lemon juice (1/2 lemon)

mayonnaise

Greek yogurt

olive oil

anchovy paste (optional but recommended)

Dijon mustard

salt

black pepper

Grate the garlic, or finely mince it. Grate the Parmesan cheese as finely as possible (it’s helpful to use a microplane or the fine holes on a grater). Juice the lemon.

Whisk together all the ingredients in a bowl. Store refrigerated (keeps at least 1 week).

Homemade rich and creamy Caesar dressing. It's perfectly balanced, not overly fishy, or garlicky, and once you make it you'll never buy store-bought Caesar dressing ever again!

Homemade Caesar Dressing

anchovy (minced then mashed)

garlic (mashed)

lemon juice

dijon mustard

parmesan cheese (grated)

If using anchovy paste, then whisk everything in a bowl until well combined. If using anchovy fillets, then place all of the ingredients in a food processor.

Blend until you get a creamy and smooth Caesar dressing.

Start to finish, recipe took about ten minutes to make. This is a terrific Cesar dressing. I'm 75 and I will never buy another bottled Cesar dressing.

       Love it

Great recipe, very tasty with the right ingredients. Made it a few times.

This is my favorite Caesar Salad dressing recipe.
It is rich and full of flavors. I love the thick creamy texture with freshly grated Parmesan Reggiano and the garlicky, lemony tang that comes through.
I find I don’t need to add any salt because the anchovies provide enough salt.
I have yet to eat a Caesar salad in any restaurant that even comes close to this recipe.

I have loved Caesar salad all my life and made my own dressing for years too BUT THIS is absolutely my all-time favorite creamy tasty
Caesar Salad Drsg hands down! It kept in my fridge for 2 weeks with no problem & tasted better each time I used it.

I make Caesar Salad a lot and I enjoyed this recipe with mayo. I added more lemon simply because I put lemon on everything . I like that it is a flexible recipe and really flavorful.

Classic Caesar Salad is a timeless favorite combining crisp romaine lettuce with a rich, creamy dressing made from garlic, anchovies, Dijon mustard, lemon juice, Worcestershire sauce, and raw egg yolk. Tossed with freshly grated Parmigiano Reggiano cheese and homemade croutons, this salad delivers a perfect balance of savory flavors and textures, ideal for a quick and elegant lunch or appetizer.

Classic Caesar Salad (Tableside Recipe) Recipe

romaine hearts (dark outer leaves removed)

croutons

Parmigiano Reggiano cheese,

black pepper (for garnish)

garlic,

anchovy (more

Kosher salt (to taste)

black pepper (to taste)

Worcestershire sauce

olive oil oil

Prepare the lettuce

Wash and dry the romaine lettuce thoroughly. Tear larger leaves into halves or thirds by hand, leaving smaller leaves whole, then chill until ready to assemble the salad.

Make the garlic-anchovy paste

In a large wooden salad bowl or mixing bowl, combine the minced garlic, anchovy fillets, a pinch of kosher salt, and freshly ground black pepper. Use the back of a spoon or fork to mash them into a rough paste, ensuring the anchovies break down fully.

Mix the dressing base

Add Dijon mustard, fresh lemon juice, Worcestershire sauce, and the raw egg yolk to the mashed garlic-anchovy paste. Whisk together vigorously until the mixture is smooth and well combined.

Emulsify the dressing

Slowly drizzle the oil into the bowl while continuously whisking to create a thick, creamy dressing that coats the ingredients evenly.

Adjust seasonings

Taste the dressing and adjust the lemon juice, salt, pepper, mustard, or Worcestershire sauce to your preference for balanced flavor.

Toss the salad

Add the chilled lettuce to the bowl and toss thoroughly to coat every leaf evenly with the dressing.

Add cheese and croutons

Sprinkle in half of the freshly grated Parmigiano Reggiano cheese and half of the croutons, then gently toss again to incorporate them evenly.

Garnish and serve

Top the salad with the remaining grated Parmesan and a fresh crack of black pepper. Serve the Caesar salad immediately for best texture and flavor.

Chicken Caesar Sandwiches combine crispy, well-seasoned chicken cutlets with creamy Caesar dressing, fresh romaine lettuce, and Parmesan cheese, all layered on soft bread toasted with garlic butter. This flavorful sandwich is perfect for a hearty lunch or dinner and can be prepared in under 30 minutes.

Chicken Caesar Sandwiches Recipe

chicken breasts

egg milk

garlic powder

pepper

breadcrumbs

Vegetable oil

salted butter, slightly melted

parsley

Parmesan cheese

sour cream

anchovy paste

garlic, grated

Salt and pepper

hoagies or baguette rolls

Prepare the Chicken Cutlets

Slice the chicken breasts horizontally into 4-6 thin cutlets. In a small bowl, whisk together the egg, milk, garlic powder, salt, and pepper. Place the breadcrumbs and panko in another bowl. Dip each chicken cutlet into the egg mixture, then coat with the breadcrumbs mixture. In a shallow pan, heat 1-inch of vegetable oil over medium-high heat. Fry the cutlets until golden brown and crispy, approximately 5 minutes per side. Remove and set on a paper towel-lined plate to drain excess oil.

Make the Garlic Butter

In a small bowl, combine the slightly melted butter, mayonnaise, minced garlic, chopped parsley, and grated Parmesan cheese. Mix well.

Toast the Bread

Slice the hoagie or baguette rolls lengthwise. Spread the garlic butter generously on the cut sides of the bread. Place the bread halves in a 450ºF oven or under the broiler for 3-4 minutes, until toasted and fragrant. Keep an eye on them to prevent burning.

Prepare the Caesar Dressing

Whisk together the mayonnaise, sour cream or Greek yogurt, Parmesan cheese, lemon juice, Dijon mustard, anchovy paste, Worcestershire sauce, grated garlic, salt, and pepper in a bowl or mason jar until smooth and well combined.

Toss the Romaine

In a large salad bowl, toss the chopped romaine lettuce with 3-4 tablespoons of the Caesar dressing until evenly coated.

Assemble the Sandwiches

Layer the crispy chicken cutlets on the toasted bread, then add the dressed romaine lettuce. Top with extra grated Parmesan cheese if desired. Close the sandwich and serve immediately for best flavor and texture.

Meet your new favorite summer pasta salad! This incredible Pesto Chicken Caesar Pasta Salad features pesto-grilled chicken, crisp romaine, toasty Panko, and al dente pasta tossed in a pesto-infused Caesar dressing

Pesto Chicken Caesar Pasta Salad

DeLallo shellbows pasta ((or short-cut pasta shape of choice))

chicken

Kosher salt and black pepper

Tbsp. extra-virgin olive oil, divided

Tbsp. DeLallo Pesto

panko breadcrumbs

romaine lettuce ((from 2 romaine hearts))

Parmigiano-Reggiano cheese

basil leaves

plain full-fat Greek yogurt

Tbsp. extra-virgin olive oil

Tbsp. DeLallo pesto

anchovy fillets, minced

garlic cloves,

tsp. black pepper

Bring a large pot of generously salted water to a boil. Add pasta and cook until al dente. Drain, rinse under cold water, and set aside.

Meanwhile, place chicken in a large bowl and pat dry with a paper towel. Lightly season chicken all over with kosher salt and black pepper. Add 2 Tbsp. extra-virgin olive oil and 3 Tbsp. pesto; toss to coat.

Heat remaining 1 Tbsp. olive oil in a large skillet over medium heat. Add panko and cook for 3 to 4 minutes, stirring continuously, until the panko is nicely browned and toasted. Transfer to a bowl.To the same pan (no need to wipe clean), arrange chicken breasts and cook, undisturbed, for 4 to 5 minutes, until nicely seared. Turn, and cook another 2 to 3 minutes, or until the juices run clear and chicken is cooked through. Transfer to a plate or cutting board.

Prepare Pesto Caesar Dressing by combining all dressing ingredients in a medium mixing bowl. Whisk well to combine. Taste and season with a pinch of salt (or extra cracked black pepper), if needed.

To a large bowl, combine cooked pasta, romaine, most of toasted panko (I like to reserve 1 to 2 Tablespoons for garnish), Parmigiano-Reggiano cheese, and fresh basil.Cut chicken into small bite-sized pieces and add to the pasta salad, along with the Pesto Caesar Dressing. Toss well to combine. Garnish with reserved panko, extra grated cheese (optional), and extra fresh basil (also optional).

I wouldn't advise tossing chicken in pesto. The chicken gets burnt, as it happened to me and as we can see on the picture. Also, be careful with the salt because mayo and pesto is pretty salty.

Absolutely fantastic! So easy, so yummy! Followed recipe as written with the exception of anchovies. Added the capers as suggested. 5 stars!

This is so good! My husband said it is the best Caesar Salad he's had in a long time. I made a few modifications by skipping the pasta and I used Trader Joe's basil olive pesto, since I didn't have any anchovies on hand. The olives in the pesto were briny enough to compliment the dressing. Fantastic.

I've made this recipe twice and so good! This time I realized I didn't have anchovies on hand, so I substituted kalamata olives with no issue! Definitely recommend this recipe.

Another recipe from you that I love! After marinating the chicken overnight, I read Simply Pesto contains cashews, which my husband is very allergic to. More for me! I went ahead with the recipe and so thrilled I did. I didn't skip a step and each bite was delicious. I've never cooked with anchovies and I love them in this recipe. Do you have another pre-made Pesto suggestion that doesn't contain cashews? Thank you!

I happened to have all of the ingredients in the house to make this. DeLallo shellbows are my FAVORITE and a pantry staple! Such an easy recipe that really delivers on flavor!! Do not skip the panko breadcrumbs….they add such a lovely crunch and another layer of flavor. Another winner, Jamie! Thank you!!

A shrimp Caesar salad with roasted garlic-rosemary dressing, sourdough croutons, Parmesan crisps and caramelized grilled lemon.

Shrimp Caesar Salad

olive oil (divided, plus extra for drizzling the garlic)

rosemary

½ tbsp red wine vinegar

mustard

anchovy (from tin)

lemon

olive oil mayonnaise

tsp sea salt

tsp black pepper

sourdough baguette bread

rosemary oil (see above)

oz Parmesan (divided)

lemon (halved)

olive oil (for brushing)

romaine hearts (leaves separated)

lb shrimp

marinated white anchovies (for garnish)

Preheat the oven to 400°F. Slice the top third off of the garlic head to expose the cloves. Set on a sheet of aluminum foil and drizzle with a little of the olive oil. Wrap in the foil and roast for 30 to 40 minutes or until cloves are soft.

Meanwhile, heat the ¾ cup olive oil and the rosemary in a small saucepan set over medium heat. Bring to a simmer, then remove the pan from the heat and set aside for 20 minutes or until the rosemary is infused into the oil. Remove rosemary and discard.

Squeeze half the roasted garlic out of the papery skins into a blender or food processor. Add the vinegar, both mustards, anchovies, lemon zest and juice, and 1/2 cup of the rosemary oil (set aside the remaining 1/4 cup for the croutons). Stir in the olive oil mayo and season with the salt and pepper, adjusting to taste. Blend for about 1 minute until emulsified. (Dressing can be made ahead and refrigerated for up to 3 days. Leftover roasted garlic can be added to any tasty mash.)

Caesar Dressing

Preheat the oven to 375°F. In a bowl, brush the bread slices with rosemary oil until evenly coated. Season lightly with salt and pepper. Spread on a rimmed baking sheet and toast in the oven, stirring occasionally to promote even browning, for 15 minutes or until golden. Tear into pieces.

Croutons

Preheat the oven to 325°F. Line a baking sheet with parchment paper. Finely grate half the Parmesan. You should have about 1 cup. Spread it into a flat circle on the baking sheet. Bake in the oven for 12 minutes or until golden brown. Set aside to cool, and then peel off the paper and break the cheese crisp into pieces.

Heat a skillet over medium-high heat (or preheat the grill). Brush the cut sides of the lemons with olive oil. Place cut side down onto the pan (or grill), and sear for 2 to 4 minutes or until caramelized and golden.

In a large bowl, toss the romaine and half the croutons with enough dressing to coat. Squeeze the caramelized lemons over the bowl. Season with salt and pepper to taste and toss again.

Transfer the salad to a serving bowl or platter. Arrange the shrimp and crispy Parmesan pieces on top. Shave the remaining Parmesan with a vegetable peeler and sprinkle over the salad. Garnish with the remaining croutons and anchovies.
