Seeing the reviews, I was hesitant to make this. We are vegan and have tried many variations of ratatouille. However, I think the difference is having FRESH ingredients. We purchased our ingredients at the market this morning. I added slightly more salt, more cherry tomatoes. Key: Taste your dish while you’re cooking it, and adjust what you need. Use this recipe as a blueprint and adjust to your taste. Ultimately, it was fantastic. We were very happy with it, and we are looking forward to leftovers! Add bread with a bit of herbed butter on the side!

I absolutely love this recipe just the way it is.   As I cook for just myself the beauty of it is i can add or subject quantities as desired.  
Sometimes I use this ratatouille mix to make a delicious vegetable lasagna.

My family loved it! I don’t know why the other reviews are so bad, it was flavorful and the consistency was good.

As is, this wouldn’t be good. Directions should state heat levels. I’m glad I’ve made ratatouille before and know how to cook; therefore, I made some changes. I heavily salted the eggplant and let it sit for an hour before rinsing and drying it very well. When cooking the onions and peppers, I added the crushed red pepper, oregano, and 1 T. dry basil to replace the fresh. I tripled the tomato paste. No where does it state how to prepare the garlic, so I minced them and added it with the zucchini. The vegetables were nicely cooked in the end, but this was still sadly lacking flavor. Will not make again.

The 3 stars are because this is NOT a keto friendly recipe. Had it been id have given 4.   The ratio between carbs, protein and fats are not keto (29.3 g, 3.9 g, 1.3g per serving respectively). I substituted spaghetti squash for the eggplant as it has far less carbs. I added portobello mushrooms and used fresh lemon juice (2oz) and water (2oz) to replace white wine to deglaze. I also substituted 1c organic, no sugar marinara for the tomato paste and added 1 tsp Swerve ( monkfruit/stevia) brown sugar.  I Used fresh oregano and doubled the amount of the herbs. After sautéing I cooked for 5 minutes in the instapot.  The flavor was fantastic!!

We have never had Ratatoullie before and I made this without reading the other reviews.  We didnt really like it, it tasted bitter.  I added 2 more tablespoons of tomato paste and cooked it a bit longer and this improved the flavour somewhat, but we probably wouldn't cook this again.

I've made this dish many times and have always loved it. I've always been so confused about some of the reviews left on here. As long as you season to YOUR taste and taste along the way, there's no reason for this recipe to turn out anything other than wonderful. I think most of the reviews that mention bitter taste is because they don't let their eggplant sweat long enough. While yes this recipe states 20 minutes, which is enough time, leaving it out for longer to sweat will help with any excess bitterness that may come through. I typically let my eggplant be for 15-30 minutes and it's always a lovely dish.

Ratatouille To each his own this recipe is not one I’m saving but most importantly I was trying to dig up a keto friendly/ veggie dish for the mother in law but this recipe is filled with nightshades. It’s not a deal breaker in a pinch but I’m not shopping for a wiff at keto and a ground out to first in the vegetarian department.

I followed recipe exactly and it turned out the worst meal I have ever had. It tastes bitter and the consistency is that of slugs. If you’re trying to make a healthy dish, keep looking. This is not what you are looking for

This recipe got so much wrong. Bad instructions, bad flavor building, bad flavor... It’s not a ratatouille it’s a side dish of cooked veggies... That still sucked.

I like mine with more tomato sauce, but excellent with baguette.

Do you prefer Italian eggplant or Chinese eggplant?

In a colander fitted over a large bowl, toss eggplant with 1 teaspoon salt. Set aside and let sit for at least 30 minutes, then squeeze off excess moisture and pat dry with paper towels.

Meanwhile, in a large pot over medium heat, heat 1 tablespoon oil. Add onion and 2 cloves’ worth of garlic, and season with ¼ teaspoon each salt and pepper. Cook until onions turn translucent, 5 to 6 minutes. Add bell pepper and cook, stirring occasionally, until softened, 6 minutes. Transfer bell peppers and onions to a large bowl.

Add 1 tablespoon more oil to pot and 2 cloves more garlic, zucchini, and rosemary. Season with ¼ teaspoon salt and pepper each and cook, stirring often, until zucchinis soften and turn golden, 8 minutes. Transfer zucchini to onion bowl.

Add 1 tablespoon more oil to pot and 2 cloves more garlic, prepared eggplant, and thyme. Cook, stirring often, until eggplants turn golden and translucent, 8 minutes. Transfer eggplant to the onion bowl.

Add final 1 tablespoon oil to pot and all remaining garlic, diced tomatoes, sugar, and ¼ teaspoon each salt and pepper. Cooking, stirring often, until tomatoes begin to break down and caramelize, 6 to 8 minutes.

Add crushed tomatoes, sliced basil, and all reserved cooked vegetables back into the pot and bring to a simmer. Reduce heat to medium-low and continue stirring until vegetable textures begin to melt together, 8 to 10 minutes.

Serve with bread, topping more with basil before serving if desired.

This One-Pot Ratatouille Makes The Most Of Summer Produce

- Ratatouille is a vegetarian dish originating from France in Nice. And if you're a fan of vegetables cooked until they're creamy and soft and tender, this one is for you. Variations of the combination of vegetables exist throughout different regions, but our version includes tomatoes, eggplants, bell peppers, onions, zucchinis, lots of garlic, and fresh herbs. For tomatoes, I recommend going with in-season beefsteak or farmer's market tomatoes for the best flavor possible, but you can also use canned. I also recommend going in with a cup of crushed canned tomatoes for that nice creamy consistency and sauce-like texture. When it comes to choosing your eggplants, I really highly recommend going with a Chinese or Japanese eggplant. They tend to be silkier and creamier when cooked, really, really nice and tender, and much less astringent than your Italian eggplants. However, if you only have Italian eggplants, go with the baby small ones. They tend to be a lot more tender than the huge honkers. If you have farmer's markets near you, fairytale eggplants, when in season, are delicious, too. This dish originated as a peasant dish, meaning if you have imperfect produce, this is the perfect time to use them up. To begin, you're gonna fit a colander over a bowl. Then you're going to chop up your eggplants into half-inch pieces, nice little cubes. I'm using about a pound of eggplant here. You can feel free to mix and match the types of eggplant you have on hand. Whatever you do, place them in your colander, toss them with about a teaspoon of kosher salt, and make sure you're going to mix it all together so that the salt is covering every piece. We're going to let the eggplant sit with the salt for about half an hour while we continue with the rest of the recipe. In this half hour, you will start to see the salt draw out the water, eliminating some of that bloatiness and squeakiness from eggplants. Once your eggplants have sat for about half an hour, you're gonna go ahead and gently squeeze out any excess moisture that is leaking out. And you're going to pat it dry with paper towels. Meanwhile, in a large Dutch oven or pot, place it over medium heat, add one tablespoon of olive oil, then add your onion and two clove's worth of chopped garlic, along with a quarter teaspoon of salt and pepper to season it. At every stage of this cooking process, make sure you are replenishing that oil as much as you need because there is no fat in these veggies, and oil means flavor, so don't skimp out on it. Cook this until the onions turn translucent and golden, and then add your chopped bell pepper and cook, stirring occasionally until the peppers turn soft. As you cook these veggies, fond and that brown goodness will develop on the bottom of that pot. If you see a spot that's getting super dark, just turn it around on your burner and distribute that heat. As long as you keep stirring, don't worry about it too much. When the tomatoes go in, it will deglaze all of that deliciousness. Transfer your peppers and your onions to a large bowl and set aside. We're going to return our pot to medium heat, adding one more tablespoon of oil and moving on to our second veggie, which is zucchini. We're gonna add to the pot two clove's more of garlic, zucchini, and some chopped rosemary. Because we wanna make sure that every piece of the vegetables you are cooking in this recipe is seasoned, we're gonna go in with quarter teaspoon more of salt and pepper each, just to make sure every batch of veggie is perfectly seasoned. Keeping in mind that your eggplant is plenty salty, you wanna make sure that each batch of veggies is seasoned, but not too salty. We're gonna go ahead and stir the zucchinis until they start turning golden. This might take about eight minutes. Once they look a little bit translucent and slightly golden on the edges, transfer them out into your bowl holding the peppers and the onions, and move on to your third vegetable. Your eggplant should now be drained of a little bit of water. Go ahead and pat it dry with some paper towels, squeezing out any excess moisture that you see. And then we're going to heat up one more tablespoon of oil in that pot. Add in two more cloves of chopped garlic, along with your squeezed eggplant and some thyme leaves. You're gonna cook this, stirring quite often until your eggplants turn golden and translucent, 8 to 10 minutes. You're gonna transfer those straight into your onion bowl. And finally, we're gonna cook our tomatoes. You're gonna add one final tablespoon of oil to the pot. You're going to add in all remaining garlic, your diced fresh tomatoes, a little bit of sugar, and a little extra salt and pepper. Cook this mixture, stirring quite often, until the tomatoes start breaking down and caramelizing just a little. Once your tomato starts looking a little dehydrated and super flavorful, add in your cup of crushed tomatoes, add in your sliced basil, and any reserved vegetables in that bowl back into the pot. Bring the whole mixture up to a simmer, reduce your heat to medium low, and continue stirring until the vegetables' texture start breaking down and melting into each other. Be patient, don't rush the process, and just let that gentle motion of stirring do its thing. Once it starts looking creamy and very, very spreadable, turn off the heat. You are ready to serve. Now it's totally up to you what you wanna serve it with. You can serve it with pasta or noodles, you can serve it with rice, or my favorite, crusty bread. It can be toasted. It can be buttered. It can be whatever you want. You basically want some sort of carbohydrate vessel to carry that sauce into your mouth. If you'd like, add a touch of basil on top, and it's perfect. For fans of mushy things like me, this might just be a little bite of heaven. The texture is soft but present. The sauciness is just right so that it sinks a little bit into the bread without sogging it up with the basil and the rosemary and the thyme, the hint of spiciness from black pepper, perfectly seasoned vegetables. This... Best of all, ratatouille is one of those things that tastes better the day after, so if you wanna make this one day ahead, slide it into the fridge and heat it up the next day.
