Healthy French Toast

bread ((whole grain, gluten-free, or sourdough))

eggs

milk of choice

vanilla

cinnamon

tbsp butter ((coconut oil

Melt butter or coconut oil a large skillet or griddle over medium heat.

In a shallow bowl, whisk together the eggs, milk, vanilla, and cinnamon.

Gently dip each slice of bread into the egg mixture. Flip the bread and lightly press, ensuring the bread absorbs the egg mixture. Place on the hot griddle or pan.

Cook for 3-4 minutes, carefully flip, then cook the other side an additional 3-4 minutes.

Remove from pan. Serve and enjoy with your favorite French toast toppings (fruit, yogurt, butter, real maple syrup, etc.)

TO FREEZE: Place cooked French toast slices on a wire baking rack or a baking sheet in a single layer (no overlap, no slices touching). Place in the freezer for one hour to flash freeze, then transfer to an airtight, freezer-safe bag or storage container. Be sure to label with the date! Return to freezer and eat within 3 months. To reheat, I recommend placing one or two slices in a toaster on the &quot;frozen toast&quot; setting, then enjoying as usual.

How often are you making breakfast during the week?

Just tried for the first time.  This was very good and easy to make. Not soggy at all.  I used Trader Joe’s pumpkin brioche loaf bread. Followed directions other than kosher salt.  I used table salt since I don’t know the difference between the salts. I think next time I will add 1tsp pumpkin pie spice instead of 1/2 tsp and cook longer for a more caramelized and crispy flavors. I didn’t make the butter though short on maple syrup, needed the little bit I had for the toast.  
This will be a new tradition for Halloween and thanksgiving breakfast. Add a side of diced ham and scrambled eggs for protein.  So good!

I served this today to my guests at my B&B and they loved it. I found that I had to triple the maple syrup!

I love this recipe so much and I make it every Sunday for breakfast. Little tip, if you use room temperature butter, the pumpkin butter takes forever to combine. Sooo good!

I made this exactly as directed, but couldn't eat it. No matter how long I cooked the toast, it was still mushy inside. I ended up throwing it all in the garbage and wasting a lot of ingredients.

Pumpkin French Toast Is The Only Breakfast You'll Want To Eat This Fall

This recipe makes the most delicious and perfect French Toast!

French Toast

bread (thick sliced if possible)

Tablespoons vanilla extract

orange juice (fresh squeezed is best)

sugar

lemon ((about 1 Tablespoon))

salt

cognac (or Grand Marnier (or other liqueur) (optional))

butter

Dry bread by laying on a wire rack overnight* or bake at 200˚F for about 15 minutes (then cool completely).

In a large measuring cup or medium bowl, whisk together eggs, milk, vanilla, juice, sugar, zest, cinnamon, salt, and cognac if using.

Place bread in a single layer in a baking tray with sides. Pour egg mixture on bread. Flip slices a number of times, until bread is coated and soaked, about 15-20 minutes. There may be a small amount of egg mixture remaining in the pan, but most will have soaked into the bread.

***Preheat oven to 200˚F. Place a wire rack on a baking tray and set aside.

Over medium heat in a skillet, or on a griddle, heat equal parts butter and oil (about 1 Tablespoon of each for a skillet, and 2 Tablespoons of each on a skillet). Fry bread slices 3-4 minutes per side or until golden. Serve immediately or transfer to wire rack on the baking tray and place in oven to keep warm.

Wipe skillet or griddle, and repeat, adding butter and oil to fry remaining French toast.

Serve warm with maple syrup or your favorite toppings.
