This French Potato Salad is loaded up with fresh herbs - tarragon, parsley, and chives and dressed in the most flavorful Dijon Vinaigrette. It's vegan, with no mayo, and quick and easy to make. Healthy and light!

French Potato Salad 

sea salt

garlic cloves

dijon mustard

champagne vinegar vinegar

olive oil

black pepper

flat-leaf parsley, roughly chopped

tarragon, roughly chopped (or sub 1/4 cup dill or basil ribbons)

chives

Boil the Potatoes

Place the sliced potatoes in a large saucepan cover completely with cold water.  Sprinkle in salt and bring to a boil.  Add the 2 cloves of garlic, reduce heat and simmer 5 minutes or until potatoes are just tender.

Make the Vinaigrette

While potatoes are simmering, make the vinaigrette by whisking together dijon, oil, vinegar and pepper in a small bowl. Set aside.

Assemble

Drain potatoes and garlic.  Place potatoes mostly single layer on a baking sheet to cool.  Mince the cooked garlic and add to the vinaigrette.  Drizzle the vinaigrette evenly over the warm potatoes.  Let sit at room temperature for about 10-15 minutes. 

Serve

Add to a serving bowl gently tossing with the chopped fresh herbs. Serve at room temp or refrigerate and chill.

I love this recipe. For the carnivores among us, I added grilled prosciutto with the dressing. It is a almost a complete meal and will become a “go To” one in this home

I made this French Potato Salad yesterday. In fact I made a double recipe and there was nothing left by the afternoon!  What does that tell you?!?  It was soooo good!  I will be doing it again in a couple of days!

This was amazing! We had it warm and cold loved it both ways! I used apple cider vinegar (I didn't have the vinegar's listed in the recipe) and a touch of honey. It was wonderful!

We loved it! Used dried tarragon, but fresh parsley and chives from our garden.

Great recipe! Easy to make. I used different colored potatoes and fresh herbs and it was beautiful. I served this with the baked cod with lemon, thyme, and asparagus from your site and it paired really well with that main dish.

A light, flavorful mayo-free potato salad, dressed with dijon vinaigrette, scallions and fresh herbs.

French Potato Salad

russet potatoes (3 large potatoes)

potato-cooking water

dry white wine (Dry Vermouth works well too)

extra virgin olive oil

white wine vinegar

Dijon mustard

scallions

parsley leaves

Kosher salt

Fresh ground white or black pepper

Fill a large pot halfway with cold water. Add 1 tablespoon of salt. Peel one potato. Slice it crosswise into ¼ inch thick slices, dropping slices into the water as you go, to prevent discoloration. Repeat with the rest of the potatoes.

Bring the potatoes to a boil over high heat, reduce to low and cook the potatoes until they are just tender, 3-5 minutes, checking every minute or so. They should be tender enough to easily pierce with a fork but not too soft that they fall apart easily.

Before you drain the potatoes, scoop out about 1/2 cup of potato cooking water and set it aside.

Drain potatoes and transfer them to a large bowl. While they&#8217;re hot, add the wine and 2 tablespoons of the cooking water. Toss them gently with a rubber spatula. Let them cool for 10 minutes, tossing occasionally, allowing liquids to absorb.

In a small bowl, combine vinegar, mustard, scallions, parsley, ½ teaspoon salt and ½ teaspoon pepper. Slowly whisk in the oil. Pour the dressing over the potatoes and toss gently to combine. Serve the potato salad warm or at room temperature or cover it and chill it until ready to serve. It&#8217;s delicious at any temperature.

Can be made up to two days ahead, kept covered in the fridge.

Made this tonight with roasted yellow squash and onions and a side cucumber, tomato salad.  Perfect! So easy, so delicious! Right down my alley!  I substituted fresh squeezed orange juice for olive oil which I’m sure the olive oil would be great too. And I didn’t peel the potatoes. Loved it. First of all, you need to take a large pot.

Salted water must be poured into the pot and it should be brought to a boil.

The potatoes have to be added and they should be cooked for 15 minutes.

When the cooking process is over, the potatoes must be drained and cooled so that they can be handled with ease.

Then, the potatoes should be cut into thirds and they have to be put onto a plate.

When they are moderately warm, white wine has to be added and tossed in a gentle manner. (You have to make sure that the wine is soaked up by the potatoes)

In the meantime, pepper, salt, mustard, oil and vinegar must be mixed in a jar and shaken well to combine the ingredients properly.

The dressing has to be poured over the potatoes and, scallions and herbs must also be added and tossed as well.

If there is a need, you have to add more pepper and salt.
