This meatloaf was very bland. Ketchup was good so I made more just to give the meat some flavor. Definitely could use some more seasonings.

Made this today using ground turkey instead of beef. It turned out AMAZING. I was little weary about the ketchup but that was also excellent!!!

Ketchup is very simple to make and is so much more flavorful than anything you can buy at the store. We don’t like it to be too sweet and like to add only 3 to 4 tablespoons of sugar to the pot, but if you prefer, add a little more to make the ketchup sweeter. The sweetness of tomatoes can range, too, so it really is best to taste the ketchup and add the sugar to taste. You can also play around with flavors, this version has a kick of spice from crushed red pepper flakes, but you could add fresh jalapeño, chipotle or hot sauce to transform it into spicy ketchup. Other spices are nice, too — try curry powder or garam masala for an Indian-spiced version.

Really good.  I made the recipe as written only made it low carb by substituting 1 tsp blackstrap molasses and 1/4 cup of granulated stevia -- the kind that is a 1:1 replacement for sugar.  If you don't like it this sweet tasting cut back on the stevia but keep the tsp of blackstrap molasses.  I'm diabetic so I have to watch every gram of net carbs and I really like ketchup.

I made the ketchup for a recipe that only used 3tbsp.  Tonight I made spaghetti sauce and used the ketchup as my tomatoes.   So Good!  Rave reviews from the whole family...and I don’t even like spaghetti sauce.

Mm mm, nothing is better than homemade ketchup; making your own ketchup is so EASY to make at home and making it yourself allows you to control what goes in it.

Homemade Ketchup

white vinegar

water

tsp sugar

salt

onion powder

Combine all the ingredients in a medium saucepan over medium heat; whisk until smooth.

When it comes to a boil, reduce heat to low and simmer for 20 minutes, stirring often.

Remove from heat and cover until cool.

Chill and store refrigerated in a covered container.

300 gr double-concentrate tomato paste (organic if possible)

maple syrup

60 ml white vinegar (or cider vinegar)

tsp sea salt

cinnamon powder

tsp black pepper powder

grated nutmeg and chilli powder to taste (optional)

Place all ingredients in powerful blender.

Blend until combined and you reach a smooth texture.

Add a pinch of nutmeg and chilli powder at the end for a spicy kick, or leave the ketchup plain.

Store in an airtight container in the fridge for up to 1 week.

Most tomato sauces are made with Roma style tomatoes due to their lower moisture content and high flavor.  I made my ketchup with a mix of Roma hybrids and heirloom cherry tomatoes and it was delicious.  Experiment with the tomatoes you have on hand for varied flavor in every batch!

Roma (or Plum) tomatoes (roughly chopped)

Prepare a square single layer of cheesecloth that will fit all the spices with room to fold and secure the contents.&nbsp;

Place the cloves, bay leaf, cinnamon stick, celery seeds, chile flakes, and allspice in the middle of the cheesecloth. Fold closed and secure with a length of kitchen twine.

In a medium stock pot 4-quarts or larger (enough to house the tomatoes with some extra room) place tomatoes, salt, vinegar, sugar, onion, chile, garlic and spice packet.  Cook over medium heat until tomatoes and chiles are soft and onions are translucent and limp (about 30 minutes).

Remove and discard spice packet. Puree the sauce using an immersion blender, traditional blender or food mill.&nbsp;

Strain the ketchup through a fine mesh strainer back into the cooking pot. NOTE: this step removes any seeds.

Cook over medium-low heat for an additional 20-30 minutes until thickened to your preference.

Store in a sealed glass container in the refrigerator for up to 3 weeks.

If using crushed tomatoes and you want very smooth ketchup, place all ingredients in a small blender and blend until creamy and smooth. Otherwise, proceed to step 2.

Place all the ingredients in a medium saucepan and stir until well combined, then turn the heat on medium low. Stir gently until everything comes to a light simmer, then cover and reduce heat to low.

Let simmer for 45 minutes to 1 hour, or until slightly reduced and darkened in color, stirring every 10-15 minutes to prevent sticking.

Once reduced, use a teaspoon to remove a spoonful from the saucepan, and let it cool on the counter — you want to taste it cooled for accurate adjustment! Taste and adjust if  desired, adding salt to taste, more vinegar (1 Tbsp at a time) for tang, more maple syrup for sweetness, or more onion powder for more savory notes.

Enjoy with French fries, vegan burgers, breakfast sausage, and beyond! Will keep covered in the refrigerator for up to 2 weeks, or in the freezer for up to 2 months (frozen into ice cube molds).

Combine all ingredients until smooth in a saucepan.

Wash the tomatoes and remove their stems.

Add the tomatoes to a large bowl and blend them with a handheld immersion blender. You could also do this in a food processor.

Pass them through a sieve to remove the seeds and chunks of the skin. This yielded 3.5 cups of tomato juice for me.

Add the tomatoes into a large saucepan over medium heat and bring to a slow boil to reduce them for about 45 minutes. Stir occasionally.

Add all the other ingredients and stir well. The spices and flavours combine to give you that signature tomato ketchup flavour.*

Keep over medium heat for another 8-10 minutes and cook, stirring occasionally. When you achieve a consistency you like, remove from the heat.

Leave it to cool down then transfer to an airtight container or bottle and keep refrigerated for up to a month.

Heat the oil in a 3-5 quart saucepan and add the onion. Cook over medium-low heat, stirring occasionally until soft and golden, about 10 minutes. Add the remaining ingredients, and stir to combine. Jalapeño Chiles (seeded, membranes removed and chopped)

28 ounce can Whole Canned Tomatoes

Tomato Paste

Cinnamon

Ground Allspice

Ground Ancho Pepper

Chop onion and jalapeño. Mince garlic.

In large saucepan, on medium heat, saute onion, jalapeño and garlic in olive oil until soft, about 8 or 9 minutes.

Using fork, break apart tomatoes in the can.

Add tomatoes, paste, spices, brown sugar and vinegar to the onion mixture in the saucepan. Stir well. Continue to heat until brown sugar is dissolved and everything is melded together, about 10 or 15 minutes.

Remove from heat and cool for 15 or 20 minutes.

Using electric blender, blend one cup of mixture at a time until completely smooth.

Return to same saucepan and cook on low heat until thickened, stirring occasionally to ensure it doesn&#39;t stick to the bottom. About 20-45 minutes. It varies by type of tomato and desired consistency.

Makes about 3 cups. Allow to cool before storing in the refrigerator.
