Cosmic Brownies

Cup Unsalted Butter ((1 1/2 Sticks) ,Melted)

Eggs

Cup Granulated Sugar

Cup Light Brown Sugar (Tightly Packed)

Tablespoons Milk

Teaspoons Vanilla Extract

Un-Sweetened Natural Cocoa Powder

All-Purpose Flour

Cups Semi Sweet Chocolate Chips

Cup Heavy Cream

Cup M&M Minis

Preheat oven to 350 degrees F. Line a 9x9 inch pan with foil. Spray with non stick spray.

In a large bowl, melt butter in the microwave for 1-2 minutes.

Whisk in sugars, eggs, milk, and vanilla. Then whisk in cocoa powder until smooth.

Add flour gradually, until combined.

Spread batter in prepared pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely.

For the Brownies

Heat heavy cream in a medium sauce pan. Add chocolate chips. Stir occasionally until smooth.

Pour ganache over brownies. Smooth with an offset spatula.

Sprinkle with M&amp;Ms. Refrigerate until the ganache has set.

For the Ganache

No-Bake Vegan Cosmic Brownies

medjool dates, tightly packed*

almond flour

walnuts

cocoa powder (or cacao powder)

tsp vanilla extract

tsp salt

chocolate chips

coconut cream

maple syrup

rainbow candy coated chips

Line a 9&#215;9 square dish with parchment paper, leaving some paper hanging over the edges. This will prevent the brownies from sticking to the pan and let you easily remove them later.

In a food processor, add the almond flour, walnuts, cocoa power, vanilla extract, and salt. Blend until the walnuts are crumbled into a flour-like consistency. Add the pitted medjool dates. Blend again, until a sticky dough forms. Transfer brownie dough to the square dish. Firmly press it across the bottom of the dish in an even layer.

In a bowl, add chocolate chips, maple syrup, and vanilla extract. Set aside. Open the can of coconut cream. Scoop all of the contents into another bowl (both the thick cream and the clear liquid underneath). Microwave for 1 minute 45 seconds, then whisk together to combine. Pour 2/3 cup over the bowl of chocolate chips, maple syrup, and vanilla extract. Sit for 1-2 minutes, then whisk together until smooth. If the chocolate chips are not fully melted, microwave for 15-30 seconds and whisk together again.

Pour chocolate ganache over the brownie layer. Spread evenly across the surface of the brownies. Tap the dish against the countertop if you need help smoothing it out. Sprinkle the rainbow candy coated chips on top.

Chill cosmic brownies inside the refrigerator for 4 hours (or until the chocolate ganache sets).

Gently lift the parchment paper out of the dish to remove the brownies. Slice into 16 squares. Enjoy!

unsalted butter (melted and cooled slightly)

Preheat the oven to 350F. Line an 8 by 8-inch baking pan with 2 pieces of parchment paper so it hangs over all 4 sides for easy removal.

Whisk together the flour, cocoa powder, and salt in a medium bowl.

Use a handheld electric mixer to beat together the granulated sugar, brown sugar, oil, butter, and vanilla in a large bowl until it thickens slightly, and looks like fluffy wet sand. Add the eggs and egg yolk, and beat until the mixture is thick, fluffy, and turns paler (about 6 to 8 minutes using a handheld electric mixer).

Add the dry ingredients and beat just to combine, being careful not to over-mix.

Pour the batter into the prepared pan, and spread it out evenly.

Bake until the brownies are set along the outside and the top starts to crackle, about 20 to 25 minutes, being careful not to over-bake. Cool completely.

To Make the Brownies

Once the brownies are cooled, make the ganache. Add the chocolate chips and cream to a large bowl, microwave for 45 seconds, let it sit for 30 seconds, and then gently stir. Microwave in additional 10-second intervals until the chocolate is fully melted, stirring gently between each interval. Alternatively, you can use a double boiler instead of the microwave.

Making the Ganache

Once the brownies are fully cooled, spread the ganache on top, and then add the rainbow chip sprinkles.

Let the ganache set before cutting and serving.

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a 9x13-inch baking dish with foil and lightly spray with baking spray; set aside.

In the bowl of a stand mixer, beat melted butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy, about 2 minutes. Add the eggs one at a time, mixing until fully incorporated after each addition.

In a medium-sized mixing bowl, whisk together all-purpose flour, natural unsweetened cocoa powder, baking powder, cornstarch, and a pinch of salt. With the mixer on low speed, alternate adding the dry ingredients and whole milk to the butter mixture, mixing just until combined.

Remove the bowl from the stand and pour the brownie batter into the prepared pan. The batter will be thick, so use a rubber spatula to spread it into an even layer. Place the pan in the oven and bake for 18–25 minutes. Be cautious not to overbake to prevent dry brownies. Remove from the oven and allow them to cool in the pan.

While the brownies are cooling, prepare the ganache. In a 2-cup glass measuring cup, combine semi-sweet chocolate chips, milk chocolate chips, and heavy cream. Microwave on half power for one minute, stir, then repeat. Stir the mixture until all the chocolate chips are melted and the ganache is smooth. Beat for 1 minute, then pour it over the cooled brownies. Spread evenly and sprinkle with rainbow chip sprinkles, if desired. Serve warm or cold.

These are absolutely delicious, truly one of the only homemade brownie recipes that are worth making from scratch! They've made it on my holiday treat trays for the past few years and everybody raves about them. The only thing I do every single time is substituting the milk in the final steps of batter making for a strongly brewed coffee (or even instant coffee dissolved in warm water in a pinch); it doesn't make the brownies taste like coffee, it just makes the chocolate flavour stronger. If you'd like to just use milk as the recipe states, I'd recommend making sure to season your brownies well (don't skimp on the salt, this recipe can take up to 1/4 - 1/2 teaspoon of salt, if using unsalted butter, in my opinion). I've also done a peanut butter ganache on the top of these using 1 cup peanut butter chips + 1/4 cup peanut butter for a Reese's brownie in the past that was also well enjoyed. Just such a delicious base brownie recipe, whether you're sticking to the Cosmic Brownie aesthetic or not :)

I made these yesterday and they are amazing! I halved the recipe and cooked for 21 minutes, but besides that I didn't make any other changes and they turned out exactly as pictured.  I did take your advice of putting the brownies topped with the ganache in the fridge for just a short time (about 10 minutes- I didn't want cold brownies) and the ganache was not runny at all and stuck well to the top of each brownie. In fact, I was so happy with the consistency of the ganache that I think it will be my go-to recipe for chocolate frosting in the future. I will definitely be making these brownies again- probably very soon as they are almost gone! Thank you for the great recipe!
