We took a couple shortcuts for this traditional lasagna recipe by using store-bought marinara and boxed pasta sheets. It saves a ton of time without sacrificing any ﻿flavor. Make sure to follow these tips.

Found the measurements, and quantities were extremely off. Ended up throwing out a lot of noodles and having to make more meat and ran out of cheese slices even though we used 2lbs of cheese.

This recipe did not work out for me at all. The quantities were WAY off. For a start you need 2lb of beef.
For the mozzarella, I sliced fresh moz myself, which ended up beeing think and making it extra cheesy - better to buy sliced moz (slightly processed).
Finally, the whole milk ricotta mix was not easily spreadable at all... perhaps I used the worng broand or should have used the egg white as suggested in the other comments.

Great recipe! I used half ground beef/half hot Italian sausage.

I ended up only getting 2 full layers into my pan. I used 8 noodles and had a bunch of oily noodles leftover. I also didn't need 2 full pounds of mozzarella, but I'm sure we'll manage to eat that. Overall, easier recipe than any I've tried before. Very tasty.

My Family loved this recipe. I added the cinnamon the the meat mixture, which many Greek recipes call for (we are Greek) and it was wonderful. Even my daughter, who doesn’t like lasagna, ate some and said how good it was.

Actually when I moved to the south in  60s-70s you could not get Ricotta in grocery stores, so I did use cottage cheese with eggs added.  I worked quite well.  I now use Ricotta and also add the egg.

Fantastic. I made it in a 9x9 pan so halved the recipe (sorta). Added more cheese, because there is never enough for us :) Laid out noodles as you suggested and sprayed with olive oil. First time I haven’t had them tear. Made it so easy. Also the tip to under cooking lasagna was valuable. Used a sprinkle of cinnamon. Just perfect. My husband said you need to make this again.  I used Barilla marinara sauce.

Turned out excellent. The only thing I did different was to divide it into two pans. One I froze, the second I baked after leaving in the fridge overnight. To answer one of the below questions, I then increased the 400• time to 30 minutes from 18-20.  Worked out great.

In a large Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until cooked through and browned.

Add the crushed tomatoes, tomato paste, tomato sauce, and water, and stir everything together.

Add sugar, basil, fennel seeds (if using), Italian seasoning, 2 teaspoons salt, pepper, and 2 Tablespoons parsley, and stir to combine.

Simmer, covered, for at least 1½ hours, stirring occasionally. I usually try to simmer for as long as possible.

If using regular lasagna noodles, cook according to package instructions and drain.

In a bowl, stir together ricotta cheese, egg, remaining parsley, and ½ teaspoon salt.

Preheat oven to 375°F.

To layer the lasagna, spread 1½ cups of the sauce in the bottom of a 9x13 inch baking dish. Arrange a single layer of noodles over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese. Sprinkle with ¼ cup Parmesan cheese.

Spoon another 1½ cups meat sauce over the cheese.

Add another layer of noodles, the rest of the ricotta mixture, half of the remaining mozzarella, and another 1/4 cup Parmesan cheese.

Add another layer of 1 1/2 cups of sauce and a final layer of noodles.

Top with another 1 1/2 cups sauce and the remaining mozzarella and Parmesan cheese.

Cover with foil and bake in preheated oven for 25 minutes.

Remove foil, and bake an additional 25 minutes.

Cool for 15 minutes before serving.

Heat oven to 350°F and prepare a 9x13&quot; baking dish with cooking spray; set aside.

Brown meat in large skillet on medium-high heat. Meanwhile, mix 1-1/4 cups mozzarella, ricotta, 1/4 cup Parmesan, parsley and egg until blended. Set aside.

Drain meat; return to skillet. Add marinara sauce in with meat and stir to combine. Add 1 cup water to empty sauce jar; cover with lid and shake well. Pour into meat mixture; stir until blended.

Spread 1 cup meat sauce onto bottom of baking dish; top with layers of 3 lasagna noodles, 1/3 of the ricotta cheese mixture and 1 cup meat sauce. Repeat layers twice. Top with remaining noodles, meat sauce and cheeses. Cover with foil that has been sprayed with cooking spray.

Bake 1 hour or until heated through, removing foil after 45 min. Let stand 15 to 30 minutes before cutting to serve. Garnish with fresh parsley and enjoy!

Loved this!  I have made many lasagnas but this was my first in a slow cooker .  Excellent results!  It even produced the slightly crunchy  Cheesy edges like in a baked lasagna.  I’ll definitely make this again but will add a layer of fresh spinach the next time around as we all love that in our lasagna.

Best lasagna I’ve ever made!  No need to grease the crock pot.  In addition to ground beef (yes you need to remove grease once meat is brown). I also included 2 links, Italian sweet sausage sliced and browned. Cooked on low for 3.5 hours and lasagna noodles were perfect. Added a splash of red wine to meat and pasta sauce before layering into pot. I am amazed on how good this was.  Never going back to traditional method.

We've tried this with ground beef, a mixture of beef & italian sausage, and most recently with ground green onion venison/pork mixture and it has been a crowd pleaser every single time. I've come back to this page several times over the years and now I kind of know it by heart. One of our family's favorites for sure.

I would like to note that after making this several times, you can tweak to your liking and it will always turn out awesome. We use 5 cheese italian blend along with ricotta. We double the cheese every time, still turns out fine. YOU DO NOT NEED oven ready lasagna noodles, they'll turn into pudding anyway. Cut out the problem of having to find them by using regular lasagna noodles (dry) and incorporating about 1/2 cup of water to your sauce before layering(rinsing out your jars will do nicely). 

Don't be afraid to experiment.

I've been creating lasagna this way for several years. I usually use italian sausage rather than beef  and an italian blend for the cheese rather than plain mozzarella. I've used small curd cottage cheese a few times (cheaper than riccota), but ricotta is so much better. You don't need to use the no-boil noodles as some have suggested. Regular dry lasagna noodles are fine. In fact they work better in this recipe (the no-boil noodles turn into a pastey mush). It will never beat the flavor and consistency of lasagna baked in an oven, but it's close, and an excellent substitute when you need an easy middle of the week meal.

Made this once, family loved it. Tonight I’m making it again. We had no working oven for MONTHS, so this was a nice change in the repeated meals

Made this the other day, I seemed to mis-measure the sauce because I ran out near the last later.  I will have to plan it better next time.  I also think 4 hours was a bit much, the edges were burnt crusty and not just well done crusty.  I will do 3.5 hours next time and maybe overlap the noodles a little better.  Over all it was good and eaten for the most part, but the hard crusty edges made the outer layer a bit much to eat.

I made this last night for my family and it was a hit! I used cottage cheese instead because I don't care for ricotta. I cooked mine about 4 1/2 hours and that was almost too long. I'll cook it 4 hours next time. I'm a vegetarian, so I didn't eat any, but I'll be using veggie meat when I make it next time!

Absolutely delicious! My entire family loves this dish and constantly asks me to make it. I followed all the instructions and have tried this with both sausage and ground beef and either still tastes amazing!

The Secret To The Best Lasagna Ever? A Crock-Pot!

Easy Homemade Lasagna - This recipe that seems so daunting is truly, truly easy! Homemade tomato meat sauce, parmesan spiked ricotta, and plenty of melty mozzarella all held together with perfectly al dente lasagna noodles.

Easy Homemade Lasagna

onion

garlic (minced)

tomato paste (1 can)

tomato sauce (1 can)

salt (or

tsp pepper (or

parmesan cheese (shredded)

parsley (freshly chopped)

mozzarella

16-20 lasagna sheets (oven-ready)

Preheat the oven to 350F. Heat the olive oil in a large, heavy-bottomed pot over medium-high heat. Add the beef and onion to the pot. Sauté, breaking the beef into small pieces, until it is completely cooked through. Add the garlic and tomato paste. Cook for 1 minute, stirring to mix the tomato paste into the beef.

Add the tomato sauce, crushed tomatoes, and Italian seasoning to the pot, and stir. Bring the sauce to a bubble then reduce the heat to low. Cover the pot with a lid and simmer for 10-15 minutes. Taste for seasoning and add salt and pepper as needed. If the sauce is too thick, stir in a bit of water.

Mix the ricotta, parsley, 1/4 cup of the parmesan, and a pinch of each salt and pepper in a bowl. Taste the mixture and adjust the seasoning as needed, then mix in the egg.

Spread about 2 cups of the sauce on the bottom of a 9 x 13&quot; casserole dish. Layer: 4-5 lasagna sheets over the sauce, then spread 1/3 of the ricotta mixture over the noodles, top with 2/3 cup mozzarella, then 1 2/3 cups sauce. Repeat those layers, starting with the noodles, twice more. Finish with 4-5 lasagna sheets, the remaining sauce, remaining mozzarella, and remaining 1/2 cup of parmesan cheese.

Cover the casserole dish with foil and bake for 45-55 minutes. Use a knife to stab through the middle of the lasagna to test the doneness of the noodles. Once they are tender, remove the foil and bake for another 15 minutes. If you want the top browned even more, turn on the broiler for 1-3 minutes. Let the lasagna rest for 15 minutes before slicing and serving.

lb sweet Italian sausage¹ ((453 grams))

oz diced tomatoes (undrained (396 grams))

Tablespoons sugar

oz whole milk ricotta cheese ((425 grams))

parmesan cheese

oz cream cheese (softened (113 grams))

mozzarella cheese ((340 grams))

Preheat oven to 350F.

Bring a large pot of well-salted water to a boil and cook noodles according to package instructions until al-dente (typically 10 minutes), stirring occasionally.

Drain and run noodles under cold water to keep them from cooking further. Set aside.

While the noodles are cooking you can begin preparing your sauce. Heat olive oil in a large skillet over medium/high heat until shimmering. Add onions and cook, stirring frequently, until softened and translucent, about 5 minutes.

Add garlic and cook, stirring, until fragrant (about 30 seconds).

Add ground beef and sausage to the pan and cook, crumbling, until mostly browned. Drain if needed. If you have accumulated a brown layer on the bottom of the pan, simply deglaze with a splash of broth or wine.

Add Italian seasoning, basil, onion powder, garlic powder, salt, pepper, and red pepper flakes and stir until well combined with the meat.

Add tomato sauce, diced tomatoes, and sugar and stir well. Bring to a simmer and stir occasionally while you prepare the cheese layer:

Stir together ricotta cheese, parmesan cheese, cream cheese, egg, and dried parsley until completely combined.

Filling

Spoon a thin layer of sauce onto the bottom of a 9x13” (23x33cm)  baking dish. Top with an even layer of 4 noodles.Top the noodles with a third of your sauce. Dollop half of your ricotta over the sauce and use a spoon to spread evenly (it will be a thin layer and may swirl with the sauce, this is fine). Top the ricotta with 1 cup (113g) shredded mozzarella.

Repeat with 4 more noodles, half of your remaining sauce, another layer of ricotta and another cup of mozzarella, then 4 more noodles, remaining sauce, and sprinkle the remaining mozzarella evenly over the top.

Lightly spray a piece of aluminum foil with cooking spray and place the foil (spray-side down) over the lasagna. Place the lasagna on a foil-lined baking sheet (in case any overflow happens this will keep it from making a mess in your oven) and bake in 350F (175C) oven for 40 minutes, then remove foil and bake for an additional 10 minutes/until cheese is melted and bubbly.

Classic Homemade Lasagna

In a large sauce pan over medium heat, sauté the garlic, diced onion, and diced red pepper until translucent. Push all the veggies to the side of pan, creating a ring of vegetables.

Add the meat in the middle. Cook the meat and while it&#8217;s cooking use a straight edge spatula to break up the meat into small pieces. Once no pink meat remains, stir the vegetables and meat together and cook for another 3 minutes. Add oregano, salt, tomato sauce, red wine, and water. Cook until mixture thickens, about 5 minutes, remove from heat.

Preheat the oven to 350°F and grease a 13 x 9&#8243; casserole dish. Set aside.

In a mixing bowl, combine the ricotta, parmesan, eggs, basil, and herbs, stirring together until well mixed.

Spread a thin layer of meat sauce in the casserole dish. Place a layer of the lasagna noodles in a flat layer over the sauce. Spread about 1/2 cup of the ricotta mixture over the noodles, followed by about 1 1/2 cups of meat sauce. Repeat until you run out of ricotta, ending with noodles topped with sauce. Spread the mozzarella cheese over the last layer.

Cover the pan tightly with tinfoil and bake at 350°F for 30 minutes. Uncover and bake for 15 more minutes. Allow to cool before serving!

Preheat oven to 375 degrees. Brown sausage and hamburger in a large skillet over medium high heat and drain. Divide into 4 portions and reserve three for another night. Add spaghetti sauce to remaining meat mixture and stir to combine.

In a large bowl, combine the ricotta the salt and pepper and stir to combine.

Coat a 12 cup muffin tin with cooking spray, and arrange a wonton wrapper in each cup. Take half the ricotta mixture and divide it among the 12 cups. Top with half of the meat sauce, and sprinkle with shredded cheese. Place another wonton wrapper over the cheese, and repeat the layers by adding the remaining ricotta cheese, meat sauce, and top with shredded cheese.

Bake at 375 degrees for 10 to 15 minutes until the cheese is melted and the wonton wrappers are golden. Cool in the muffin tin for 5-10 minutes before serving.

Homemade Lasagna

lasagna noodles ((or no-boil noodles))

Italian sausage

Italian seasonings

basil leaves (, finely chopped (about 10-15 leaves))

Tablespoons butter

all-purpose flour

milk

Brown meat: In a large skillet, brown the ground beef and sausage over medium-high heat, breaking the meat apart into pieces with a wooden spoon. When cooked through, remove the grease. 

(Optional) Add meat to a food processor and pulse just 3-4 times until it’s broken up into very small pieces. Remove to a bowl.

Sauté Veggies: In the same skillet over medium-high heat, add olive oil. When oil is hot, add the garlic, stirring constantly for 30 seconds. Add the onion, spinach and bell pepper. Continue cooking on medium-high heat until the vegetables are softened –about 2-3 minutes. 

Remove from heat and transfer them to the same food processor. Pulse several times until they’re nearly pureed. Return mixture to the skillet.

Add Tomato sauce and tomato paste and stir to combine. Add the diced tomatoes, Italian seasoning, and salt and pepper to taste. Stir. Cover and allow the sauce to simmer for about 20-30 minutes on low heat, stirring occasionally. Right before using the red sauce in the lasagna, stir in the reserved crumbled ground beef and sausage, and fresh basil. 

Cook Pasta: While the red sauce simmers boil the lasagna noodles for half the time suggested on the box. Drain into a large colander and sprinkle them with a tiny bit of olive oil to keep them from sticking together. (You can skip this step if you are using no-boil noodles).

Make the Red Sauce: (Can be made in advance).

Add the butter to a medium size saucepan or large skillet. Over medium heat. Once melted, add the flour, stirring constantly to combine 2 minutes. Gradually add in the milk, whisking until smooth. Season with salt and pepper. 

Cook over medium heat, whisking often so it doesn’t burn on the bottom, until it thickens-- about 5-7 minutes.

For the White Sauce: (Can be made in advance).

Preheat the oven to 350 degrees. Lightly grease a 9X13-inch baking pan with cooking spray. Keep in mind that there will be 3 layers of lasagna, so mentally split the sauces into thirds as you layer them to make sure you have enough at the end.
