A tasty homemade cabbage pierogi that is filled with fresh garden cabbage and has an unbelievable delicious flavor.  The simple pierogi dough is made with eggs, water, salt and flour.

Try these tasty pockets of dough filled with smooth and creamy mashed potatoes!

Pierogies

all purpose flour

water

eggs (beaten)

salt

¾ pounds baking potatoes

white onion (finely diced)

butter (divided)

½ cups cheddar cheese (finely shredded)

salt (to taste)

white pepper (to taste, or very fine black pepper)

onion (thinly sliced)

butter (or as needed for frying)

sour cream (optional,

Place flour in a large bowl. Add eggs, oil, salt, and 1 ½ cups of the water. Mix well to form a dough, adding more water if needed.

Knead the dough on a flat surface until smooth and pliable, about 3-4 minutes.

Cover with plastic wrap and allow the dough to rest for at least 30 minutes or up to 1 hour.

Dough

Peel potatoes and cut into 2" cubes. Place in a large pot of salted water and bring to a boil. Cook potatoes 15 minutes or until tender.

While potatoes are cooking, heat 2 tablespoons butter over medium-low heat. Add onions and cook until tender without browning.

Once potatoes are cooked, place in a large bowl and mash. Add onions, cheese, and remaining butter. Continue mashing by hand until potatoes are very smooth.

Filling

Using half of the dough, roll it out ⅛&quot; thick. Cut out circles of dough using a 3&quot; cookie cutter.

Place about 1 to 1 ½ tablespoons filling in each pierogi. Fold the dough over to form a semi-circle and pinch the edges closed. Place on a baking sheet.

Pierogies can either be cooked or frozen at this point.

Heat 3 tablespoons butter in a large skillet. Add sliced onions and cook on medium-low heat until tender. Remove onions from the pan and set aside for serving.

Bring a large pot of salted water to a boil. Gently add pierogies and cook until they float. Remove with a slotted spoon.

Transfer pierogies to a hot skillet (adding more butter if needed) and cook until browned on each side, about 5 minutes.

Serve warm with onions and sour cream.

To Cook

These pierogies are so delicious! The dough is soft and not too dense like most pierogies. Stuffed with a cheesy mashed potato and cheese mixture, you'll be addicted to these!

Homemade Pierogi Dough with Sour Cream

sour cream

unsalted butter (room temperature)

potatoes

cheddar cheese

black pepper

In a large bowl mix the flour and salt. Add the egg and stir to combine. (it won’t be much of a dough at this stage.)

Work in the softened butter and sour cream until the dough comes together in a rough, but slightly sticky ball.&nbsp;

Using just your fingertips, knead the dough until it is smooth, less sticky, but still and quite moist. Form the dough into a round ball and cover in plastic wrap. Refrigerate for 30-60 minutes.&nbsp;

While the dough is chilling combine the warm mashed potatoes, cheddar cheese, salt, and black pepper in a medium size bowl. Stir and mash until the cheese is melted and the filling is evenly combined. 

Roll half of the dough into 1/8” thickness. Using a 2-3 inch round cutter, cut circles out of the dough. Repeat with the other half of the dough.&nbsp;

Place 2-3 teaspoons of filling on each round of dough (more or less depending on the size of circle cutter you used.) Lightly wet your finger with water and wet the edge of half of the dough. Fold the dough over to create a pocket around the filling. Pinch the edges to seal, and then use the tines of a fork to create a stronger seal.&nbsp;

You have three options here: you can freeze the perogi (for up to 4 weeks), refrigerate overnight, or cook them right away.&nbsp;

Fill the Pierogi

Bring a large pot of water to boil. Once boiling add 1-2 tablespoons of salt to the water. Reduce heat to a simmer.&nbsp;

Place 6-8 pierogi in the simmering water. Once the pierogi float to the top, they are done.&nbsp;

Place the pierogi on a lightly buttered plate (so that they don’t stick).&nbsp;

In a skillet over medium to medium-low heat melt a few tablespoons of butter. Transfer the drained pierogi to the skillet and cook until browned and the edges crisped. Serve hot with a dollop of sour cream and a sprinkling of fresh chives.

Excellent!  Made them gluten free with Caputo Fioreglut.   No changes necessary.

Using sour cream is the best way to roll out the dough. I use cooper sharp cheese and the Idahoan instant potatoes, very tasty and easy!  Love your web site and will be following it.

These are great!  I doubled this and made a gluten free version.  In gf melted butter worked better. I used Bobs Red Mill 1:1. I also added a little milk to the dough. (Some of the other recipes I’ve read use milk or water. ) when cooking the gf it is better to first steam them so they stay together. Finished all with the traditional butter and onions. 

Can I put this dough through a pasta machine?

Tried many pierogi doughs...yours is the best...easy to roll...doesnt stick to counter as many do ( even after dusting with flour) and is nice and soft...others tend to be tough.  This will definately be my "go to" recipe.
