Roasted Sweet Potato and Cauliflower Rice Collard Wraps

potato

Thai Cauliflower Rice (or cauliflower rice of choice)

avocado

collard leaves

almond butter

maple syrup

coconut milk

lime juice

ginger

sea salt

In a small bowl, whisk together the ingredients for the Ginger Almond Butter Sauce until well combined, thick, and creamy. Set aside until ready to use.

Prepare your collard leaves by chopping off the rough stem and shaving it down so that it's flush with the leaf.

Add desired amount of mashed sweet potato to the center of each leaf, followed by about 1/3 to 1/2 cup cauliflower rice and desired amount of sliced avocado.

Fold in the edges of the collard leaf, creating a burrito. Carefully slice in half using a sharp knife and serve with ginger almond butter sauce (Note: you can also add the almond butter sauce to the inside of the wrap).

These crunchy southwestern chicken wraps are a fun and healthy 15-minute lunch. They&#x27;re packed with veggies, protein, sauce, and Fritos!

Crunchy Southwestern Chicken Wrap

sour cream

salsa

taco seasoning

tortillas (wrap size)

lettuce

tomato (diced)

avocado (diced)

cheddar cheese (shredded)

chicken (shredded)

Fritos (crushed)

In a bowl, mix together sour cream, salsa, and taco seasoning until well blended.

Lay a tortilla flat on a cutting board. Spread 1 heaping tablespoon of sauce over the bottom half of the tortilla, leaving a 1-inch border on each side.

Sprinkle ⅓ cup of lettuce, 2 tablespoons of tomato, ¼ of the avocado, 2 tablespoons of cheese, and ½ cup of chicken over the sauce. Crush ¼ cup of Fritos over the chicken. Drizzle 1 tablespoon of sauce over the top.

Fold in the sides and roll tightly. Repeat with the remaining wraps. Cut in half to serve.

I like my wraps spicy. This was a good wrap but will make my sauce hot next time

Entire family approves so when that happens you know it’s a winner.

I will say there’s a lot of sauce. I feel like the recipe makes too much but other than that, 10/10!
