This Homemade Vanilla Pudding is a simple dessert to make. Dress it up with some fresh cut fruit and homemade whipped cream for an extra special treat!

In a large saucepan combine the sugar and cornstarch until smooth and has no lumps.  Stir in the milk and cream until well combined.  Set aside.

In a medium sized bowl gently beat the eggs until combined.  Set aside.

Place the saucepan of milk and sugar on the stove and cook over medium to medium low heat.  While cooking whisk constantly to prevent any lumps.  Cook while whisking until it starts to thicken and remove from heat.  Pour at least half of this mixture in a steady SMALL stream into the beaten yolks.  While you are pouring whisk constantly to prevent your yolks from scrambling.  This process is called tempering.  Now you may pour the egg mixture back into the saucepan.

Return this to the heat and cook until it has thickened into a nice pudding like consistency.  It will also thicken a little more as it cools.  Remove from heat and stir in the butter and vanilla.  Place in a heat safe container and cover the top with plastic wrap.  (place the plastic wrap directly on top of the pudding) This will help prevent a skin from forming on top of the pudding.  Refrigerate for at least 2 hours before serving.

This homemade vanilla pudding is perfect for a simple dessert. You can also use this pudding in your banana pudding or to make a pie. Delicious!

Old Fashioned Vanilla Pudding

(12 ounce) can evaporated milk

Mix milk, salt, egg yolks, cornstarch, sugar and vanilla in a pot on top of the stove with a wire whisk.  Cut butter into small pieces and add to the pot.

Cook on medium high heat until comes to boil and thickens stirring constantly with whisk. It will burn easily, so keep stirring.  I cook mine about 4 or 5 minutes in all.

You should be able to tell when it starts bubbling and gets thick.  Pour into serving dishes.  Let cool in refrigerator.

Sprinkle on nutmeg or cinnamon and fruits of your choice for toppings. Makes about 4 servings.

Delightful...!  Just made it for the second time. (I like to use just a little over 1/4 cup sugar -- and also add 1/4 tsp almond extract.)

With simple ingredients and minutes of prep, homemade vanilla pudding puts boxed mixes to shame. It is rich, creamy, silky, and surprisingly simple to make.

Vanilla Pudding Recipe

In a medium saucepan whisk together sugar, cornstarch, and salt. VERY slowly drizzle in 2 cups whole milk, whisking to combine. Add 2 large egg yolks and whisk again until everything is combined.

Cook the milk mixture over medium-low heat, whisking every minute or so, until bubbly throughout and the mixture begins to thicken. This will take about 6-8 minutes. Once bubbling, whisk and cook for 1-2 minutes to begin to thicken. Once the mixture coats the back of a wooden spoon, you know it is just the right consistency.

Remove from the heat, and using a wooden spoon or spatula, stir in vanilla and butter.

Place a fine-mesh strainer over a large mixing bowl and pour the pudding through the strainer.

Cool for 5 minutes then transfer the pudding to individual serving dishes.Top each with a layer of plastic wrap touching the top of the pudding to prevent a skin from forming.

Chill for 30 minutes before serving as desired.
