Tickle your taste buds with this easy chicken teriyaki stir fry! It is made with a sugar free and gluten free teriyaki sauce. Serve with konjak noodles or cauliflower rice for a delicious low carb meal.

Keto Teriyaki Chicken Stir Fry

olive oil

chicken thighs (320 grams, cubed)

broccoli florets

bok choi (70 grams)

konjak noodles (200 grams drained)

butter

tbsp keto teriyaki sauce

water

spring onions/scallions

tbsp chopped fresh coriander/cilantro (optional)

chilli (optional)

sesame seeds

Marinate the chicken in 2 tbsp of keto teriyaki sauce for at least 15 minutes, or overnight.

Heat the oil in a pan on a medium heat. Add the chicken and sauté on a medium heat for about 5 minutes until cooked through. Remove from the heat and set to one side.

Add the butter, 2 tbsp teriyaki sauce and 3 tbsp of water to a clean non-stick pan. Heat on a medium flame and add the bok choi. Cover with a lid and heat for about 1 - 2 minutes until the bok choi softens slightly but retains a crunch.

Steam the broccoli for 2 - 3 minutes until al dente. Option to sauté with the bok choi if you prefer.

Add the chicken back to the pan and toss altogether until warm.

Warm through the konjak noodles, either in the sauce with the chicken mix or in a separate pan in a touch of water, rinse and drain.

Serve the teriyaki chicken with konjak noodles and top with spring onions and optional chilli, coriander and sesame seeds.

This Teriyaki Chicken recipe with a delicious sticky sauce makes a brilliant, quick, healthy, midweek meal. No need to marinade, just&nbsp;stir fry and serve.

Chicken Teriyaki with Easy Sticky Sauce

Chicken

tbsp Oil (Sesame, vegetable or sunflower)

Cloves Garlic (Peeled and crushed)

tsp Ginger puree

tsp Cornflour

tbsp Soy sauce

tbsp Honey

tbsp White wine vinegar

.5 tsp Dried chilli flakes (Optional)

Sesame seeds

Mix the Teriyaki sauce ingredients in a small bowl. Begin with the cornflour and gradually add the soy sauce, whisking so there are no lumps. Add the rest of the sauce ingredients.

Heat the oil in a frying pan until very hot.

Add the chicken and cook for about 15 minutes until well browned.

Add the garlic and ginger and cook for 3 or 4 more minutes until softened.

Add the teriyaki sauce ingredients and cook for about 5 minutes until everything is well coated and thickened.

Whilst the chicken is cooking, I cook some rice in the bottom of a steamer pan and then add some green vegetables to the steamer part on top for the last 5 minutes. (You can mix the cooked broccoli into the sauce and chicken just before serving if you'd like it coated in sauce.)
