Soft and chewy in texture, these easy healthy oatmeal breakfast bars are full of fibers and nutrients, they&#039;re naturally gluten free, dairy free and refined sugar free and vegan.

Healthy Oatmeal Breakfast Bars To-Go (Gluten Free, Vegan)

gluten free organic rolled oats (soaked)

15-17 dried prunes (soaked and chopped (preferably unsulfured))

sunflower seeds (soaked)

pumpkin seeds (soaked)

cranberries (soaked (preferably unsulfured))

raisins (soaked (preferably unsulfured))

tbsp coconut oil

maple syrup

tbsp flax meal

tsp salt

cinnamon

tsp vanilla extract ((optional))

Combine the rolled with 3 times as much water (room temp) with 1 tbs lemon juice for at least 8 hours or overnight. Soak the dried fruits for at least 2 hours with warm water to make them plumper, juicier, and softer even after baking.If you don&#039;t have time, soak the oats at least 1 hour before baking. Discard the water.

Soak The Oats And Dried Fruits

In a medium bowl mix all ingredients and spread on a baking sheet covered with parchment paper. I&#039;m using a 3 Quart glass oblong baking dish.

Press down with a spatula to keep everything compact and compressed.

Cook until lightly brown, approximately 1 hour at 330 F. For an extra crispy crust after baking, turn off the oven and let them sit in the oven with the door closed for at least 40 minutes or so.

Allow to cool completely, then cut into bars. For a cleaner cut chill the pan in the fridge before slicing.

Easy Oatmeal Bars with Veggies

quick oats

rolled oats

almond meal (*see substitutions in notes)

tsp baking powder

cinnamon (- optional)

overripe bananas

egg (*see substitutions in notes)

carrot (or 1 small zucchini)

tsp vanilla extract (- optional)

salt

tbsp peanut butter (*see substitutions in notes)

tbsp milk (-

Preheat oven to 180C (350F) and line an 8 inch square cake tin with baking paper along base and sides.

Grate the carrot or the zucchini (whatever you&#039;re using) and set aside. If using zucchini, squeeze out excess water with paper towel or a clean tea towel.

Mash the bananas thoroughly in a large mixing bowl. Add egg, vanilla, peanut butter and milk. Whisk it all together. Add in quick oats, rolled oats, almond meal, cinnamon, baking powder, salt and the grated carrot/zucchini. It will form a very thick batter, almost like a wet dough.

Let the mixture sit for 5-10 minutes so the oats absorb some of the moisture and soften.

Press the mixture evenly into the lined cake tin. Bake for 20-25 minutes or until golden brown on top and firm to touch. Allow to cool before slicing into bars. Will keep in the fridge for around 5 days. The bars can be frozen but they tend to lose their shape a bit if you microwave them.

These oatmeal bars taste like an oatmeal cookie and are great for breakfast or snack. You can make them ahead, too! (You can add the egg or leave it out. Without egg, these are a crisp cookie bar texture. With it, they&#039;re a little cakier.)

Easy Oatmeal Bars (with Blueberry and Carrot)

¾ cup quick or instant oats ((or rolled oats

whole wheat flour

baking powder

coconut oil ((or butter))

almond butter

egg ((optional))

carrot

blueberries ((cut in half if very large))

Preheat the oven to 375 degrees F. Line an 8x8-inch pan with parchment paper so it overhangs on two sides so the bars are easy to lift out once baked and cooled.

Mix together all of the ingredients in a medium bowl except the blueberries. (Add the egg if using.) Stir in the blueberries gently.

Press into the prepared pan so the batter is even and pressed to the edges.

Bake for 24-26 minutes or until the edges are lightly golden brown and set.

Cool fully. (Really, please let it sit until it&#39;s cool to the touch! You can pop it into the fridge to speed this up if you&#39;d like. It may crumble a bit if you slice when still warm.)

Slice into bars and serve or store. I typically cut into 16 small squares, but you can cut them larger if desired.

Amazing recipe and so easy to make! I have made this a few times now and top it with different fruits / jams and it works great. My toddler loves it (and so do I :) ).

This recipe is amazing!! I didn't grind up the oatmeal and topped it with frozen blueberries after pressing the batter into the pan. I used peanut butter instead of almond butter thinking that the flavor would be overpowering but you can barely taste the PB. Also used only half of the maple syrup. It came out exactly like in the pictures. It's DELICIOUS and the whole family loved it. Including it into my weekly rotation for sure.

Kids and parents loved this recipe! It was devoured the same day and baked again in the same week.

Holy moley these are phenomenal!!! I made these for my 18 month old son who loves blueberries &amp; isn’t a fan of veggies. I have already had 3 bars hahah

These were perfect for my 1 year old. I didn’t use eggs but used a very ripe banana in its place. I also didn’t use any maple syrup as I’m trying to keep her sugar intake low- they were still plenty sweet and tasty.

These are delicious! Baby loved them and so did I! Due to allergies I used sun butter and applesauce instead of eggs. They still came out great! The texture was perfect and easy for my baby to eat.

This recipe is perfect! I replace the carrot with grated apple and use the egg. It came out like a soft cake. I like to eat it hot. Haha. Got to bake more. I reduce the nut butter because I’m not a fan 😅

Easy Oatmeal Bars

These berry oatmeal bars are delicious for breakfast, snacks or a healthy dessert! They&#39;re simple to make with a mixed berry filling made from frozen berries! The oatmeal crust is sweet with the best crumbly texture and used as the base and topping for these bars. Enjoy!

Healthy Berry Oatmeal Bars Breakfast

berries ((you can use any mixture of small berries))

lemon juice

Tablespoons coconut sugar

sea salt

½ Tablespoons tapioca starch ((also known as tapioca flour))

¾ cups rolled oats ((gluten free if needed))

flour

baking soda

coconut oil ((solid at room temperature))

vanilla extract

Preheat your oven to 375 degrees Farhenheit and line a 9x9 baking dish with parchment paper.

Measure out your frozen berries and if there are any large strawberries, leave them out or cut them into 4 pieces.

Place a small sauce pan on low-medium heat. Add your berries, lemon juice, coconut sugar, maple syrup and sea salt.

Let the berries warm for 5-10 minutes or until they have let out a lot of liquid and become soupy. Take out a tablespoon or two of the liquid and add it to a small cup along with the tapioca starch. Stir until there are no clumps and add it back to the pot of berries. Stir while letting it heat for 1 minute and then remove pot from the heat and set aside while you make the oatmeal layers.

In a large mixing bowl, stir together rolled oats, almond flour, baking soda and sea salt. Then add maple syrup, vanilla extract and coconut oil.

Use a fork to stir these ingredients together and cut in the coconut oil to incorporate. It may be helpful to use your hands to finish mixing.

Reserve ½-¾ cup of the oatmeal mixture and transfer the rest to the baking dish. Press into an even layer that covers then entire bottom of the dish.

Add your berry mixture on top of that oatmeal base and spread into an even layer.

Now, use your fingers to sprinkle the reserved oatmeal mixture across the top of that berry layer. You can do large clumps or small to make them look the way you like.

Place the baking dish in the oven and bake for 20-25 minutes or until you see some edges turn lightly golden in color.

Let the bars cool completely before slicing so they stay together. Store lightly covered in the fridge for breakfast throughout the week.
