healthy roast

This wintery butternut squash salad makes a great side dish to Christmas ham, and would also go well with griddled pear wedges as part of a vegetarian platter of festive dishes.


Roast squash salad 

butternut squash

olive oil

thyme

garlic cloves, crushed

150 grams/5½ oz baby leaf spinach

pumpkin seeds (see Recipe Tips and How-to Video)

salt and black pepper

tbsp sherry vinegar

½ tsp runny honey

½ tsp wholegrain mustard

With earthy cauliflower, sweet and nutty cashew and a deep umami note from the Parmesan, this quick roasted cauliflower recipe is easy yet impressive.

You may have noticed that I said the pork loin should be de-rinded.  I didn’t say you wouldn’t want the rind as well. The ciccioli – as Italian pork scratchings (give or take) are known – make for very fine aperativo-accompanying morsel.

100 grams/3½oz Parma ham, sliced

⅓ tsp dried chilli flakes

onion

dry white vermouth

water
