A homemade version of one of your favourite childhood snacks!

Homemade Strawberry White Chocolate Pop Tarts

strawberries

honey (or granulated sugar)

juice of 1 lemon ((about 3 tablespoons))

flaky sea salt

white chocolate chips (optional)

white whole wheat flour flour

old fashioned oats

salted butter

egg, beaten

1. To make the strawberry jam. In a medium pot, bring the strawberries, raspberries, honey, and lemon juice to a boil. Boil 8-10 minutes or until the mixture has thickened and becomes jam-like. Stir in the vanilla and a pinch of salt. Let Cool. Makes about 2 cups jam.2. To make the crust. In a food processor or blender, combine the flour and oats and pulse until the oats are mostly ground. Add the butter and pulse until the mix clumps together to form pea size balls. Add cold water, 1 tablespoon at a time until the dough comes together and forms a ball. Don&#039;t add more than 1/2 cup water. 3. Turn the dough out onto a flour surface. Roll out into a 1/8-inch thickness. Cut the dough into rectangles, about 6 1/2 x 4 1/2 inches. Place a heaping tablespoon of the strawberry jam on one half of the rectangle, adding a white few chocolate chips, if desired. Lay the other half of the dough over the filling and seal the edges by crimping with the back of a fork. Repeat until you have used all the dough and jam. Place the pop tarts on parchment lined baking sheets. Cover the baking sheets and place in the fridge for 30 minutes to 1 hour.4. Preheat the oven to 400 degrees F.5. Brush the tarts with the beaten egg and bake the pop-tarts for 10 to 12 minutes. Let cool slightly.6. Meanwhile, in a medium bowl, whisk together the melted white chocolate, powder sugar and 2 tablespoons milk, adding extra milk to thin the glaze as desired. Drizzle the glaze over the pop tarts. Decorate as desired.

Cook the potatoes in boiling, salted water for 5-8 mins until tender, but still holding their shape. Meanwhile, melt the butter in a large saucepan. Add the leeks and thyme and soften for 10-12 mins. Drain potatoes and add to the leeks with the mustard and plenty of seasoning. Stir in the cream and leave to cool a little.

Heat oven to 180C/160C fan/gas 4. On a floured surface, roll out the pastry to the thickness of a £1 coin. Use a side plate or a bowl as a template to cut out 6 x 15cm circles. Mix the cheese with the leek mixture and pile a mound of the mix onto the centre of each pastry circle. Brush around edges with a little egg, then bring edges together and crimp with your fingers to seal.

Place pasties on a baking tray lined with baking parchment, brush with the remaining egg and bake for 40-45 mins until golden brown. Serve warm or leave to cool.

Salty Churro Toffee Snack Mix

Oyster Crackers

brown sugar

cinnamon

vanilla

salt

Preheat the oven to 350°F/175°C. Line a baking sheet with foil. Set aside.

Pour the oyster crackers in a large bowl and set aside.

In a medium saucepan combine the butter and brown sugar. Stirring consistently bring the mixture to a boil and boil for 2 minutes. Remove the mixture from the heat and stir in 1 1/2 teaspoons of cinnamon and vanilla. Pour this immediately on top of the crackers. Use a rubber spatula, stir and coat the crackers evenly with the mixture. Spread the crackers evenly onto the prepared baking sheet.

Bake for 10 &#8211; 15 minutes until bubbly all over.

While the crackers are in the oven combine the granulated sugar, cinnamon and salt. Set this aside.

When the crackers are done remove the pan from the oven and sprinkle immediately with the salty cinnamon sugar mixture evenly.

Let the crackers cool and then break into pieces.

Serve immediately or store airtight for up to a week.

What I love about this recipe is that it just works. When it came out of the oven, with all the sauce and crackers stuck together, I assumed that I’d just be breaking it up into chunks. I was thrilled to discover that it easily broke up into individual crackers, once cooled. 

Next time you m gonna play with flavors a bit and maybe do more of a mix with the oyster crackers, then maybe some mini pretzels, pecans, etc. Also may add a little cayenne pepper for a little heat… love sweet, savory, hot in one bite.

It turned out really good but next time I'm going to add some red pepper to kick it up and counter the sugar.

Adapted from Cooking Light Magazine, these homemade snack bars are gaining popularity with an egg white for binding. We made them an almond and apricot flavor. These are officially my oat-loving 8th grader&#39;s new obsession! With no refined sugars, they are so much healthier for you than store-bought bars.

Homemade Snack Bars (Dairy-Free)

oats

almonds

apricots (chopped (or use raisins))

peanut butter

honey

coconut oil

vanilla extract

Preheat oven to 350 degrees F. Line a square (8X8 or 9X9) baking dish with parchment paper.&nbsp;

Combine the oats, almonds, and dried apricots in a large bowl.

In a small pot over medium-low heat, mix together the peanut butter, honey, coconut oil, vanilla,&nbsp;and salt until smooth.

Pour the peanut butter mixture over the oat mixture and stir to combine. Mix in the egg white.&nbsp;

Press the mixture very firmly into the prepared baking dish. If it's not packed tightly the bars will crumble! Bake until it begins to turn golden brown around the edges, 20 to 25 minutes.

Cool on a wire rack, then lift out of the baking dish with the parchment paper. Cool completely (to avoid crumbling) before cutting into squares. Store at room temp.
