Oreo Protein Zucchini Oats is the best ever breakfast you will have! Creamy high protein oatmeal with shredded zucchini is a low calorie, high volume meal that actually tastes like a bowl of Oreo!

Oreo Protein Zucchini Oats

Instant Oats (30 grams)

Puffed Kamut Cereal (5 grams, or Cheerios)

½ Tbsp Chia Seeds (6 grams)

Water (120 milliliters)

Shredded Zucchini (moisture intact, 164 grams)

Chocolate Protein Powder (30 grams, 1 scoop)

1½ Tbsp Black Cocoa Powder (9 grams)

1½ tsp Vanilla Extract

Stevia Sweetener (1 tsp sugar worth)

Water

Mini Oreos

White Chocolate

Combine oats, cereal, chia seeds and water in a bowl and microwave on high for 1 minute.

Add shredded zucchini; Microwave 1½ minutes.

Add in chocolate protein powder, black cocoa, vanilla extract and stevia sweetener.

Mix, adding in more water as needed.

Top with all your favorites and serve hot!

I found this recipe last year and I make it all the time in the summer when I have fresh zucchini from my garden! I just harvested my first zucchini today so it was Oreo zucchini proats for breakfast :) The zucchini adds a lot of volume, making this breakfast is so filling. The black cocoa really makes it, and I can vouch that you can't taste the zucchini!

I have been making this or a variation of this recipe every morning. Such a great idea! It’s is high-volume and filling. I basically make it cold overnight then zap in the microwave for 1-1.5 minutes, stir in protein and eat. Quick and tasty!

I just made this. I didn't have the kamut(but ordered some) so I used some plain special k. I used frozen zucchini from my garden. I sprinkled a few NSA white chocolate chips on top. I cooked it longer than the recipe states because I wanted to be sure the zucchini got some cooking(and it was still pretty cold from being frozen and mostly thawed. ) The first couple bites I could taste the zucchini, but thereafter I did not. It was quite tasty! The only thing is I am not too terribly fond of the texture of the zucchini in there, but maybe I'll get used to that! Would make again! I never get veggies at breakfast otherwise!

This is such a delicious and comforting bowl of oats you never want it to end! High protein, simple to make, filling and delicious this is my new favorite breakfast when I want something high volume. And you even get in veggies first thing in the morning:)

This. Was. Fantastic!!  All the way through making this, I kept thinking “this is going to be really bad, just another recipe that looks like a great idea but really isn’t”. And to my surprise it was amazing! The taste was incredible. You can’t taste the green stuff at all! 
The volume you get for the calories was incredible as well. 

I had no toppings with mine and only had access to normal cocoa powder and it still tasted really good!

As someone from the UK it’s also so nice to have the weights next to the US cup measurements. 

I’ll be eating this as a regular staple in my breakfast plans moving forward!
