With swirls of cinnamon brown sugar filling and irresistibly sweet icing, this easy honeybun cake recipe is like a cinnamon roll in cake form!

Honeybun Cake

½ cup soy milk (360 ml)

apple cider vinegar (15 ml)

all purpose flour (375 grams)

cornstarch (32 grams)

baking soda

baking powder (12 grams)

salt

turmeric

vegan butter (113 grams)

sugar (346 grams)

oil (60 ml)

vanilla (10 ml)

sour cream (80 grams)

brown sugar (106 grams)

cinnamon

soy milk

chamomile tea bag

sugar (240 grams)

vanilla

maple syrup

Preheat the oven to 350ºF. Spray a 9x13 baking dish with cooking spray.

Combine soy milk and apple cider vinegar. Stir and set aside for at least 5 minutes.

Prepare the filling by combining brown sugar and cinnamon in a small bowl. Stir until evenly mixed. Set aside.

Sift the flour, cornstarch, baking soda, baking powder, salt and turmeric together in a large bowl. Set aside.

In the bowl of an electric mixer, combine the vegan butter and sugar. Beat on medium speed for 3 minutes. Scrape down the sides.

Add the oil and beat for another 1-2 minutes until the mixture is light and fluffy.

Combine the soured milk, sour cream, and vanilla together in a medium bowl and whisk until smooth.

Add the wet ingredients to the butter mixture and beat for 60 seconds. It may look curdled, but that is okay.

Turn the mixer to the lowest speed and add the flour. Mix just until combined. The batter will be thick like frosting.

Scoop 2⁄3 of the batter into the prepared pan.

Sprinkle half of the filling over the batter covering the whole pan in an even layer.

Spoon the remaining batter on top of the filling. Top the cake with the remaining filling. Use a butter knife to swirl the filling around on the batter.

Bake in the preheated oven for 35-40 minutes or until a toothpick inserted comes out clean.

While the cake is baking, warm the milk for the icing for about 30 seconds in the microwave. Add the tea bag to the warm milk and let it cool while the cake bakes.

Remove from the oven and cool in the pan. Immediately begin preparing the icing.

Combine all of the icing ingredients together in a small bowl and whisk until smooth.

Pour over the warm cake and spread to the edges.

Honey Bun Cake

(160 g) packed light brown sugar

flour

baking powder

(1 stick, 113 g) unsalted butter (softened to room temperature)

(120 mL) canola oil ((other neutral-tasting oil))

(400 g) granulated white sugar

eggs room temperature

vanilla extract

½ cups (360 mL) buttermilk

½ cups (170 g) powdered sugar

Tablespoons honey

unsalted butter (melted)

milk

Preheat and prepare pan. Position a rack in the center of the oven. Preheat oven to 350°F (180°C). Grease a 9x13 cake pan.

Make filling. In a small bowl, stir together brown sugar and cinnamon. Set aside. ¾ cup (160 g) packed light brown sugar 2 teaspoons ground cinnamon

Combine dry ingredients. In a mixing bowl, whisk together cake flour, baking powder, and salt. Set aside. 3 ¼ cups (390 g) cake flour  1 tablespoon baking powder 1 teaspoon salt

Cream butter oil and sugar. In a second mixing bowl with an electric mixer on medium speed, cream butter, oil and sugar together until smooth and combined about 2 to 3 minutes. ½ cup (1 stick, 113 g) unsalted butter ½ cup (120 mL) canola oil 2 cups (400 g) granulated white sugar

Add eggs, vanilla. Add the eggs one at a time, beating well after each addition. Scrape down the sides and bottom of the bowl after each addition. Add vanilla extract. Beat to combine. 4 large eggs room temperature 1 tablespoon vanilla extract

Alternate dry ingredients with buttermilk. Alternate adding the flour mixture with the buttermilk, beginning and ending with the flour mixture. Do not overmix. Stop mixing once the last of the flour has been mixed in. I like to give the last few stirs with a spatula to ensure it&#39;s not overmixed. 1 ½ cups (360 mL) buttermilk

Bake. Spread half of the batter in the pan. Sprinkle on half of the brown sugar cinnamon filling evenly over the cake batter. Add remaining cake batter and sprinkle on remaining brown sugar cinnamon mixture. Swirl with the tip of a knife. Bake for about 40-45 minutes. The cake is done when it&#39;s golden brown on top and toothpick inserted into the center comes out clean or with a few moist crumbs. Remove cake from the oven.

Make glaze. In a small bowl, whisk together glaze ingredients. Spread glaze over a slightly warm cake. Slice and serve. 1 ½ cups (170 g) powdered sugar 3 Tablespoons honey 2 Tablespoon unsalted butter ½ teaspoon vanilla extract 3-4 Tablespoon milk
