These mixed vegetable pakora are super crispy outside and tender in the middle, but pan-fried to use minimal oil! Use your favorite vegetables in a flavorful chickpea flour batter for a gluten-free, vegan snack or appetizer!

Vegetable Pakora Recipe

onion

carrot

cabbage (shredded)

bell pepper (diced)

chili pepper (finely chopped)

Tbsp fresh ginger (grated)

cilantro (or parsley, chopped)

chickpea flour

Tbsp rice flour

salt

tsp cumin

tsp turmeric

tsp chili powder ((not spicy))

water

Oil (to fry)

You can watch the video in the post for visual instructions.First, use a sharp knife or mandoline to thinly slice the onion, shred the cabbage, grate the carrots, dice the bell pepper, mince the ginger, and transfer them to a large bowl.

Add the flours, spices, and water, and mix it well to combine, then leave it to sit for some minutes.During this time, the liquid in the vegetables will mix in with the batter to create the correct consistency.

Meanwhile, heat a large frying pan/skillet over medium heat with at least 1 1/2 tablespoons of oil. Once hot, use tongs (or a spoon, using another to push the batter into the pan) to drop small portions of the battered vegetables into the pan. I cook about 4 fritters at a time.

Pan-fry the vegetable pakora for 2-4 minutes per side, until golden and crispy, then transfer to paper towels or a wire cooling rack. Repeat with the remaining batter, and enjoy!

Thank you Elavegan for another yummy recipe that works for gluten free vegan diets. We made Pakoras last night and enjoyed them very much. Pakoras will be a regular menu item at our house now.

I really like the vegetable pakora recipe. can I replace chich pea flour with bajara flour or gram flour?

Vegetable Pakora (Healthy Recipe)

Enjoy crispy, light, flavorful homemade Indian onion bhaji with just one tablespoon of oil per 4 fritters! Combining thinly sliced onions with a spiced chickpea flour batter and pan-fried until crispy, these onion fritters are gluten-free, egg-free, vegan, and a healthy appetizer, snack, or side dish!

Indian Onion Bhaji

onions

yeast ((optional))

lime juice ((or lemon juice))

green hot chili pepper (finely chopped)

Tbsp parsley (chopped (or cilantro))

Tbsp oil (for frying (I used coconut))

You can watch the video in the post for visual instructions.First, peel and then use a sharp knife or mandoline to slice the onions into thin strips and set them aside.

In a medium/ large mixing bowl, combine all the remaining ingredients (except the oil) and whisk into a medium-thick batter. If the batter is too thick, add a little more water, one teaspoon at a time.

Stir in the sliced onion (I used my hands), mixing well until they’re fully and evenly coated in batter.

Meanwhile, heat a large skillet over medium heat with at least one tablespoon of coconut oil. Once hot, use tongs to drop small portions of the battered onions into the pan (I cooked 4 fritters at a time).

Cook the onion bhaji for about 2-4 minutes per side until golden and crispy. Repeat with the remaining onion mixture and enjoy!
