Lemon Blueberry High Protein Pancakes

½ cup old fashioned oats

cottage cheese

vanilla protein powder

tsp lemon juice

lemon

water

fresh blueberries, (plus more for topping)

coconut oil, (for greasing pan)

plain greek yogurt

tbsp honey

lemon juice

Combine the oats, egg whites, cottage cheese, vanilla powder, 2 tsp. lemon juice, 1/4 tsp. lemon zest, and water in a blender.

Blend until the mixture is pureed. You may need to scrape some of the protein powder from the sides of the blender, as it tends to stick.

Once pureed, pour the mixture into a mixing bowl and fold in the blueberries.

Heat a griddle or fry pan over medium-high heat and add enough oil to lightly grease the pan, approximately 1 tsp. to start (you will add more as needed for more pancakes).

Once the oil is hot, pour 1/3 cup of the pancake mixture into the center of the pan. Allow to cook for 2-4 minutes, or until the edges start to harden and a spatula can easily slide underneath the pancake.

Flip over and cook an additional 2-4 minutes, or until the batter is cooked through.

Repeat with remaining pancakes.

To make the optional yogurt topping, combine the yogurt, honey, lemon juice, and lemon zest in a small mixing bowl.

To serve, drizzle the yogurt sauce over the pancakes along with a few fresh blueberries and optional lemon zest for garnish.

These are the protein pancakes to end all protein pancakes. They’re light, fluffy and very delicious. Packed with over 30g of protein per portion. Make a batch and freeze them for an easy 2-minute breakfast.

Protein Pancakes

Greek Yoghurt

Cottage Cheese

Semi-Skimmed Milk

Vanilla Extract

Flour

Vanilla Protein Powder

Baking Powder

Salt

Non-stick Vegetable Oil Spray

Fruit

Honey

Make the pancake batter. Add the greek yoghurt, cottage cheese, whole egg, milk, protein powder and vanilla extract to a blender. Blend on a high speed until completely smooth, about 45 secs. Pour the mixture into a large mixing bowl.

Add the flour, baking powder and salt to the mixing bowl with the wet ingredients in it and whisk gently until just incorporated. You don’t want to overmix it so some small lumps are fine. Leave it to sit in the bowl at room temperature for 5 mins.

Now cook the pancakes. Set a non-stick frying pan with a lid over a low heat to warm up, about a minute. Spray the pan lightly with some oil, then add a ladle of pancake batter into the pan and pop the lid on top. If your pan is big enough you can cook multiple at a time. Cook for 2 ½ mins. Using a spatula, flip the pancake over and put the lid back on the pan. Cook for another 2 mins. Remove from the pan and set aside.

Once cool, pop them in a ziplock bag and keep in the freezer. Microwave for 1-2 mins to defrost.

Serve with your choice of toppings. Greek yoghurt, fresh fruits and honey work great.

Made these pancakes this morning and no matter how I heated the oil/used lid or no lid the pancakes cooked and stuck to the pan but stayed wet at the top so impossible to flip, complete waste of time.

Followed instructions exactly and turned out really fluffy and moist, added blueberries too. My new go to protein pancakes!

I added some crushed raspberries to mines and they were gr8...didn't have baking powder but didn't bother the pancakes I don't think!

Great recipe! I felt there was a bit too much salt for my taste - not sure it is because I have skipped the protein powder?
