Southern Pimento Cheese Recipe

(8-ounce) sharp cheddar cheese (shredded)

(8-ounce) mild cheddar cheese (shredded)

(8-ounce) package cream cheese (softened)

pimentos

salt

black pepper

mayonnaise or Greek yogurt (optional)

Cream together cheddar cheese with the softened cream cheese until well combined.

Stir in pimentos and salt and pepper.

If you prefer your pimento cheese to be a bit thinner for spreading, add in optional mayonnaise, Greek yogurt, or liquid from the diced pimentos to preference.

Southern Pimento Cheese Recipe - Add A Pinch

Classic Homemade Southern Pimiento Cheese with simple ingredients of cheddar cheese, pimientos, and mayonnaise can be whipped up in just minutes!

Pimiento Cheese

cheddar cheese (grated)

pimiento (well drained)

mayonnaise

salt and pepper

Grate the cheddar cheese.

Add the pimientos, mayonnaise, salt, and pepper.

Using a fork, mix all ingredients together.

Homemade Pimento Cheese (without cream cheese)

onion powder

Put all the ingredients into the bowl of a stand mixer and beat on medium until the cheese softens up a bit and the pimentos mash in--about 3 minutes.&nbsp;

You can also blend this mixture by hand with a mixer or stir it vigorously with a wooden spoon.&nbsp;

Cover and refrigerate overnight before serving.&nbsp;

Pimento cheese is a classic Southern cheese spread made with simple ingredients that, when combined, is hard to resist. If you can't find pimento you can substitute roasted red peppers. This recipe is heavy on the cream cheese which makes the dip extra creamy, but you can easily customize the amounts to suit your own tastes.

Pimento Cheese Dip

sharp cheddar cheese, shredded

cream cheese,

pimento

Place half of the shredded cheese in a food processor. Add the cream cheese, mayonnaise, peppers, and salt. Process until combined and smooth.

Transfer the mixture  to a bowl, add the rest of the shredded cheese, and stir to combine. Cover the bowl and chill the pimento cheese for at least an hour or so to allow the flavors to develop.

I add a tsp of Hablanero or Tobasco Sauce. I also add a heaping T of dehydrated red and green bell peppers. I use a whisk to blend cheese , cream cheese and mayo as to not make it a creamy texture.

I also omit the salt since Tobasco has salt.

I turned it into a 5 star as soon as I replaced the Hellman's with Duke's

I made this for a Southern Bell Birthday luncheon, and everyone loved it.  I just added a little Cayenne to it. Thanks for sharing!

This classic Southern Pimento Cheese is sure to be the hit of your next party.  To take it over the top, serve in little steamed red potatoes.

(8 ounce) box cream cheese

mayo (preferably Duke's)

cheddar cheese

white cheddar cheese

dry mustard

cayenne pepper

Worcestershire sauce

mirin (optional)

Salt and pepper

In a stand mixer, using a paddle attachment, beat cream cheese and mayonnaise until smooth and creamy. 

Add the cheddar cheese, garlic powder, onion powder, dry mustard, cayenne pepper, Worcestershire sauce, and mirin (optional); beat just until blended.

Stir in the pimentos. Season with salt and pepper to taste.

Refrigerate until 30 minutes prior to serving.

We love this, I must admit I usually buy dips but this was so quick and easy! So flavorful!

Pimento Cheese

Grate cheese into large bowl using small side of grater or food processor.

Drain pimentos and add to cheese.

Sprinkle the cayenne (start with 1/4 or 1/2 teaspoon and taste after mixing) and black pepper over the cheese.

Stir in 1/2 cup of mayonnaise. You may decide to add an additional 1/4-1/2 cup depending on how creamy you like it. Mix well and taste.

Add more mayo, cayenne, and a little salt if needed--usually don't need salt as cheese is salty.

It’s me again…I use my grandmother’s old cast iron hand crank food grinder. One to grate the cheese, and again to thoroughly blend before adding the mayonnaise.

Not having made pimento cheese for a long while, I was sure I must have made a recipe card, but evidently I always just made it and never wrote it down. At 70, I seldom cook unless it's something I can't get made properly anywhere else, and if you look for them there are some pretty decent pimento cheese places around. I couldn't remember my pimento-to-cheese ratio and was so shocked when I went online and couldn't find the delicious, basic, unadulterated pimento cheese recipe. I've already been disgusted while eating out at the addition of onion, but now I know the addition of cream cheese is what has been wrong with those thick, tasteless ones, I kept being served. Not for me. Thank-you again for helping me with my recipe. (By the way, though it wouldn't work well in large batches, I like it better when the cheese, Duke's, pimento, and pepper(s) are tossed together with a fork rather than thickened in a blender.) Yum!
