Baked Apple Chips

apples (your favorite variety)

sugar

cinnamon

Preheat oven to 200°F (93ºC).

Line two large baking sheets with parchment paper or a silicone baking mat.

Sift powdered sugar into a bowl. Add cinnamon to the powdered sugar and gently whisk to combine.

Thinly slice the apples using a mandoline, to 1/16-inch. Remove the seeds from the individual slices.

Spread the apple slices onto the lined baking sheets making one single layer. About 15 slices should fit on a half sheet pan.

Transfer the cinnamon and sugar mixture into a sifter or strainer. Gently sprinkle each apple slice with a thin coating of the cinnamon sugar mixture.

Turn the apple slices over and sprinkle with the remaining cinnamon-sugar.

Bake for 1 hour, then flip and bake until crisp, an additional 1 hour.

To test the doneness, remove the apples from the oven and allow to rest at room temperature for 5 minutes. If the apples are not crunchy, continue baking in 15-minute increments. 

Remove the apples from the baking sheets and allow to cool completely before storing in an airtight container.

Oven Baked Beet Chips Recipe

Preheat the oven to 300 degrees F, and line several baking sheets with parchment paper. Scrub the beets well with a veggie brush and cut off the tops.

Use a mandolin slicer to slice the beets paper thin (1/16-inch). When the beet slices are this thin, there is no need to peel them first. Hold the root end while dragging the beets across the mandolin and watch your fingertips closely.

Place the beet slices in a large bowl and pour the oil and salt over the top. Toss well. (If using red and golden beets, place in separate bowls and divide the oil and salt evenly.) Ready for the secret step? Now let the beets sit in the oil and salt until they release their natural juices, about 15-20 minutes. This is what allows them to retain a better shape and color.

Toss the beets again, then drain off the liquid. Lay the slices out in a single layer on the prepared baking sheets. Bake for 45-60 minutes until crisp, but not brown. Test after 45 minutes and only bake longer if necessary. Remove the beet chips from the oven and cool completely before storing in an air-tight container.

Peel the garlic. Remove any tough stems from the herbs; measure out 1/2 cup (remember with rosemary, a little goes a long way). Drain and rinse the white beans.

In the bowl of a food processor, add garlic and herbs and process until finely chopped.

Add the white beans, olive oil, white wine vinegar, kosher salt, and black pepper. Process until smooth, scraping down the bowl as necessary. Store in the refrigerator for up to 1 week.

Place all of the ingredients but ice in a blender: almond milk (start with 1/2 cup if you’re using fresh banana, since it will blend up more liquids than frozen), orange juice, mango, and banana.

Blend

Blend until smooth. Add more almond milk for a thinner consistency or more mango pieces or a few ice cubes for a thicker consistency. Enjoy immediately.

Add all of the ingredients to a medium sized bowl. Use a wooden spoon, large spoon, or spatula to mix everything together. If too dry, add an additional teaspoon or two of water to the “dough.”

Roll into 1-1 ½ inch size balls. 

Place the balls on a small baking sheet or large plate lined with wax paper. Place the plate in the refrigerator to chill for 20 minutes. Transfer the balls to an airtight container and store in the fridge or freezer.
