Outstanding 7 layer rainbow popsicles! Make your own homemade rainbow popsicles with lots of fresh fruit!

Rainbow Popsicles

banana

greek yogurt (vanilla

raspberries

strawberries

water

peaches

orange

mango

bananas

pineapple

(or more spinach)

blue food coloring

mixed berries

beets

Place all the ingredients in a blender and blend until smooth. Add more liquid to help it blend if it's too thick.

Transfer the smoothie to a bowl or container, rinse the blender and prep the next smoothie.

FOR EACH SMOOTHIE

Carefully layer each color smoothie in a popsicle mold in rainbow order.

Layering the smoothies in the mold is easy. Use a spoon or tablespoon to scoop the smoothie mixture into the mold. It’s natural for the layers to blend a bit, but I have noticed that spooning the smoothies into the mold versus pouring the smoothie in from a glass leaves better results.

Once the molds are filled, add the sticks and freeze the popsicles overnight.

To get the popsicles to release from the mold, fill your kitchen sink with room temperature water. Place the mold in the water, making sure the water does not go above the top of the mold.

Allow the mold to sit in the water for a few seconds.

Begin to wiggle a popsicle free. If it feels tough, allow them to set in the water a few more seconds.

Once all of the popsicles are removed from the mold, enjoy or wrap the extras in plastic wrap and return to the freezer.

How to Make Homemade Popsicles

Mix: Mix your ingredients and pour into molds according to the popsicle you want to make:Berry Lemon: Combine all ingredients in a blender until smooth. Pour into molds.Rainbow Fruit: Distribute fruit into molds. Combine coconut water and honey, then pour into molds, tapping on the counter to remove air pockets.Berries and Cream: Puree berries until smooth (add a touch of water or juice if needed to get things moving). Stir together yogurt, honey, and vanilla. Spoon berries and yogurt into molds in alternating layers.Coconut Lime: Stir together all ingredients. Pour into molds.Sneaky Spinach: Combine all ingredients in a blender until smooth. Pour into molds.

Freeze: Insert popsicle sticks and freeze until hard, at least 4 hours.

Unmold: Run mold under warm water for a few seconds to loosen, then remove pops from the molds.

Tropical Fruit Popsicles (No Added Sugar)

watermelon

Tbsp lime juice

At least 4-6 hours before you wish to enjoy your popsicles, add all ingredients to a blender and blend on high until smooth and frothy. Taste and adjust, adding more watermelon or coconut water for sweetness or more lime for brightness.

Add the mixture to a popsicle mold (we used this one) and add popsicle sticks. Freeze until firm — about 4-6 hours. To remove from molds, let thaw slightly by setting at room temperature for 10 minutes or dipping mold in warm/hot water to help loosen.

Popsicles will keep in the freezer for 1 month.

In a medium bowl, stir together the yogurt, sugar, and banana pudding mix until combined and smooth.

Scoop equal amounts between 6 popsicle molds. Top with crushed Oreo cookies or Nilla wafers.

Insert popsicle sticks or straws into each mold- sticking straight up.

Freeze for at least 4 hours or overnight.

Easy Strawberry Popsicles (with Greek Yogurt)

Combine all ingredients in the bowl of a food processor or blender and grind until well combined, about 10 seconds, stopping to scrape down the sides of the bowl as necessary. Taste and adjust sweetness if needed.

Divide the yogurt mixture evenly among reusable popsicle molds.

Freeze for at least 4 hours or overnight before serving. Run popsicle molds under warm water briefly to help loosen. Serve.

Store any remaining pops in a freezer bag with as much air removed as possible for up to 3 months.

Just made these! I imagine the popsicles will be great, but it’s too sweet if you drink the extra 🫠 just a word of caution. I wish I had tasted it before adding the honey. My strawberries were really sweet to begin with.

Has anyone tried them with dairy free substitutions like cashew yogurt? I made them for my daughter, however I have a dairy and soy allergy.

Love this! For storage do we take it out of the mold and store it in freezer bags? Can we just leave it in the mold or will that cause freezer burn?

Spectacular. I could have just drank the liquid as a strawberry drink rather than turning into yogurt pops. I thought my fruit was sweet enough (I included some frozen banana too) so I only added a tablespoon of maple syrup, but realized after they froze that some additional sweetener would have been better. I'll put in closer to the amount in the recipe next time to see how it comes out. The lemon gives it a nice little kick to make them extra refreshing.
