Best Vegan Meatloaf Recipe! (Impossible Burger)

Panko breadcrumbs*

unsweetened vegan plant milk*

tomato paste*

vegan worcestershire sauce*, I

fresh chopped parsley, packed

garlic,

thyme

onion

garlic

salt

black pepper

ketchup*

apple cider vinegar

brown sugar, packed

Preheat oven to 400° Line a 9x13 casserole dish with parchment paper. Set aside.

In a small bowl mix together the breadcrumbs and vegan plant milk. Set aside.

In a large mixing bowl add the rest of ingredients, Now add in the breadcrumb/milk mixture. Mix everything together well.

Add the meatloaf mix on top of the parchment paper and form into a rectangular loaf shape. Bake uncovered for 35 minutes.

While loaf is baking mix the ketchup, brown sugar and vinegar together in a bowl. This is the glaze.

Remove loaf from oven. Spoon glaze evenly over the top and sides of loaf. Return to oven and bake uncovered for an additional 10 minutes. Place on cutting board. Slice and enjoy! Serve with mashed potatoes, peas and a simple green salad! This was delicious, thank you! I’ve tried many vegan meatloaf recipes over the years and this one far outshines all the others! My family really enjoyed and my husband even commented that we should invite his sister over (she claims that she is not a fan of vegan food) and make this for her because there is no way anyone could complain about this meal! I did not use the glaze, but made gravy using “Better Than Boullion No-Beef Base”, mashed potatoes, and green beans.

I had to just say how absolutely delicious this was! Not to mention so simple. I’m always thrilled when my family wholeheartedly enjoys a meal and eats with great enthusiasm. Thanks for sharing!

Best Vegan Meatloaf (Impossible Burger)

This vegan Impossible Meatloaf is stuffed with vegan mozzarella cheese and brushed with an irresistible sweet and tangy glaze, making it one of the best family dinners! Easy to make in just over an hour.

Impossible Meatloaf (Stuffed with Cheese)

Impossible meat

ketchup

Worcestershire sauce

garlic powder

onion powder

Italian seasoning

panko breadcrumbs

vegan mozzarella shreds (optional for cheese stuffed)

brown sugar (or maple syrup)

Preheat the oven to 350 degrees F and coat a rimmed baking sheet with oil or line with parchment paper. You don&#39;t need a super large pan; I used a 9x13 inch pan.

In a large bowl, mix all ingredients together except for the cheese until well combined.

Shape into a loaf type shape and place on the prepared pan. Make a well in the center of the meatloaf to place the cheese in. Add the cheese, then use your hands to cover it and re-shape the loaf.

In a small bowl, whisk together the ketchup, brown sugar and Worcestershire sauce. Pour half of the mixture over the loaf.

Bake in the oven for 45 minutes.

After 45 minutes, remove from the oven and increase the temperature to 400 degrees F. Pour the rest of the sauce on top and bake for another 15 minutes.

Let the meatloaf rest for 10 minutes before serving. Enjoy!

Lovely! Can always trust you Nora for excellent recipes. I didn’t have panko on hand so I used regular bread crumbs, making the meatloaf a tad bit drier than I expected. But that didn’t matter. It was so tasty! The quantity of ketchup sauce was perfect.

I would love to see what more vegan meat mains you come up with.

Hi Nora,  I've been a fan of yours for several years and LOVE your recipes EXCEPT this one!  I couldn't wait to try it out 'cause it was just a bit different than most out there. Well, I did everything as written, at least I thought I did.  I tasted it and only tasted the catsup and brown sugar topping.  The meat itself was a big disappointment.  Nothing!  What did I do wrong?  I can't figure it out. Poooooo

I always have my kids rate my meals to determine if I should make them again. I got 10/10 for this impossible meatloaf! We even had a neighbor kid over and he loved it. The kids said they liked it better than "real" meatloaf. I paired it with mashed potatoes and green beans. This will definitely be added to my meal rotations!

I made mine with beyond meat, but my meat loving dad had two helpings and my mom said it’s one of the best recipes I’ve made recently. I’m not sure I can give a higher compliment 😆!

I'm so glad I stubbled across your website Nora!  I made this meatloaf and it was amazing. I'm not vegan but trying to incorporate a plant based meal or two during the week. My husband didn't even know it was vegan, and he said, "this is really good meatloaf" I won't tell him it was plant based.

I followed your recipe exactly with exceptions:   I did not add cheese and I used beyond meat instead of impossible meat because that is what was available to me.  The meatloaf is delicious!
