Melt the butter in the pressure cooker pot...

Melt the butter in the pressure cooker pot on the Sauté setting. Add the onions, celery, and carrots and cook until softened. Add the garlic, stir briefly then add the roasted squash, chicken broth, tomatoes and juice, Italian seasoning, red pepper flakes, pepper, and nutmeg.

Select High Pressure and a 10 minute cook...

Select High Pressure and a 10 minute cook time. When the cook time ends, turn off the pressure cooker. Let the pressure release naturally for 10 minutes, then finish with a quick pressure release.

Return the soup to the pot if necessary...

This satisfying, cozy sausage and bean soup is packed with nutrition, heat and fantastic flavors. A perfect meal in a bowl with some hot crusty bread.

14.5-ounce (429 ml) can diced tomatoes

(50 g) orzo pasta, Note 3

CHOP VEGETABLES:  Dice onions, carrots and celery into small pieces.  Shortcut: alternatively, cut vegetables into large chunks and pulse them in a food processor a few times until coarsely chopped.

SAUTE SAUSAGE: Heat oil in pot at medium high. Add sausage meat, using a spoon to break it up in the pot. Saute for about 3-4 minutes until browned. Drain off most of grease, leaving about 2 teaspoons in the pot.

SAUTE VEGETABLES:  Add onions, carrots and celery to the pot. Saute for 3-4 minutes until onions are translucent. Add garlic and spices. Saute another minute.

ADD LIQUIDS, BEANS AND ORZO:  Add diced tomatoes, chicken broth, beans and orzo.  Stir.  Bring to boil, then lower heat and simmer on medium-low for about 20 minutes until vegetables and pasta are tender.

FINISH AND SERVE:  Add fresh baby spinach and stir one minute until wilted. Taste and adjust seasonings. Serve in bowls sprinkled with Parmesan cheese if desired.

So tasty! I left out the flour and cream. It was so flavorful - healthy comfort food! Will make again!

This took very little effort to put together and turned out fantastic. I added a little extra everything without needing to add more broth.

Overall it was an excellent soup.  We will be making it again. However, next we will add a full pound of chorizo.  Everything else was perfect.

How have I not made this soup before?  Fabulous soup.  The broth is full of flavorful deliciousness!  I did use ground Chorizo which I think I would have preferred anyway in this soup.  Did not add the cream because it was so delish without it!  That can be for another time!  Thank you Anna for this keeper.

I just made this soup for dinner today. I followed the recipe and added a bit of Worschester sauce, blue cheese and chili flakes for flavor, and oh my, this soup is delicious! It's spicy, tangy and creamy and very addictive 😋  the potatoes and chorizo bites go very well together! I would definitely recommend! 
It took me around 1 hour to make it including the prepping.
