Quick easy baked homemade fish sticks are crispy on the outside, tender and flaky on the inside, and packed with flavor. Kid-friendly + freezer-friendly.

Use a paper towel and pat dry each fillet completely dry. Evenly season both sides with salt, pepper, 1 teaspoon Italian seasoning and paprika. Cut the fish fillet into approximately 3/4-inch wide and 1-inch long pieces.

In a mixing bowl, whisk together breadcrumbs, the remaining 1 teaspoon Italian seasoning and Parmesan cheese until combined. Prepare two shallow plates with flour and beaten eggs.

Dip each fish stick into flour to coat it completely and evenly. Then, dip it into the egg, and then breadcrumb mixture, coating completely and evenly. The flour sticks to the fish, the egg sticks to the flour, and the breadcrumbs stick to the egg. Gently press the breadcrumbs into the fish sticks to adhere them on as much as possible and shake off any excess.

Transfer the breaded fish sticks onto a parchment-lined half sheet baking pan and coat each of the fish sticks evenly with cooking oil spray. This will create a golden brown crust during baking. Bake for 15 minutes until fully cooked through and golden brown.

Serve immediately on its own or with tarter sauce for dipping. To make tartar sauce, combine mayo, lemon juice, pickles, and pepper in a small mixing bowl and stir well to combine.

Crispy Homemade Fish Sticks Recipe

lb firm fish fillet

Pat fish fillet dry and season with kosher salt on both sides. Cut the fish fillet into pieces or sticks (1 to 1 1/2-inch thick and about 3-inch long).

In a small bowl, combine black pepper, dried oregano, and paprika. Season fish sticks on both sides with the spice mixture.

Make a dredging station. Place flour in a shallow dish. Place the egg wash in a deeper dish or bowl next to the flour dish. And in another dish, combine the bread crumbs, grated Parmesan and lemon zest. Place next to the dish with the egg wash.

Now coat the fish. Take a fish stick and dip it in the flour to coat both sides; shake excess flour off. Then dip the fish stick in the egg wash, and then in the bread crumb and Parmesan mixture. Pat to help the coating adhere to the fish stick. Repeat until all the fish sticks have been coated.

Arrange coated fish sticks on an oiled baking sheet. Brush the tops of the fish sticks with a little extra virgin olive oil (you'll want to basically dab the salmon fish sticks with the oil so that you don't end up removing the coating).

Place the baking sheet on the middle rack of the heated oven. Bake for about 12 to 15 minutes. If the fish sticks need more color still, place them under the broiler very briefly (watch carefully) until fish sticks gain a nice golden brown color.

Finish with lemon zest and fresh lemon juice. Garnish with parsley.

Serve with your favorite sauce for dipping. I used tahini sauce here, but tzatziki sauce would be great as well. Add a big salad and call it dinner (I especially like Mediterranean white bean salad or Greek salad with these salmon fish sticks

OMG.....I'm not much of a cook but I cook salmon a lot. I was bored with the way I was cooking it so found this recipe! Amazing! I was in heaven.

I bought the parmesan and forgot to put it in there, but the pairing of spinach artichoke dip with blue chip tortilla chips and chip pea salad went excellent! Also, I used halibut. Tastes like a healthy, fresh, McDonalds filet o fish (when the get it right) thanks!

These Homemade Fish Sticks Are Easier Than You Think, and Healthier!

Homemade baked fish sticks that are deliciously crispy, easy to make and packed with protein. These healthy baked fish sticks make a wonderful dinner for kids, toddlers and adults alike because they&#039;re super nutritious and fun to eat. Serve with your fav sides and dipping sauces!

Homemade Crispy Baked Fish Sticks

panko breadcrumbs

Nonstick olive oil cooking spray

onion powder

garlic powder

cayenne

eggs

milk of choice

¼ pound cod filet

Preheat the oven to 400 degrees F.

Pat the fish fillet dry on both sides with a paper towel. Cut the fish into 1 inch thick sticks/strips. They should be about 3 inches long, but this will vary based on your fish filet.

Add panko breadcrumbs to a large baking sheet and spread out in an even layer. Spray breadcrumbs with nonstick olive oil cooking spray. Bake for 2 minutes, then stir breadcrumbs (or just give the pan a shake) and then bake for 2-3 minutes or until breadcrumbs are golden brown. Keep heat in the oven.

Transfer breadcrumbs to a medium bowl. Whisk in spices: salt, black pepper, onion powder, paprika, garlic powder and cayenne pepper. Set aside.

In a separate medium bowl, whisk together the eggs and almond milk. Set aside.

Line the large baking sheet with an oven safe wire metal rack. Spray with nonstick cooking spray.

Dip each fish piece into the egg mixture, then use a tong to grab and toss into the breadcrumb mixture and roll it in completely coat with breadcrumbs. Use tongs to transfer each fish stick to the wire rack, placing about 1 inch apart.

Generously spray the tops of the fish sticks with nonstick spray. Bake in the oven for 15-20 minutes until cooked through. Serves 4. Serve with tartar sauce, my feta sauce, tahini sauce, tzatziki, ketchup or whatever sauce you’d like! Makes 12-16 fish sticks.

Preheat oven to 400°F, cover a baking sheet with aluminum foil and spray the foil with nonstick spray. Spray a metal rack and place it over the baking sheet. Set aside.

Season

Set out 3 shallow bowls to create a dredging station.

Place

In the first shallow bowl, whisk the flour and paprika together.

Whisk

In the second bowl, whisk the eggs and Dijon mustard together.

Combine

In the third bowl, combine Panko breadcrumbs and the seasoned breadcrumbs.

Dredge

For the dredging process, press a fish stick in the flour, making sure to cover all sides and shake off the excess.

Coat

Then, dredge the fish stick in the egg mixture and let the excess drip off. Now, press the fish in the breadcrumb mixture, patting to help the coating adhere.

Place the coated fish stick on the prepared rack/baking sheet and repeat the process with the remaining fish sticks.

Spritz

Spritz the fish with olive oil or butter-flavored cooking spray.

Bake

Place the fish in the oven and bake 6 minutes. Turn the fish sticks over and spray with oil or cooking spray.

Bake another 6-10 minutes or until the fish begins to flake easily with a fork.

Serve

Transfer cooked fish to a serving tray and serve immediately with Homemade Tartar Sauce or other favorite sauce.
