Perfect Birthday Cake

Made this cake for my granddaughter birthday and it was a hit. The rainbow sprinkles matched the theme perfectly! And she love it.

Do you make cake with rice crispy treats on the bottom and like ice cream on top if not can you it is my first come to on my birthday and I would LOVE to make one if not I will make one and share the recipe with you all though it would be easy!!!!!!!!!!!

I made this for my sister who requested a classic birthday cake for her special day on May 5.  I wanted to do lots of layers so made the cake in sheet pans and cut out layers.  It turned out great!  Used two sheet pans and it made a 5-layer 8" cake.  I made a bit more buttercream to have enough for all the layering.  It was a little dry (my fault with the thin sheet pan instead of cake pans?) and I've heard of moistening the cake layers but don't often make cakes so it felt a bit advanced for me.  Otherwise, delicious, easy breezy, so pretty and a joyful experience all around!

I really want to try out this recipe for making cake pops, but I am not quite sure how much of the butter cream to put to get a really good consistency?

I just made your birthday cake for my 38yo daughter because I thought it was so playful and femme.  It's so tasty and fun that she loved it, of course.  

The surprise was that my 71yo husband -- whose had a lot of icing in the course of a long lifetime -- thought your unusual buttercream made with sour cream was the best he's ever had.  

I chopped up ripe strawberries and folded them into the portion of buttercream I set aside for the filling, piping a dam around the perimeter to hold it between the layers.  Then I used the same cone and tip to add some rosettes to the top.

This Oreo Funfetti Icebox Cake Tastes Too Good To Be True

You won't believe how amazing this vegan funfetti cake is!! Super moist, tender, and "buttery" sweet, full of rainbow sprinkles, and secretly vegan, eggless, and dairy free with a gluten free option! Absolutely no one will know this funfetti cake is vegan!

The ULTIMATE Vegan Funfetti Cake

(300 mL) vegan buttermilk, room temperature

(450 g) all purpose flour

tsp baking powder

tsp baking soda

(250 g) granulated sugar

(170 g) salted vegan butter, room temperature

(190 g) unsweetened applesauce, room temperature

vanilla extract

vegan sprinkles

More sprinkles to decorate

Prep: 

Preheat the oven to 350 F. Grease three 6&#8243;  or 8&#8243; cake pans with cooking oil, and line them with parchment paper. Set aside. You can also use 8&#8243; if desired. Just be aware that the cakes will bake differently (if you&#8217;re doing two 8&#8243; cakes, it will bake longer, if you&#8217;re doing three, it will bake quicker). Measure out all ingredients. 

Make the vegan buttermilk: 

Prepare the vegan buttermilk. Combine the dairy free milk with the apple cider vinegar, and set aside to sit for 5-6 minutes. You can weigh and measure the remaining ingredients during this time.

Make the batter: 

In a medium bowl, whisk together the flour, baking powder, and baking soda (add in 1/8 tsp salt if you&#8217;re using unsalted vegan butter). In a stand mixer with paddle attachment or a large bowl with hand mixer, cream together the vegan butter and sugar until fluffy, about 2-3 minutes. Scrape down the sides as needed. Then add in the applesauce and vanilla extract. Mix again on medium speed until combined, scraping down the sides and at the bottom of the bowl as needed. Add in about half of the dry mixture, along with half of the vegan buttermilk, and mix on medium speed until just combined. Add in the remaining dry mixture and vegan buttermilk, and mix on medium speed until there are just no more dry streaks. Make sure to scrape the bottom of the bowl as well as the sides. Remove the bowl from the stand mixer (if using a stand mixer) and fold in the sprinkles just until they are evenly distributed throughout the batter.

Bake: 

Divide the batter between the cake pans evenly, and bake for 27-30 minutes, or until the toothpick comes out clean.

Cool: 

Remove from the oven and allow the cakes to cool in their pans for 10 minutes, then transfer them to a cooling rack to cool completely. Once cooled completely (there is absolutely no warmth to the touch!), then you can prepare your chocolate buttercream.

Prepare the buttercream

 make the vegan buttercream according to the directions in the post. 

Assemble the cake

 on a cake stand or a cake turntable, spoon about 1/3-1/2 cup of frosting onto the first layer. Use an offset spatula to smooth the frosting to the edges. Then place the second layer on top and repeat. Place the third layer on top and frost the outside of the cake, creating a crumb coat. You can either smooth the edges even more after chilling the crumb coat layer, or you can make swoops in the frosting. Decorate with sprinkles and serve! Enjoy!

Storage

 store any leftover cake wrapped in parchment paper and tinfoil, and in the fridge for up to 4 days or the freezer for up to 3 months.

This actually tasted like funfetti cake and it was so easy to make. I used oat milk instead of coconut milk because I don't like the coconut taste. Worked amazingly. Will be making again!!

Homemade Funfetti Birthday Cake

unsalted butter,

vegetable oil

sugar

eggs,

almond extract

cake flour*

teaspoon salt

buttermilk

sprinkles

salt

milk

First, make the cake

Preheat the oven to 350°F. Line 2 8-inch round pans with parchment paper and grease the sides with cooking spray. Set aside.

In a stand mixer fitted with the whisk attachment, beat the butter and oil on low speed until combined so the oil doesn&#8217;t fly everywhere. Gradually increase the speed to medium-high and beat until smooth, about 2 minutes.

With the mixer running, slowly pour in the granulated sugar and continue to beat on medium-high speed until the mixture is light, fluffy, and turns a very pale yellow color, about 2 minutes.

Use a silicone spatula to scrape down the sides and bottom of the bowl, then add the eggs, vanilla and almond extract. Beat on medium-high speed until the mixture is light and fluffy, about 2 minutes.

In a separate mixing bowl, whisk together the flour, baking powder, and salt. With the mixer on low speed, alternate adding in the dry ingredients and the buttermilk in 3 additions (you’ll add half the dry, then all of the wet, then the other half of the dry). It’s okay if the batter still has a few lumps in it–you don’t want to overmix. Last, add the sprinkles and fold to evenly distribute.

Divide the cake batter evenly between your prepared pans, using the spatula to spread the batter into a flat, even layer. Bake until the cake has risen, the top springs back to the touch, and a butter knife inserted in the center of the cake comes out clean, 30 to 40 minutes.

Place the cakes on a cooling rack and allow them to cool slightly. To remove from the pan, drag a butter knife around the edge of the cake, then carefully flip the cakes out onto a cutting board, peel away the parchment paper, and re-invert it, right-side up onto a cooling rack to cool completely.

Once the cakes are completely cool, make the frosting

In a stand mixer, beat the softened butter and powdered sugar together until fluffy, about 2 minutes. Add in the vanilla, salt and a tablespoon of milk one at a time. If the frosting seems to be getting too runny, stop adding milk. Beat for 3 minutes, or until light and fluffy

Place the first cake on a cake stand, then top with about 1/3 of the frosting, spreading it into an even layer all the way to the edge. Top with the second cake layer and frost the top and sides of the cake with the remaining frosting. Enjoy!

Made this and swapped in 1:1 gluten free flour and it was amazing! However, the cakes did take about 35 minutes to bake. The frosting was incredible!!! Will make this again!

I halved this recipe tonight for something quick and delicious to make for my family. I actually had leftover frosting in the fridge from a prior cake I made and knew it would be a perfect pairing with this funfetti cake. I baked it in a 9x9 because that’s the pan I have a lid for. Funfetti Cake

cake flour

white sugar

salted butter (softened (unsalted will work too))

eggs egg

vanilla bean paste (or vanilla extract)

rainbow sprinkles

tbsp cake flour ((to mix with sprinkles))

Preheat

Preheat and Prepare Pans: Preheat your oven to 350°F (177°C). Grease and flour three 6-inch or two 8-inch round cake pans. Line the bottoms with parchment paper for easier removal.

Whisk

Whisk Dry Ingredients: In a medium bowl, whisk together the cake flour, baking powder, baking soda, and salt. Set aside.

Cream

Cream Butter, Sugar, and Oil: In a large mixing bowl or the bowl of a stand mixer, beat the softened butter, sugar, and oil together on medium-high speed until light and fluffy, about 3-5 minutes. The mixture should be pale in color and have a creamy, smooth texture.

Add Eggs and Vanilla: Add the eggs and egg white one at a time, beating well after each addition. Then add the vanilla bean paste and mix until fully incorporated.

Alternate

Alternate Adding Dry Ingredients and Buttermilk: With the mixer on low speed, add one-third of the dry ingredients to the creamed butter mixture, mixing until just combined. Then add half of the buttermilk and mix until combined. Repeat with another third of the dry ingredients, followed by the remaining buttermilk, and finally the last third of the dry ingredients. Mix each addition until just combined, being careful not to overmix.

Fold

Fold in the Sprinkles: Mix the rainbow sprinkles with 1 tbsp of flour and gently fold the rainbow sprinkles into the batter with a spatula, being careful not to overmix to avoid color bleeding.

Divide

Divide and Bake: Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula. Bake for 22-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean or with a few moist crumbs.

Cool

Cool the Cakes: Allow the cakes to cool in their pans for 10 minutes, then carefully turn them out onto a wire rack to cool completely before frosting.

I will say, this was the best from scratch cake I've made to date (cycling through recipes trying to find "the one"). I will say, despite my coating the sprinkles in cake flour, they all still sunk to the bottom of the cake. I'm not sure if it's because I used milk instead of buttermilk (hello lazy bum... that's me. Too lazy to mix up the buttermilk) but this cake also turned out really dense for me and I did not overmix at all. Hand mixed the last bit until just incorporated to ensure I didn't over mix it. But it was still super dense 🤔 most likely user error, or it could be the box-mixes we grew up on ruined a perfectly good homemade cake for me. Not sure which. 
I still think I would make this again though and layer it as shown - I just did a 9×13 this first time - and see if the butter milk makes that big of a difference or not. We will find out. I don't normally do layered cakes but this sure makes me want to try. It's definitely firm enough to hold shape in layers - while also still being moist. It really is not a dry cake so that's great - and as stated above, it's the best one I've made being homemade as of yet 😃
