This makes a small batch of lightly sweet cookies. Double it to make more. If at any point the dough seems too sticky, pop it into the fridge for 5-10 minutes to firm up a bit. Or dust your parchment paper and cookie cutters with flour.

Easy Sugar Cookies (Healthy and Delish!)

all-purpose flour

sugar

baking powder

unsalted butter ((softened at room temperature))

milk

vanilla extract

food coloring ((optional))

Place all ingredients into a bowl and use your hand to mix together to form a dough. (If the dough is a little crumbly, be sure that it's throughly combined and then if it's still crumbly, add 1/2-1 tablespoon additional liquid until it comes together.)

Make a flattened disc of dough and wrap in plastic. Refrigerate while the oven preheats. 

Preheat the oven to 375°F and line two baking sheets with parchment paper.

Roll the dough ¼-inch thick between two pieces of lightly floured parchment paper. (The flour will ensure that the cut outs are easy to move.)

Cut out the dough with a cookie cutter and transfer to the prepared baking sheets. Bake for 7-9 minutes, until lightly browned around the edges. (If for some reason the cut outs are hard to transfer, place the rolled out dough with the stamped shapes into the fridge for a few minutes to firm up.)

Remove from the oven, let cool on the baking sheet for a minute, and transfer to a wire rack to cool completely.

Make the icing if using: Stir the ingredients together in a small bowl. You want it to be able to spread easily on the cookies and not be too thick. If you place some on the cookies and it runs right off, add a little more powdered sugar. If it&#39;s too thick to spread, add a drop or two of milk. You can color the icing with a drop of food coloring if desired.

Use a small butter knife or paintbrush to spread on the icing or pipe on as desired. If adding sprinkles or other decorations, add them to the iced cookies right away before it dries.

This easy recipe yields cookies that taste the same as ones from a bakery or your grandma’s kitchen! Soft, buttery, sweet… Truly perfect! They’ll stay fresh for at least 4 days if stored in an airtight container on the counter. If the cookies have been drizzled with the optional icing, store the airtight container in the refrigerator instead.

The Ultimate Healthy Cut-Out Sugar Cookies

+ 6 tbsp (165 grams) white whole wheat flour

cornstarch

¼ tsp baking powder

salt

tbsp (28 grams) unsalted butter, melted and cooled slightly

egg, room temperature

tsp vanilla extract

½ tsp butter extract

(60 milliliters) honey

vanilla stevia

confectioners' style erythritol

tsp nonfat milk

To prepare the cookies, whisk together the flour, cornstarch, baking powder, and salt in a medium bowl. In a separate bowl, whisk together the butter, egg, vanilla extract, and butter extract. Stir in the honey and vanilla stevia. Add in the flour mixture, stirring just until incorporated. Transfer the dough to the center of a large sheet of plastic wrap, and shape into a 1”-tall rectangle. Cover the top with another large sheet of plastic wrap. Chill the dough for at least 1 hour.

Preheat the oven to 350°F, and line two baking sheets with silicone baking mats or parchment paper.

Leaving the cookie dough between the sheets of plastic wrap, roll it out until 1/8” thick. Lightly flour your cookie cutter, and press it into the dough, making sure each shape lies as close to its neighbors as possible to minimize unused dough. Peel the unused dough away from the shapes, and place them onto the prepared baking sheets. Reroll the unused dough, and repeat.

Bake the cut out cookie dough at 350°F for 8-10 minutes. (The rerolled dough may require a little less time.) Cool on the baking sheet for 5 minutes before turning out onto a wire rack to cool completely.

To prepare the icing, stir together the confectioner’s style stevia and milk in a small bowl. Spoon into a zip-topped bag, and snip off the corner. Pipe onto the cooled cookies.

Protein Sugar Cookie Recipe!

Tbsp Oat Flour (17 grams, see post for subs)

Tbsp Vanilla Protein Powder (about 11 grams)

Tbsp Unflavored Protein Powder (5 grams)

¼ + ⅛ tsp Baking Powder

Tbsp Unsweetened Applesauce (30 grams)

1½ Tbsp Non-fat Plain Greek Yogurt (21 grams)

Tbsp Unsweetened Almond Milk (15 milliliters)

1½ Tbsp White Chocolate Chips (or Chopped Chocolate, Sugar free recommended, 21 grams)

Preheat oven to 350°F and line a baking sheet with parchment paper.

Combine all the dry ingredients in a bowl - oat flour, vanilla protein powder, unflavored protein powder and baking powder.

Add applesauce, Greek yogurt and almond milk and mix.

Transfer ½ cookie mixture onto baking sheet, spread with spoon and shape.

Place chocolate chips in the middle (reserve few for top), cover with remaining cookie mixture, sprinkle more chocolate chips and shape.

Bake about 13-14 minutes - top should be cooked and dry to touch.Let cool for a few minutes and enjoy!
