healthy scone recipe

Part vegan scone, part healthy muffin, these Apple Cinnamon Oat Flour Scones have irresistible cinnamon-sugar tops with bits of apple peeking through. No butter or oil, so they&#39;re healthier and easier to prepare than traditional scones! Vegan, oil-free and gluten-free.

Vegan Apple Scones (Oil-Free)

oat flour

almond flour

baking powder

½ teaspoons ground cinnamon, divided

ginger,

fine sea salt

almond butter

applesauce

milk

vanilla extract

coconut butter almond butter if desired.)

maple syrup

non-dairy milk, for consistency

Preheat

Preheat oven to 425 degrees F (218 C), and line a baking sheet with parchment or a silicone mat.

In a mixing bowl whisk together the oat flour, almond flour, 1/4 cup sugar, baking powder, 2 tsp cinnamon, ginger, if using, and salt. In a separate small dish, mix together the remaining tablespoon of sugar and 1/2 teaspoon cinnamon.

In a small bowl whisk together the almond butter, applesauce, milk, and vanilla.

Fold

If you haven&#039;t already, core and finely chop the apple, and set aside. Pour wet ingredients into dry, and stir until combined. Fold in about two-thirds of the chopped apple, reserving some to press into the tops of the scones.

Shape

Sprinkle some oat flour on a flat work surface, and shape the dough into a disc about 7-inches across and 3/4 to 1-inch thick. Cut into 8 triangles, using more flour as needed to help with sticking. NOTE: for rustic scuffins (drop scones), you can skip this step of forming and cutting the dough. Simply spoon biscuit-size amounts of dough onto the baking sheet. Depending on size cook time may be reduced, so keep an eye on them around the 10 min mark.

Bake

Press reserved pieces of apple into the dough wherever it is needed, and liberally sprinkle cinnamon sugar on top. Transfer dough to the prepared pan, and bake for 12 to 13 minutes or until crisp on top and golden on the bottoms.

Glaze

In a mug or ramekin, warm the coconut butter just enough to melt it (5 to 10 seconds in the microwave gets the job done). Whisk in the maple syrup, and add a teaspoon of milk as needed for consistency. Drizzle over scones, and serve immediately.

To make the optional maple glaze:

Back in the 60's, my mother used to make "scones from Scotland" with bleached refined flour, butter, cream and sugar.  I haven't had a scone since, so these caught my eye.  I am so glad I tried this recipe!  I will definitely be making these again!   I subbed almond butter powder mixed with water so mine were lower in fat.  Next time I will have almond butter and see if that changes the texture.  Thanks so much for posting this recipe!

Delicious! My husband said "you have to make these again". The next day I heated them in the air fryer on the air roast setting 375 for 3 minutes. It smelled like a bakery in the kitchen. Thanks so much for all of your delicious recipes.

Loved it. It just needs to be a little more moist. I did an almond butter glaze, and it stuck to the roof of my mouth.  How can we add a little more moisture, an extra 1/4 of apple sauce?

Omg!!  These were the best!!  Tender and delicious. Made sure I weighed the oat flour. My bag of Bobs Red Mills said a  1/4 cup weighs 30 grams. Which equates to 120 g per cup. I used your weight instead. I think they would have been way too dry if not. Why the different weights on the package? Shouldn’t it be standard across all brands of oat flour?

These were amazing, so delicious and healthy too. They all disappeared quickly and the kids were asking me to bake more. Will def be making again!

These scones are phenomenal! I just had one warm from the oven and it was bliss. Crisp exterior with a dense, yet soft interior. And so flavorful! This is now one of my favorite scone recipes (regardless of whether it's a stretch to call them that or not haha). Thank you for the amazing recipe.

This wholesome scone recipe is easy to customize using other fruit and makes the tastiest breakfast or snack. Enjoy it with a mug of coffee or tea!

Almond Flour Blackberry Scones

eggs (*)

avocado oil (**)

tsp pure vanilla extract

tsp almond extract (optional)

tsp baking powder

tsp baking soda

sea salt

blackberries (chopped in half)

sugar

water juice

Preheat the oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper.

Mix the eggs, avocado oil, pure maple syrup, vanilla extract and almond extract in a large mixing bowl until the wet mixture is combined.

In a separate bowl, stir together the almond flour, baking powder, baking soda, and sea salt.

Transfer the dry ingredients to the bowl with the wet ingredients and mix well until a thick and sticky dough forms.

Chop the blackberries in half and gently fold them into the scone dough.

Turn the dough out onto a cutting board and use your hands to form it into a large disc.

Use a sharp knife to cut 8 equal size triangles.

Transfer the triangles to the prepared baking sheet. I’ve found this to be easiest with the use of the spatula. The dough will try to fall apart, but it is easily pliable, so you can simply press it back together.

The dough expands during the baking process, so be sure to leave plenty of room between each scone. Bake in the preheated oven for 20-25 minutes, or until golden brown (I do 20).

Remove the scones from the oven and allow them to cool for at least 10 minutes before serving.

If you’d like, make a simple powdered sugar glaze by stirring 1 cup of powdered sugar together with 2 tablespoons of water or lemon juice. Drizzle the glaze over the scones before serving.
