Bacon, lettuce and tomato, only made more delicious by the addition of a homemade aioli and caramelised onions.

BLT with herby aioli and caramelised onion recipe

(60 milliliters) extra virgin olive oil

onions,

tsp brown or white sugar

vinegar

tomato paste

bacon rashers

(150 grams) mayonnaise

garlic clove, crushed

Dijon mustard

herbs

English muffins, halved, toasted

butter lettuce leaves

tomatoes, sliced

Spicy Aioli Recipe

store-bought mayonnaise*

dill pickle juice

cayenne pepper,

garlic clove, finely grated

Kosher salt

Add mayo, dill pickle juice, cayenne pepper and garlic to a medium bowl, whisking to combine.  Season to taste with salt and more cayenne pepper.

Cayenne pepper can vary greatly in heat (depending on how fresh it is), so start with just a 1/2 teaspoon.  Add 1/4 teaspoon at a time until the aioli is very spicy, but bearable.  I ended up using a total of 1 teaspoon for this batch.  Store aioli in fridge for up to 2 weeks.

Homemade Aioli couldn&#039;t be more simple to make and this roasted garlic version is no exception. Prepare to never get store bought aioli again!

Roasted Garlic Aioli

Garlic

/ 250 milliliters Oil ((see notes))

Egg Yolk

Lemon, (or to taste)

Dijon Mustard ((optional))

Salt & Black Pepper, (to taste)

Slice the tip off bulb of garlic, exposing the cloves. Drizzle with a little oil, wrap foil and pop in the oven at 180C/350F for 45mins or until golden and completely soft throughout.

Squeeze out the garlic into a bowl with a good pinch of salt and mash with a fork.&nbsp;Allow to cool.

Add your egg yolk and a gentle squeeze of lemon juice. Whisk until smooth.

Grab a towel and fold into a circle (see video). Place your bowl on top - this will stabilise the bowl and allow you whisk/pour at the same time.&nbsp;

Drip by drip, begin pouring in your oil, ensuring you continually whisk. It&#039;s essential you start with tiny amounts to keep it from splitting. Ensure you whisk very vigorously throughout the whole process.

Very gradually increase to a gentle stream and keep whisking until your desired texture. Add mustard and check for seasoning. Store in the fridge or eat right away!

🍴 NOTES 🍴

a) Olive Oil - Traditionally aioli is made with olive oil, however I personally find it way too bitter. My preference is to use a neutral flavoured oil such as canola or rapeseed. If you are adamant you want to use olive oil, I'd recommend using a light extra virgin olive oil and have a neutral oil on hand to balance it out if needed. Oils I have personally used include Rapeseed, Canola and Sunflower Oil.

 

b) Consistency -  You most likely won't need the whole cup of oil so don't feel like you have to use it. Adding more oil will actually thicken the aioli. If you've gone past your desired thickness then thin out with lemon juice and/or a splash of water.

 

c) Roasting Garlic - Timing will depend on the age and size of garlic. You'll struggle to burn the garlic, especially at 180c/350f, but just be vigilant after 45mins. The longer you roast, the deeper golden it turns and arguably the more sweeter the garlic will be.

This is hands down the BEST California club sandwich you will ever make! Toasted bread is slathered with a creamy homemade tarragon aioli (this makes the sandwich!). Top with crispy bacon, fresh tomatoes, avocado, arugula, and thinly sliced turkey or chicken. Our favorite lunch sandwich!

California Club

garlic (finely chopped)

lemon juice

canola oil

extra virgin olive oil

Tbsp finely chopped tarragon

salt

tsp black pepper

whole wheat sandwich bread

bacon (crispy)

oz deli turkey or chicken (thinly sliced)

tomato (thinly sliced)

avocado

baby arugula (or other greens

black pepper

Make the aioli. Combine egg, chopped garlic, and fresh lemon juice in the bowl of a food processor fitted with blade attachment. Process until finely chopped, then with the motor running slowly stream in the canola oil. Continue to process for 30 seconds, or until well incorporated. Scrape down the sides then process once more. 

Finish the aioli. Transfer to a large mixing bowl, then stream in the extra virgin olive oil, whisking the entire time. The aioli will be smooth, thick, and pale yellow. Add finely chopped tarragon, Kosher salt, and black pepper. Stir to mix, then refrigerate until needed.

Toast bread. Once bread is toasted, either leave in toaster oven or place on a wire rack until all remaining ingredients are ready. This will help keep the bread crispy!

Assemble the California club sandwiches. Spread a thin layer of tarragon aioli on both sides of toasted bread. To the bottom piece, layer the following: 1 ½ strips crispy bacon, thinly sliced turkey, 2 slices tomato. On the top slice of bread, place a layer of thinly sliced avocado. Season both the tomato and avocado with a little Kosher salt and black pepper. Place a generous handful of arugula (or other greens) on top of tomato, then flip the bread with avocado on top. 

Secure with skewers. Place 4 toothpicks or skewers into the sandwich in the shape of a compass (N, S, E, W). It&#039;s okay that they&#039;re not going all the way through the bread yet.

Slice the sandwich. Use a sharp knife to cut the sandwich in an X shape, creating 4 triangular pieces. Pick each piece up and press the toothpick or skewer through the rest of the way. Serve immediately!

How To Make Aioli

Blend the ingredients. Combine 1 egg, a chopped garlic clove, 4 tsp fresh lemon juice, and ½ cup canola oil in the cup of a Zwilling Enfinigy Personal Blender. Seal tightly with lid, then secure onto the base of the blender. Process until smooth and thick. Note: you can let the blender run independently, it will shut off when done!

Stream in olive oil. Transfer the mixture to a large mixing bowl, then very slowly stream in ½ cup extra virgin olive oil while continuously whisking. If you add the oil in too quickly, it will not emulsify. Do this slowly, a few drops at a time or a slow, steady stream of olive oil, and once it&#39;s all incorporated, you&#39;ll be rewarded with thick, creamy aioli. Season with ½ tsp Kosher salt and ¼ tsp black pepper. Stir well, then serve immediately or refrigerate.

Whisk the egg yolks and Dijon mustard in a large bowl until smooth.

Add the minced garlic and lemon juice, then whisk again until very well blended.

Run the hand towel under water until it's wet. Then ring out the excess, roll it into a loose log, and place it on the counter in a ring.

Put the bowl into the center of the towel ring - to keep it in place while whisking.

Next, very slowly pour the oil into the bowl, whisking constantly and rapidly.

Keep whisking until all of the oil is fully incorporated, and the mixture is emulsified.

Let the mayo rest for a minute, then gently stir in the lemon zest and Kosher salt.

Store in the fridge.
