Copycat Chocolate Sea Salt Rx Bars

c pitted medjool dates

c almonds

vanilla protein*

tbsp cacao powder

tsp sea salt

water

tbsp cacao nibs or mini chocolate chips

Add almonds to a high speed food processor and pulse into tiny pieces. Add all other ingredients and blend until smooth. Add water by the tbsp as needed until a doughy texture is formed

Transfer batter to a lined loaf pan and press firmly into an even layer

Place in fridge for 1 hour to set and slice into bars!

Homemade Granola

rolled oats (regular, not instant)

almonds (or any combination of nuts)

sunflower seeds (raw)

pumpkin seeds

sesame seeds (raw)

tbsp flaxseed (ground)

cinnamon (ground)

nutmeg (ground)

tsp salt

olive oil

tbsp applesauce (unsweetened)

almond butter

brown sugar

tbsp honey

Preheat oven to 300F. In a medium saucepan, mix the wet ingredients and simmer on low for 5-10 minutes, stirring frequently until mixed.

In a very large mixing bowl, mix together the dry ingredients.

Add the wet mixture (while still warm) over top the dry mixture and stir well (it will be very thick). Mix until everything is thoroughly combined.

Spread onto a pan lined with parchment paper and bake in the oven for 45 minutes, stirring every 15 minutes to ensure even baking.

Allow to cool for 20-25 minutes before serving. The granola will stiffen up as it cools.
