Tonight was the first night in almost three weeks that my EXTREMELY picky ASD toddler actually ate dinner with us.

This chili was DELICIOUS! The whole family loved it. Ditching my old chili recipe for this one. The bell peppers and celery make all the difference.

This was really yummy. It tasted like cumin. It could have had more flavor. But it was a hit in my house. The kids ate it up. I added 3lbs of beef. Soooo delicious. I will make it again.

With its big smokey flavor, beef cubes and spice, Texas Chili proves it is worthy of having its Texas Chili name.

Texas Chili "Bowl of Red"

extra virgin olive oil

beef

onions, (diced)

chipotles in adobo, (minced, with sauce)

cumin powder

garlic, (minced)

jalapeno peppers, (minced)

chicken stock

masa harina, (Mexican cornflour)

water

lime juice, (freshly squeezed)

Preheat the oven to 325°F.

Season beef cubes with salt.

Heat vegetable oil in large heavy bottom dutch oven over medium heat.

Add beef in batches and cook until browned (3-4 minutes on each side).  Transfer cooked beef cubes to a bowl and repeat with remaining beef. Remove all beef from the dutch oven.

In the same dutch oven, add onions and stir occasionally, using your spatula to scrape up any brown bits from the bottom of the pan. Saute 5-10 minutes or until onions are soft.

Make a well in the center of the onions and add chipotle peppers.  Cook 1 minute and stir to combine.

Add jalapenos, garlic, chili powder, cumin, and oregano and stir to combine. Cook for 1 more minute.

Add the tomatoes, chicken stock, and cooked beef cubes, stir to combine.

Increase heat to high and bring the mixture to a boil.

Cover the chili and transfer it to the oven.

Bake for 3 hours.

Step 1 - Chili Base

In a small bowl whisk together masa flour, chili powder, and water.

Remove chili from the oven and pour the mixture into the chili.  Stir to combine.

Heat the chili over medium heat, stirring occasionally until the mixture thickens.

Add lime juice, salt, and pepper.

Step 2 - Thicken the Chili

My Best Chili Recipe is a thick ground beef and kidney bean chili with a perfect blend of spices, a touch of smokey heat and a little bit of brown sugar to mellow everything out.  Serve over hot dogs, crisp steak fries or just piled high with your favorite chili fixins.

(14.5 ounce) can diced tomatoes (do not drain)

(7 ounce) can diced green chiles drained

chipotle pepper

adobo sauce chipotle peppers

In a dutch oven or large stock pot brown the ground beef over medium heat.  About halfway through the browning process add the onion. Drain any excess grease.  Reduce heat to low and add garlic, chili powder, cumin, smoked paprika and onion powder.  Cook for 1 minute; stirring constantly.

Stir in the brown sugar, beef broth, diced tomatoes, kidney beans, green chiles, chopped chipotle pepper and adobo sauce.

Simmer for 45-60 minutes; stirring frequently.  Salt and pepper to taste.

Add the olive oil to a large soup pot over medium-high heat. Once hot, add the onion and cook for about 5 minutes, stirring occasionally.

Add the ground beef and sausage to the pot and cook, breaking apart into small pieces with a wooden spoon, until browned. Drain any grease.

Add the vinegar and cook for 1 minute. Add the diced tomatoes, tomato juice, ketchup, beans, brown sugar, chili powder, garlic salt, pepper, paprika, cumin and cayenne.

Bring to a boil over medium-high heat, stirring, then reduce the heat and simmer over medium-low heat for a at least one hour, or up to 3 hours, stirring occasionally.

Serve in bowls with a dollop or sour cream and a sprinkle of cheese on top.

Serve chili with: cornbread, biscuits, or a green salad.

Classic Homemade Chili

Savory, rich, and spicy my mouth-watering Chicken Chili is perfect for busy weeknights or game day get-togethers.

Three Bean Chicken Chili

In a large skillet (dutch oven or pot ) add the chopped onions, garlic, and olive oil.

Let the mixture cook for a few minutes until the onions are softened and aromatic.

Add brown sugar to the pot.  Mix until well blended and continue cooking for 2 minutes.*I use a little bourbon in my chili and if you’d like to add it this is the time to do it. When adding any alcohol make sure it doesn’t go near open flames. Remove the pan from the burner. After adding the bourbon, allow the alcohol to burn off for a minute before continuing.

Add ground chicken and begin the browning process. You may need to add additional olive oil.

Cook all the meat, continuously stirring to break up the meat. ( you may find a heavy wire whisk helpful in breaking up the chunks)

When the meat is cooked begin adding in your seasonings ( remember you can always add more after its cooked for awhile)

Add the tomatoes, chicken stock, and beans to the mixture, mixing well to combine all of the ingredients.

Reduce the heat to simmer and allow to simmer for 1 – 2 hours. Stir as needed so it won’t stick to the bottom of the pot.

*If the chili begins to get too thick you can add additional water to achieve the desired consistency.

Taste and re-season to your taste.

Serve with your favorite toppings and hot sauce.

Classic Homemade Chili Recipe

Prep. Chop the onion and bell pepper. Mince the garlic.

In a small bowl assemble the dry ingredients: American chili powder, cumin, oregano, cinnamon, mustard, ginger, salt, and pepper. In another bowl mix the wet ingredients: Water, Worcestershire, tomato paste, vinegar, and hot sauce.

Cook. Crumble the meat into a medium hot pan that is not non-stick. Stir it around and break it up with a wooden spoon until it is tan all over, about 15 minutes. Keep it simmering until all the water evaporates and the meat begins to fry. You&#039;ll hear it sizzle and it will start turning dark brown. Push the meat to one side of the pan. Add the onions and peppers to the bare metal side of the pan and fry them for about 5 minutes until the onions are limp. Add the garlic and fry it for 1 minute. Mix everything together.

Push everything to one side and add the olive oil on top of the bare metal and then pour the spices on the oil to allow their oil-soluble flavors to bloom in the oil for about 1 minute. Mix the spices in with everything else.

Add the wet ingredients and mix. Let everything simmer on medium low with the lid off for up to an hour. If it dries out, add more water. Cook it down to the whatever thickness you like. I like mine on the crumbly side, not the drippy side as they do in Detroit and Cinci.

Serve. Serve the chili in a bowl with any variety of toppings including diced onion, grated cheddar cheese, jalapeno slices, and sour cream. Or use on hot dogs, burgers, baked potatoes, and so much more.

Heat the oil over medium-high heat. Add the onions, peppers, carrots, and garlic. Sauté for 5 minutes.

Next add the chopped steak and sausage and cook until brown, 8-10 minutes, breaking up all the meat clumps.

Add the masa, chile powder, cumin and oregano. Cook another 3 minutes, stirring regularly. Add the salt, sugar, tomatoes, beans, and beer. Scrape the bottom to deglaze.

Reduce the heat and cook at least another 30 minutes, partially covered, until flavors are well combined and the chili has thickened. Stir occasionally.

Add a couple dashes of cayenne pepper for extra heat. Serve with favorite toppings along with tortilla chips or cornbread!
