Hummus Stuffed Peppers

mini bell peppers

hummus (this za’atar spiced hummus recipe is my favorite!)

parsley

Fill each pepper with 2-3 teaspoons of hummus.

Sprinkle with chopped parsley or fresh herbs.

Serve immediately or cover with plastic wrap and store in the refrigerator for up to 1 hour.

Genius!!! I never know what to do with the mini peppers I buy at Trader Joes-can't believe I've never thought to stuff them with anything before, let alone hummus. Love this idea &amp; pinning to share next time we can have a party :-)
