Simple One Gallon Mead Recipe

Sanitize everything that will be used in the brewing process.

Heat about 1/2 gallon of non chlorinated water in the pot on medium heat. Once it's warm, but not boiling, add the honey and stir it so it all dissolves. Turn off the heat.

Put the berries or other fruit, orange slices (skin and all), and raisins into the one gallon jug.

Use the funnel and carefully pour the honey water mixture into the jug.

Top off the jug with cold (preferably filtered) water, leaving at least 2 inches of head space on top. Put the lid on the jug and gently mix everything around a bit.

Make sure that the temperature of the must is below 90°F, then add 1/2 packet of champagne yeast. Put the lid back on tightly and this time shake the jug for a minute or two to distribute the yeast.

Put a little water in the airlock to the line, then put the rubber stopper end into the jug. Put the jug in a dark place. It should start bubbling within 12-24 hours.

After about 4-6 weeks of fermenting, once all bubbles have stopped rising in the jug and airlock, the mead can be bottled and aged.

How to Make a Gallon of Mead

Go foraging for elderflowers, and then make this sparkling mead recipe! This easy homemade sparkling elderflower mead recipe is low alcohol, delicately flavored, and the perfect foraged drink for a hot summer day!&nbsp;

Sparkling Elderflower Mead Recipe

Combine a half gallon of filtered water in a pot with the elderflowers. Bring to a boil for about 2-3 minutes, then remove from heat and steep to brew elderflower tea.

Once the tea has cooled slightly, but is still warm, add the honey. Total amount based on taste and preference.

Allow the tea to cool to about room temperature. Use a funnel to transfer the tea to your fermenting vessel, flowers and all. You can strain the flowers out if you wish, but leaving them in really helps get their essence.

Add the lemon juice and raisins, then fill the jug up with cool filtered water, leaving about 3 inches of head space at the top.

Add the champagne yeast, cap the jug, and give it a few good shakes to combine everything. Remove the cap, fill the airlock with water to the line, then place it into the jug.&nbsp;In a few hours, or overnight, you should start to see bubbles.

Place the jug in a cool and dark corner of your house. Once the bubbles have almost completely stopped, it’s time to bottle. The time will be variable, 3-4 weeks based on the amount of honey used and ambient temperature.&nbsp;

Bottle the mead into swing top bottles for the best sparkling results. Let the bottles sit for another 2-3 weeks, then enjoy your lovely sparkling mead!

Mead, or fermented honey wine, is a delicious ancient fermented beverage and it&#039;s so easy to make! This elderberry mead, made with foraged berries, is a wonderful version of classic mead and perfect for the holidays. 

Elderberry Mead

Sanitize all of your tools and supplies you will be using to make this mead.&nbsp;

Put the elderberries into the crock and mashed them up a bit with a potato masher to get the juices flowing.

Add about a gallon and a half of cool water, along with a cinnamon stick and a few whole cloves to the berries in the crock.&nbsp;

Pour in five pounds of raw honey. Since the water is cool the honey won’t totally dissolve right away, but that’s ok.

Sprinkle the yeast on top of elderberry mixture. (Stirring isn't necessary.)

Cover the crock with a towel and put in quiet corner of your house. By the next day you should see some bubbling action.

Stir the berries down once a day.&nbsp;

After about a week, when the bubbles start to slow down just a bit, but are still going strong, rack the mead off of the berries into gallon glass jugs with airlocks. Use an auto siphon to transfer the liquid into gallon jugs.

Equal out the levels of mead, then add more honey water to top it off. This will help to reinvigorate the yeast and give them a little more to chew on. Then fill the airlocks with a little water to the line, and put them into the jugs.&nbsp;They should start bubbling away again pretty quickly. Let this go for several weeks until all signs of bubbling has stopped.

Once the bubbling has completely stopped, you can bottle the elderberry mead and age it for several months.
