My Homemade Chili Powder is a combination of chiles with oregano and spices ground to a powder. Easy to make and fresh is always better then store bought!

Homemade Chili Powder

dried Ancho chiles

oregano oregano

garlic powder

tsp cumin

tbsp Chimayo chili powder ((optional))

In a skillet toast the dried ancho chili pods for a few seconds on each side over high heat until slightly fragrant and they start to puff up a little. Let them cool and remove the stem and shake out any seeds. The more seeds the hotter it will be.

Use a food processor, spice grinder or like I do, my Vitamix and pulverize cooled chiles into a powder. Work in small batches if using a spice grinder.

Add the Mexican oregano (regular oregano works fine too) and garlic, cumin powders and Chimayo chili powder (optional). Pulse several times to combine and blend. Store in an airtight container. Makes 1/2 cup total.

A warm and earthy seasoning rich with cumin, pepper, paprika and Middle Eastern spices and sesame seeds. Perfect on roasted meats, as a dry rub and seasoning. This makes about 1 1/4 cups total.

Turkish Spice Blend

tbsp cumin seeds

tbsp peppercorns (each)

oregano

Turkish bay leaves

cilantro

salt

tsp sweet paprika

tsp sumac

cayenne pepper

tbsp sesame seeds

In a small sauté pan toast the cumin and peppercorns until the seeds start to pop, several minutes. Do not burn. Remove from pan and place in spice grinder with oregano, Turkish bay leaves and grind until powder.

Add the chopped cilantro to the sauté pan and gently toast and dry over low heat slightly until dried.&nbsp;Do not burn.

In a small bowl mix the ground spices with the kosher salt, paprika, sumac, cayenne pepper, sesame seeds and dried cilantro. Store in a airtight container.

Prudhomme's Seafood Seasoning (Copycat Recipe)

¼ tsp paprika

tsp salt

onion powder

tsp ground cayenne

tsp black pepper

tsp coriander

tsp leaf oregano

tsp leaf basil

tsp leaf thyme

Mix thoroughly to combine the mixture and bottle in airtight containers.

Coat your meat in 2-3 tablespoons of melted butter and then dredge in spice blend all over. Cook per you recipe.

This quick blend of seven pantry spices is a thrifty alternative to the store bought taco seasoning packets and a healthier option too because you control the ingredients.

Homemade Taco Seasoning

tsp Chili Powder

tsp Cumin

Paprika

Salt

tsp Onion Powder

tsp Dried Oregano

tsp Ground Cayenne Pepper

Combine all ingredients and store in a shaker jar or other small jar with a cover.

Sprinkle on foods as needed, or use 1-1/2 to 2 tablespoons to replace a packet of store bought taco seasoning.

This Kansas City Style Dry Rub is true to the traditional versions with a two to one ratio of brown sugar to paprika as a base then the typical pantry spices like garlic, onion  and chili powder as well as cayenne to balance it all out with salt and pepper.

Whisk together the ingredients and store in an airtight container. Makes a little more than 1 cup.
