Enjoy my homemade Ice Cream Sandwiches recipe for an easy frozen treat this summer that will remind you of a childhood favorite!

Ice Cream Sandwiches Recipe

(10 ounces 300 grams) all-purpose flour

(4 ounces 120 grams) cocoa powder

baking soda

salt

vanilla extract

eggs

sugar

(8 ounces 240 grams) butter

Adjust oven rack to middle position and preheat to 350F/180C. Lightly spray 17½ x 12-inch half-sheet pan with nonstick cooking spray and line with parchment paper. Set aside

Over a medium bowl sift together the flour, cocoa, and baking soda and salt.

In 30 second increments melt together the butter and chopped chocolate. This should take no more than a minute and a half.

Add the sugar to the melted chocolate and butter mixture and whisk until the sugar has dissolved and the mixture is cooled down. Lastly, stir in the vanilla and eggs until combined.

Mix the wet ingredients into the dry to form a thick rich batter similar to a brownie.

Transfer the batter into prepared baking sheet, spread batter evenly in pan using and offset metal spatula.

Bake until cookie springs back when touched with your finger, about 10 to 12 minutes.

Cool in pan on wire rack for 5 minutes, then run paring knife around perimeter of baking sheet to loosen. Invert cookie onto work surface or large cutting board; carefully peel off parchment. Cool to room temperature, about 30 minutes.

After the cookie layer is done cooling, measure, score, and cut at the halfway point. The cookie has a tendency to stick after cooling, so use a bench scraper to lift it from the cutting board onto a large piece of plastic wrap. Empty the ice cream onto the cookie, and using your clean or gloved hands, squish the ice cream to distribute evenly. Place the second cookie layer on top of the ice cream and wrap in plastic wrap. Place on a cookie sheet and freeze until the ice cream hardens again, about 1-2 hours.

Cut the bars into thirds and then each third into four pieces to make 12 ice cream sandwiches. Serve immediately or wrap each ice cream sandwich in plastic wrap and return to the freezer.

Classic Ice Cream Sandwiches

7.9 oz all-purpose flour (1 3/4 cup)

cocoa powder

canola (or other neutral-tasting oil)

tsp vanilla extract

Preheat oven to 350ºF and line an 18x13" (half-sheepan with parchment paper.

In a large bowl, whisk together flour, sugar, cocoa, baking soda and salt. In a separate large bowl, whisk egg, then whisk in buttermilk, oil and vanilla. Scrape the egg mixture into the flour mixture and gently fold together until no dry flour remains. Do not overmix.

Dollop the cookie mixture onto the prepared baking pan. Use a metal spatula to smooth the batter evenly over the whole pan. It is a thick, sticky batter. You'll need to run your spatula under hot water, dry it off, then spray with nonstick spray (or use a paper towel dipped in oito grease it. Anytime the batter starts to catch on the spatula rather than glide smoothly in the pan, repeat the hot water and greasing procedure. You'll need to do it several times.

Bake for 7 minutes, until set but still a bit shiny in spots. Cool to room temperature, slice the slab in half while still in the pan, then transfer the whole thing to the freezer until firm, about 30 minutes.

Place one half of the frozen cookie slab pretty-side down on a work surface. Scoop the ice cream over top (or I find it easier to cut open the carton with scissors and then slice the hard ice cream into slabs). Use a knife or metal spatula to firmly press the ice cream down to evenly cover the bottom cookie. Place the second cookie slab, pretty side up, on top and transfer the whole thing back to the freezer until ice cream is very solid again.

Use a sharp knife dipped in hot water to slice into equal-sized ice cream sandwiches. Freeze individual sandwiches in a single layer on a baking sheet until hard, then you can wrap them individually in plastic wrap or parchment paper tied with kitchen string and store up to a month.

The one way to make s’mores even better: ice cream! Mixing super toasty marshmallows and mini chocolate chips into vanilla ice cream make this one of the tastiest sweet summer bites out there.

Preheat the broiler to high.

Spray a rimmed baking sheet with nonstick cooking spray. Spread the marshmallows on the baking sheet and broil until deep brown, about 30 seconds. Remove from the oven and set aside for 5 minutes to cool.

In a stand mixer with the paddle attachment, beat the ice cream on medium-low speed until just soft. Add the toasted marshmallows and the chocolate chips and mix on low until just combined. Working quickly, scoop about 3 tablespoons of the ice cream mixture onto half of the graham crackers. Top with the remaining graham crackers and place in the freezer. Freeze until firm, at least 2 hours.

Make the taco shells: in a medium bowl, whisk together the eggs and sugar until combined.

Add the milk, vanilla, and butter, and whisk until fully incorporated.

Sift in the flour and cocoa powder. Whisk until smooth.

Heat a small non-stick pan over medium-low heat, then add ⅓ cup (95 g) of batter at a time and tilt the pan to spread the batter evenly like a crepe.

Cook until bubbles appear on the surface and the batter is set, about 6-8 minutes. Flip the taco shell and cook on other side for another 3-4 minutes, until cooked through.

If desired, remove the taco shell from pan and place on a grated cooling rack while still hot. Place a sheet of parchment over the shell and press into the rack, allowing the grate marks to set into the shell. Rotate the shell 90 degrees and press the cone into the grates again for a waffled look. Or, skip to the next step.

Place the taco shells between the cups of an inverted muffin tin to form their shape. Let set for about 10 minutes, then freeze for 20 minutes to harden.

Make the magic shell: combine the chocolate and coconut oil in a medium bowl and microwave for 2 minutes, stirring every 30 seconds until melted and shiny.

Remove the taco shells from the freezer and use a spoon to coat the inside of each taco shell with melted magic shell. Return to the freezer for 20 minutes, until the magic shell hardens. Reserve the leftover magic shell.

Add the ice cream to a piping bag fitted with a round tip or a zip-top bag with the corner cut off.

Remove the shells from the freezer and pipe in the ice cream, filling the tacos. Smooth out the tops with a knife or rubber spatula. Freeze for 2 hours.

Microwave the reserved magic shell, if needed, to re-melt. Remove the tacos from the freezer and dip the tops of each taco in the magic shell, then immediately sprinkle with the crushed peanuts.

Serve immediately or return to the freezer until ready to eat.

Let the ice cream sit at room temperature until soft, about 30 minutes. Line a 13x9-inch baking pan with parchment paper. Spread the softened ice cream into the pan in an even layer and freeze until solid.

Preheat the oven to 350F. Butter a large 18x13-inch baking sheet and line with parchment paper.

In a medium bowl, whisk together the flour, cocoa, baking powder, and salt.

In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar on medium speed until light and fluffy, about 3 minutes. Stop and scrape down the sides of the bowl as needed. Beat in the eggs, one at a time, until evenly incorporated. Beat in the vanilla.

Add the flour mixture and beat on low speed until fully combined, stopping to scrape down the bowl once during mixing. Using an offset spatula, spread batter into the prepared pan in an even layer.

Bake for 10 to 12 minutes or until the top appears dry, and sides start to pull from the pan. Poke the top with fork tines, if desired. Let cool slightly in the pan. Run a knife or a small offset spatula around the edges of the cookie. Transfer the cookie with the parchment paper to a wire rack to cool completely.

Transfer the cookie onto a cutting board and remove the parchment paper. Cut the cookie widthwise in half, creating two 9x13-inch slabs. Sandwich the ice cream slab between the cookie slabs, trimming the sides as needed to fit evenly. Wrap in plastic wrap and freeze until firm, 4 hours or up to overnight. Cut into 12 sandwiches using a warm serrated knife when ready to serve.
