One of our favorite sandwich recipes that brings back old-world diner charm with grilled onions, Swiss Cheese, and a homemade thousand island dressing.

Classic Patty Melt

mayonnaise (I like Dukes)

ketchup

onion

sweet pickle relish

smoked paprika

salt

black pepper

garlic powder

Worcestershire Sauce

rye bread

Swiss cheese (preferably Baby Swiss)

Butter

Pickles (optional)

In a small bowl, whisk together mayonnaise, ketchup, grated onion, pickle relish, and paprika.

Place 2 tablespoons butter in a nonstick skillet over medium-high heat. Add onions and cook until golden brown, approximately 10-15 minutes, stirring every few minutes. Plate the onions and cover to keep warm. For more caramelization, cook longer. 

Mix ground beef, Worcestershire Sauce, salt, pepper, and garlic powder. Divide into four equal portions and form patties. Preheat the skillet and cook over medium heat until golden brown and cooked through, flipping halfway through the cooking process.

Spread a little more than 1 tablespoon of dressing on each slice of bread. Place a piece of Swiss Cheese on each slice of bread. Add browned onions and one beef patty to four of the slices.  Top with the remaining slices to form four sandwiches.

Butter the top side of the bread and place butter side down in a skillet over medium-low heat and cook until golden brown.  Butter the other side of the bread before flipping. Flip and brown the other side until golden brown and the cheese is melted. It is helpful to cover the skillet with aluminum foil while it is browning.

Man I just love a good patty melt. This one is amazing too. Comfort food in a sandwich form.

How to Make a Patty Melt

chuck

Very lightly toast the bread to firm it up, then set aside.

Divide ground chuck into three equal portions and flatten each into a large rectangle, 1-2&quot; longer than the bread. (it will shrink during cooking) Then liberally salt and pepper each side of the meat.

In a large skillet set over medium heat, melt 2 tablespoons of butter and add onions. Saute until browned. Remove and set aside.

Set skillet to medium high heat and add 2 tablespoons of butter then add hamburger patties,  working in batches as needed. Flip once and cook until the patties reach your desired degree of doneness.

While patties are cooking spread 1 tablespoon of butter to exterior of each piece of bread and spread the inside of slice for each sandwich with mayo. Place buttered side down and add a slice of cheese to each slice of bread.

Place the cooked patty on the non-mayoed side of bread, top with onions, and cover with the mayoed bread.

Place patty melts in a clean skillet on medium heat and let cook until the toasted bread turns golden brown and cheese has melted, flip and repeat. Then serve immediately.
