In a bowl, toss ¼ cup (30 grams) of cornstarch and the chicken wings together until fully coated. Transfer the wings to a wire rack and let rest and dry out for 20 minutes, ideally in the fridge if you have space.

In a medium bowl, whisk together the remaining ½ cup of cornstarch, the flour, paprika, garlic powder, cayenne, baking powder, salt, and pepper. Gradually whisk in the water, breaking up any lumps and mixing until smooth. The batter should be slightly runny.

Heat the oil in a large pot until it reaches 350°F (180°C).

Coat chicken wings in the batter, shaking off any excess. Add the wings to the oil in batches, cooking for 8-10 minutes until golden brown. Transfer the chicken wings wot a wire rack set over a paper towel-lined baking sheet.

Transfer the chicken to a clean bowl and drizzle with with the buffalo sauce, tossing to coat. Transfer to a serving plate. Serve with either ranch or blue cheese dressing and celery sticks.

Buffalo Chicken Mozzarella Sticks Recipe by Tasty

Line an 8x8-inch (20 x 20-cm) baking dish with parchment paper.

In a large bowl, combine the cream cheese, chicken, hot sauce, cheeses, and ranch dressing mix with a fork until smooth and evenly mixed. Transfer to the prepared baking dish and smooth it with a spatula so that it’s spread evenly in the dish. Freeze until solid, at least 1 hour.

Working quickly, remove the solid mixture from the sheet and cut into 4x1-inch (10x3-cm) rectangles. (There should be 16 total.)

Bread each stick by coating in flour, then dredging in egg, and then dipping in bread crumbs. Dip once more in the egg, then once more in the bread crumbs, and transfer to a baking dish.

Heat the oil in a large pot until it reaches 375˚F (190˚C).

Carefully lower 3 or 4 of the coated sticks into the oil and fry for about 30 seconds, until golden brown. Continue this until all of the sticks are fried.

Pre-heat your oven to 400 degrees or pre-heat your BBQ, making sure to oil the grill.

If using the oven, line a large baking sheet with tinfoil.

Toss the chicken wings with the peppers, salt and then the oil to coat.

Cook the chicken wings on the BBQ grill until completely cooked through and the juices run clear, 20 to 30 minutes. I using the oven, cook on the foil lined sheet until the juices run clear.

Melt the butter, pour into a large bowl and mix in the 1/2 cup of honey and hot sauce. This is where you can season the sauce to your liking. My husband likes more hot sauce in this, I like it perfectly as it is. Taste test and see what you'd add more of right now!

Remove the wings from the grill or the oven and toss them in the hot butter sauce to coat.

If wanted, you can return to the oven for another 5 minutes to "set" the sauce a little more, but they can also be eaten right away!
