Chili Hot Dog Tater Tot Casserole

(15 oz) cans chili (or try my homemade chili recipe below)

medium yellow onion, diced

cheddar cheese, shredded

(32 ounces) bag frozen tater tots

green onions,

TBS white granulated sugar

Worcestershire sauce

In large skillet over medium high heat, bring 2 TBS cooking oil to a sizzle. Add in onion &amp; celery. Cook for 3-4 minutes until lightly browned &amp; softened. Add in garlic and stir for 30 seconds. Add in ground beef. Break it up and brown. Smash the ground beef while cooking to thin out. Drain excess grease after browned.Stir in sugar, mustard, chili powder, cumin, Worcestershire sauce, salt, pepper, tomato paste, diced tomatoes, and water. Simmer for 20 minutes on low heat. Cool to thicken.

To make homemade hot dog chili (if not using canned chili from store)

Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray. Pour cans of chili (or homemade version of chili into bottom of prepared baking dish.

Place cut up hot dogs on top of chili &amp; stir to coat. Spread evenly.

Top with diced onion. Sprinkle with 4 oz of shredded cheddar cheese.

Top with frozen tater tots in 1 layer.

Bake for 30 minutes. Sprinkle with remainder cheese on top and bake another 10-15 minutes until tots are crispy on top and casserole heated through. Let sit 10 minutes before serving. Garnish with green onions, if desired.

Easy 30-Minute Beef Taco Chili

To a large Dutch oven, optionally add the oil, beef, onion, and cook over medium-high heat until beef is cooked through and onions are translucent, about 7 to 8 minutes; crumble beef as it cooks and stir intermittently to ensure even cooking.

Add the garlic and cook for about 1 minute, or until fragrant; stir nearly constantly.

Add the taco seasoning, cumin, chili powder, pepper, and stir to incorporate.

Add the the tomatoes, black beans, kidney beans, green chiles, corn, broth (if you prefer thicker chili start with 2/3 to 3/4 of the container), salt to taste, bay leaves, optional cayenne, and stir to combine.

Bring to boil and allow chili to gently boil for about 5 to 10 minutes or until chili has reduced and thickened some.

Add the cilantro and stir to combine.

Stir, taste, optionally add sugar to taste (sugar balances the acid from the tomatoes), optional lemon/lime juice (brightens up the flavor), and additional salt, pepper, etc. if desired.

Remove bay leaves, ladle into bowls, and optionally garnish with cheese, sour cream, avocado, etc.
