Banana Fritters. These are a lovely crispy treat, serve warm as they are or with some syrup drizzled over or a blob of ice cream! A great way to use up spare or leftover bananas too! Really quick and easy to make dessert.

Add the water and oil and combine with a hand whisk. The consistency should be thick, like heavy cream and be able to coat a spoon. If it is too thick, add a drop more water, too thin, add a little more flour. Set aside.

Heat a pan with vegetable oil until it reaches 180 C or 350 F. Make sure you do not over fill the pan with oil. I use a small saucepan and cook in batches, filling the pan 1/3rd deep with cooking oil.

Whilst the oil is heating up. peel the banana, cut in half and then slice length ways in half so you have 4 pieces. Dip each piece in the batter so it is fully coated and carefully place in the pan, cooking both sides until golden brown. ** To tell if the oil is hot enough, drop a tiny bit of batter, the size of a pea in to the oil. If it sizzles and floats to the top immediately, the oil is hot enough.

A simple and quick recipe for delectable fried fritters filled with fresh bananas and cinnamon with a pinch of cloves, nutmeg, and allspice. Serve these perfectly fried fritters dusted with powdered sugar alongside warmed honey or maple sugar.

Banana Fritter Recipe

large mashed overripe bananas

2% milk

vanilla extract

all purpose flour

brown sugar

cinnamon

allspice

cloves

nutmeg

sugar (optional)

cinnamon sugar (optional)

In a large bowl, mash peeled bananas.  Stir in milk and vanilla.

Whisk together flour, brown sugar, baking powder, salt, cinnamon, allspice, cloves, and nutmeg in a medium bowl.  Add the dry ingredients to the wet ingredients and stir just until incorporated.

Heat 1 inch vegetable oil in heavy stockpot, Dutch oven or cast iron skillet to 350-375 degrees. Drop rounded tablespoons of batter into the fryer. Cook until golden brown on the bottom; flip and cook the other side until golden brown.  Work in small batches, making sure to cook all the way through. Place fritters on paper towels to drain.  Dust with powdered sugar or roll in cinnamon sugar and serve warm.

I would totally make these and dust them with some powdered sugar. The look of them remind me a lot of zeppoles which are an Italian puffed dough treat. I bet they are delicious.

I had only had apple fritters and had never tried banana until I made this recipe!  They are so good and amazing when dipped in maple syrup!
