Homemade Turkey Gravy

Turkey drippings from the bird

chicken or turkey stock

butter

flour

shallot, finely chopped

garlic,

fresh sage (or 1/2 teaspoon dried sage)

fresh thyme (or 1/2 teaspoon dried thyme)

fresh rosemary (or 1/2 teaspoon dried rosemary)

Pour the turkey drippings into a large measuring cup and let it rest until the fat comes to the top. Spoon off most of the fat and discard. Add enough stock to the measuring cup to equal 4 cups of stock/drippings combined.

Place the roasting pan you used for the turkey on the stove over medium high heat. Add the butter to the roasting pan and scrape up any brown bits that are stuck to the bottom of the pan.

Add the flour to the pan and whisk everything together until you form a roux. Continue to whisk until the roux is a dark brown color and fragrant. Add the stock/dripping mixture to the roux and whisk to combine.

Turn the heat to high and bring the liquid to a boil while still stirring. Once the liquid reaches a boil, reduce the heat to medium and stir occasionally until the gravy is as thick as you&#039;d like it.

Once the gravy is thick, serve it immediately or keep it over very low heat until you are ready to serve. If the gravy develops a thin film on the top, just give it a quick whisk. Adjust salt and pepper if needed, but be sure to taste first as the drippings can be salty and you might not need any excess salt.

Turkey Gravy with Drippings

In a medium saucepan over medium heat, melt butter. Add the shallot and cook until soft, 5 minutes, then stir in garlic and cook until fragrant, 1 minute more. Stir in herbs and cook for 1 minute. Add the flour and cook until golden brown. Then gradually whisk in 2-3 cups of stock. Bring mixture to a boil, then reduce heat slightly and simmer until thickened, about 5 minutes. If the gravy is too thick, add more broth to smooth.

Turkey Gravy without Drippings

This homemade turkey gravy recipe with pan drippings utilizes aromatics, fresh herbs, and white wine for a flavorful gravy to go with your Thanksgiving meal. This easy turkey gravy recipe can also be made ahead, to save precious time on Thanksgiving.

Turkey Gravy

unsalted butter

shallot

sage leaves

thyme leaves

dry white wine

In a saucepan, over medium heat, add 3 tbsp unsalted butter. Once melted, add in the chopped thyme, sage, and shallot. Stir to combine and allow the herbs and shallot to infuse and cook for 5 minutes, stirring frequently.

Add white wine and allow to reduce by half, about 4 minutes. Once reduced, sprinkle the flour over the top and stir until flour is fully incorporated. Add in the turkey stock and 2 tbsp of the pan drippings from roasted turkey (if making ahead of time, omit pan drippings until turkey is roasted).

Once the stock is added, whisk until all clumps are removed. Since the pan drippings are salty, no need to add additional salt. Add freshly ground black pepper and lower the heat to low. Allow to simmer for 15 minutes for flavors to meld. If you want a thinner consistency you can add more stock or water.

You can serve right away along side your dinner or if you're making ahead of time, allow to cool and store in an airtight container.

If made ahead of time: If you made the gravy ahead and want to add pan drippings, return the cold turkey gravy to a saucepan. Over low heat, so you do not burn it, allow it to warm. Once warmed, add a tablespoon or two of your pan drippings to taste, and whisk to integrate into the gravy.

This incredibly easy recipe makes the BEST Homemade Turkey Gravy that I have ever had. Once you learn how to make turkey gravy from scratch rather than using a packet, you will never go back!

Homemade Gravy for Turkey

butter or fat (from off the top of the drippings)

Reheat the drippings or broth so they are warm. Skim off 1/4 cup of fat from the top of the drippings and set aside. Discard the remaining fat, reserving the drippings and adding enough broth or water to make 2 1/2 cups of liquid.

Heat the fat (or melt an equal amount of butter) in a large pan over medium heat. Sprinkle with the flour, whisking it in and cooking for 1-2 minutes until lightly browned to create a roux.

Gradually add the warm drippings or broth to the roux, whisking constantly to avoid lumps. It will thicken almost immediately at first, then thin out as more and more liquid is added.

Once all of the drippings or broth have been added, continue to cook and stir frequently for 5 to 10 minutes until thickened to your liking. If the gravy gets too thick, thin out with a little addition broth or water. If it is too thin, make a slurry with 1 teaspoon of cornstarch and 1 tablespoon of water and whisk that into the gravy, letting it cook for another minute or two to thicken up.
