healthy protein snack

A great addictive snack! I am not a huge fan of the texture of chickpeas, but once roasted they become nutty, crunchy and addicting!

Roasted Chickpea Snack

chickpeas (drained)

olive oil spray

kosher salt

tsp chili pepper powder

tsp cumin

paprika

tsp coriander

curry powder

garlic powder

Preheat oven to 375°F. Drain chickpeas in a colander and let them dry completely. Pat dry with a paper towel if needed, I usually leave them on the counter an hour to make sure they are very dry.

Arrange on a baking sheet in a single layer and roast for about 35 to 45 minutes, shaking the pan every ten minutes. All ovens are different so make sure they don't burn. They will be golden brown and crunchy on the inside when done, not moist.

In a medium bowl, combine all the spices. Remove chickpeas from oven when done and spray with olive oil. Immediately toss with spices while hot. Eat at room temperature.

High-Protein Cottage Cheese Veggie Dip with Za’atar

cheese

mini bell peppers (red yellow and orange)

mini cucumbers (sliced in quarters or halved)

radishes (quartered or veggies of your choice)

extra virgin olive oil

dill (plus more for garnish)

Za’atar

Combine cottage cheese and dill in a small bowl, drizzle with olive oil and top with Za’atar and fresh dill.

Place on a plate or small platter with cut up fresh veggies.

Perfect light dinner after a catered work lunch!  I love savory cottage cheese.

I have this all the time.  I put mine in the mini food processor and whipped smooth.  Everyone kept asking what kind of dip did you make.  I top with Trader Joe’s green goddess seasoning .

Delicious, healthy and great with carrot sticks or your favorite veggies. I was looking for a light snack instead of dinner tonight &amp; this was perfect. I loved the savory taste.  Thinking about trying Everything but the Bagel seasoning next time. Thank you Gina!

Avocado Cottage Cheese Dip is a creamy, high-protein snack made with avocado, cottage cheese, lime, and cilantro. Lighter than traditional guacamole, it’s perfect for dipping veggies, scooping with chips, or spreading on sandwiches and wraps.

Whipped Avocado Cottage Cheese Dip  

avocado (from 1 large Hass)

2% cottage cheese (I love Good Culture)

lime juice (freshly squeezed)

red onion (chopped)

½ medium jalapeño

garlic

chopped cilantro (plus more for garnish)

salt

tomatoes (for topping)

In a small food processor, combine the avocado, cottage cheese, lime juice, red onion, ½ jalapeño with seeds, garlic, cilantro and salt. Purée until smooth, transfer to a bowl and top with tomatoes, garnish with cilantro.

This dip is delicious! I’m not a cottage cheese fan but it whipped up so fluffy and blended in. I added chili crisp, out of jalapeños, and an extra clove of garlic. Yum, thank you, Gina!

Five stars! So easy and absolutely delicious. Thick and creamy very flavorful, and for the cottage cheese haters- you would never know cottage cheese is in it. I made a half batch because I wasn’t sure how it would turn out and now I wish I had made a double batch.

Once made, how many days would this last ?

I made this and added a whole jalapeño for a kick! It was sooo good and my husband loved it!
