How to Make Cottage Cheese

Milk (whole milk, 2% milk,

White distilled vinegar, 5% (lemon juice can be substituted)

cream,

Sea salt, optional

Pour all the milk into a pot on the stovetop, and warm the milk slowly on medium heat until it reaches approximately 120°F.  If you do not have a food safe thermometer, the milk should be quite warm to the touch.

One the milk reaches the approximate temperature, remove it from the heat, and gently pour in the vinegar (or lemon juice, if using).

Stir the milk and vinegar together gently for a minute to two to make sure that the vinegar is well distributed throughout the milk.

Cover the pot and allow it to rest for 30 minutes.

After 30 minutes, the milk should have curdled significantly, and the liquid surrounding the curds should be a pale yellow. If the liquid still looks like a white milk color, add an additional 1/4 cup of vinegar and stir gently.  More curds should form, and the liquid should turn a pale yellow.

Line a colander or mesh strainer with the cheesecloth or flour sack towel, and place over a bowel.  Pour the contents of the pot into the lined colander.  The yellow liquid, which is whey, will strain through, and you should be left with curds in the cheesecloth or flour sack towel. Allow the curds to strain for 5 to 10 minutes.

You now have cottage cheese.  The gallon of milk should yield you approximately 2 cups of cottage cheese. You can refrigerate the cheese as is, and it will stay fresh in your refrigerator for 5-7 days.  If you wish, you can add approximately a quarter cup of heavy cream, and salt to taste, to the 2 cups of curds to give the cottage cheese a texture more similar to what you can find at the grocery store.

How to Make Cottage Cheese - The Easy Way!

This Instant Pot Homemade Cottage Cheese Recipe is so quick and easy.&nbsp; In under two hours, you will have delicious Homemade Cottage Cheese.

Instant Pot Homemade Cottage Cheese Recipe

Gallon Whole Milk

Distilled Vinegar (or Lemon Juice)

Sea Salt

Heavy Cream

Pour milk into Instant Pot cooking pot and cover with Glass Lid or Black IP Lid.&nbsp;

Push the Yogurt button and then the Adjust button.  The display should read &quot;Boil.&quot; 

During the Boil cycle, remove the lid and whisk the milk a couple of times during the cycle.

When Beep sounds, remove lid and take temperature..  Anywhere from 170-180 degrees is fine.  

Slowly pour in the lemon juice or vinegar and gently move around the milk.   It will begin to look curdled. 

Turn off the Instant Pot.  Cover the milk with the Glass Lid and let sit for at least 30 minutes.

Add salt to the cream and whisk.  Set aside.

Pour the Cottage Cheese into a Strainer Basket lined with butter muslin, sitting inside of a Cooking Pot or other device to drain.

Remove Strainer Basket to sink and run a slow stream of cool water over the Strainer Basket to remove excess Vinegar. 

Place Cottage Cheese into bowl. 

Gently pour in the cream with the salt and incorporate.

Refrigerate and enjoy.

Follow the exact same instructions for Cottage Cheese, but don&#039;t add any cream or salt.

Instead of placing the cottage cheese into a bowl after draining out the liquid, gather the ends of the butter muslin and twist. Squeeze out as much liquid with your hands as you can. The cheese will form into a ball.

Shape the cheese into a block.

Place block of cheese into Tofu/Paneer Press and lock into position.

Let sit in the refrigerator for at least one hour, so that more of the moisture will be removed.

The farmer cheese/paneer can then be cut into pieces.

Did you know you can make homemade raw milk cottage cheese without rennet? This recipe uses minimal supplies and has just two ingredients.

Fill the jar with milk until almost full (ferments bubble and foam, so leave some room), put a fresh piece of cheesecloth over the top, and screw on the lid.

Set the jar of milk in a warm location for as long as it takes to start getting thick. Your first batch will likely take close to 10 days to start fermenting. Of course, this really depends on how hot your kitchen is and how many bacteria it has.

Occasionally smell the base culture. As long as it doesn’t smell putrid, you’re good to go. Because this culture will take so many days to turn into a clabber, it will definitely taste and smell strong. Don’t worry – you don’t have to consume this batch! This is just the starter. Your thickened milk may separate into curds and whey or look something like yogurt, maybe with little bubbles. Don’t be concerned when you see a lot of changes!

Once it’s thickened and/or separated, you’re ready to start culturing fresh milk to get delicious clabbers (like cottage cheese!) that you can consume.

For the Base Culture:

Add 1/2 cup of the base culture to a fresh gallon of raw milk and allow it to culture until it’s thoroughly separated into curds and yellow whey. You will lose volume during this process, so you’ll need a lot of culture to get a decent amount of cheese.

Once you have curds and whey, line a clean colander with clean cheesecloth and set it over a bowl to catch the whey. You&#39;ll need a spot to hang this up.

Gently pour the culture into the cheesecloth in the strainer to strain the curds. Use string or a rubber band to tie the cheesecloth, then hang it over the bowl for about 12 hours until it breaks up nicely into little bits of curd.

After it’s done, take it out of the cheesecloth. You could use the cheese just like this, but we’re going to make it a little more like cottage cheese.

Add salt to taste and mix it in really well. This helps draw the moisture out even more. Put this cheese into a fresh bit of cheesecloth, making sure to get every last bit.

Give the cheese a squeeze, then hang again for another 12 to 24 hours. After this hanging time, break up the curds into little pieces.

If you want, you can salt again and keep hanging, but at this point, it’ll be the texture of a nice old-fashioned cottage cheese—crumbly but creamy in the middle. Feel free to add a little milk kefir to make it creamier.

Add whatever flavors you’d like to the cheese—fruit, herbs, or other stir-ins would be delicious.

Store cottage cheese in an air-tight container in the refrigerator.

Making homemade tvorog requires just two ingredients: milk and kefir or yogurt. This simple, healthy recipe yields creamy, tangy tvorog that’s perfect for syrniki, pastries, or spreads. You can choose between the traditional slow fermentation method or a quicker version with lemon or vinegar, both offering delicious, fresh results.

Homemade Tvorog - Farmer's Cheese

1500 g whole milk (pasteurized, not UHT)

500 g kefir yogurt

lemon juice

Mix Ingredients — Combine the milk and kefir (or yogurt) in a large pot, stirring well to mix.

Ferment — Leave the mixture in a warm place at 36°C (96.8°F) for 8 to 12 hours. A good spot is inside an oven with the light turned on or above a radiator.

Pro Tip — For a controlled temperature, preheat the oven to 100°C (212°F), then turn it off. Place the covered pot inside for the required time.

Cut the Curds and Heat — After fermentation, the mixture should have separated into curds and whey. Cut the curds gently with a knife. Heat the curds and whey slowly to 75°C (167°F), stirring occasionally. Do not allow it to boil.

Drain the Whey — Once heated, pour the curds and whey through a cheesecloth-lined sieve. Let it drain at room temperature for 2 hours, placing a light weight on top to help the whey drain faster.

Tip — You can use a few stacked bowls as a weight to press the curds. The longer you drain, the firmer the texture will be. Once done, store the tvorog in the fridge or freezer if not using immediately. Do not discard the whey—it's useful in many recipes.
