homemade breakfast pizza

This easy, homemade breakfast pizza is made with bacon, eggs, tomatoes, spinach and cheese, made completely from scratch and ready in less than 30 minutes start to finish!

Breakfast Pizza Recipe

5 oz all purpose or white whole wheat flour*

baking powder

salt

non-fat Greek yogurt (not regular, drained if theres any liquid)

spinach

mozzarella cheese

cherry tomatoes (sliced)

eggs

bacon (chopped)

Preheat the oven to 450F. Place a silicone liner on a large baking sheet or spray with oil if using parchment.

In a medium bowl combine the flour, baking powder and salt and whisk well.

Add the yogurt and mix with a fork or spatula until well combined, it will look like small crumbles.

Lightly dust flour on a work surface and remove dough from the bowl, knead the dough a few times until dough is tacky, but not sticky, about 20 turns (it should not leave dough on your hand when you pull away).

Divide into 4 equal balls about 3-3/8 oz each.

Sprinkle a work surface and rolling pin with a little flour roll the dough out into thin ovals 7 to 8 inches in diameter and place on the prepared baking sheet.

Top with spinach, mozzarella and tomatoes, leaving the center open for the egg. Gently break an egg the center of each dough and finish with bacon.

Bake 10 to 12 minutes, until the crust is golden and the egg is set. Season with salt and pepper.

This fun and tasty Breakfast Pizza combines crispy bacon, sausage, sweet peppers and onions on a fresh baked pizza crust all topped with oodles of melted provolone and Pepper Jack Cheese.

butter

provolone

Pepper Jack Cheese

bacon cooked crispy coarsely chopped

lb bulk pork sausage

red pepper

scallions chopped

Preheat oven to 425 degrees. Oil a 10&#215;15 inch rimmed baking sheet.

Work your pizza dough around the baking sheet by pressing gently with your fingers and hands.   It may take a little time to work the pizza dough out as it has a tendency to pull back from the sides.  Once it seems to be staying put use your hands to tuck and push a little of the dough up against the side of the baking sheet creating a crust.  Bake in the oven for 7-8 minutes.

Meanwhile beat the eggs and water together.  Melt butter in a large nonstick skillet over low heat.  Add eggs and cook slowly rotating them gently with a spatula. Be sure to slightly undercook the eggs as they are cooked again in the oven.  Spoon the eggs on to the pizza dough.

Top the eggs with both cheeses, cooked bacon, browned sausage, red pepper and scallions.

Place back in the oven for 10-12 minutes; turning on the broiler the last 1-2 minutes. Rotate the baking sheet several times during the broiling process and stay close by as I have always found broilers somewhat unpredictable.
